Strawberry & Goat Cheese Pancakes

Good morning everybody! I hope you are all enjoying the middle of your long weekend! Sadly, I have to work tomorrow…so think of me while you’re out barbecuing it up with the fam, mmmkay?

It didn’t take me long to come up with a recipe for this Pancake Sunday after admiring those plump juicy strawberries I came home yesterday from the farmer’s market. Who could turn down a warm and tender pancake stuffed with fresh sweet-tart strawberries and creamy bits of goat cheese?

Not this girl!

Strawberry & Goat Cheese Pancakes: (serves 1)

  • 1/4 cup spelt flour (any flour would do, this was just the one I grabbed)
  • 2 tablespoons toasted wheat germ
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla
  • 1 medium egg
  • 1/8 cup diced strawberries
  • ~1 ounce of crumbled goat cheese
1. Pre-heat non-stick skillet to medium heat and coat with cooking spray.
2. Combine dry ingredients in a small bowl and stir together to break up any clumps.
3. In a separate bowl, whisk together the milk, vanilla, and egg.
4. Add the dry ingredients to the wet and stir until just combined.
5. Stir in strawberries.
6. Pour batter in pre-heated skillet (I made 4 “mini” cakes) and allow to cook for 3-4             minutes (shorter time for smaller cakes)
7. Just before flipping, top cakes with crumbled goat cheese 8. Cook for 2-3 minutes on         other side before serving with more strawberries and goat cheese.

Just before flipping

These cakes are only sweetened with the natural sweetness of the strawberries. For normal taste buds, you might want to add 1/2-1 teaspoon of sugar or some stevia to the batter. I thought they were fine as is, but I’m not exactly what you call “normal” now am I?

Don’t answer that! 😉

The best part about these, other than that occasional “surprise” of goat cheese, is that they have a crisp exterior while staying nice and…er, dewy inside! Yes, dewy…I like that!

And they’re pink! What’s not to love about that?

Right Kristina?

Well, I’m off to go make the best of my last day of the weekend! What better way to spend it than with a trip to my favorite place within four walls…any guesses?

Peace, love, and goat cheese!

What is your favorite cheese…or non-dairy cheese for my lactose-ly challenged friends?
I’m always trying new varieties, but right now, I’d have to say my favorite is smoked gouda…because, you know…it’s good-a! 😉

Jam Packed

Hello beautiful people! Hope you are all having a maaaaarvelous holiday weekend! Maybe even enjoying some beautiful weather?

I made another trip to the farmer’s market first thing this morning and wow, what a difference it made! The early bird foodie catches the worm produce!

Take a basket the man said…

Fill it up with as much as you want

all for ten bucks!

Well, you don’t have to tell me twice!

Only he didn’t know I have a Degree in packing…

Hello little green beans!

Mr. Potato…I didn’t see you there!

I really feel a little guilty…

poor guy never saw it coming!

Mwahahaha!

I also sampled and purchased a loaf of freshly baked marble rye!

Mmmm!

Other finds…

Jaaaaa-uicy steebies

An oldie and a newbie!

How cute is the name “traffic jam”?

Rhubarb, strawberries, blueberries, and raspberries!

After jamming it up at the market, I wanted to get a workout in, but it was too pretty of a day to stay indoors. Although I had a fantastic run on Tuesday, I just wasn’t feeling it today so I decided to knock the dust off the ol’ bicycle and take it for a spin!

Jazz hands…biker style!
😉

There she is in all her pink glory!

Equipped with my “princess” seat

Am I the only one who gets a sore tush from a traditional bike seat?

After a good 9 1/2 miles (I know, I’m sure my butt will be thanking me in the morning!),
I needed some cool refreshment!

Hmm, did you know that S.bux DUMPS sugar in their choco milk?? Unfortunately, my much-needed refreshment had to wait until I got home to water milk down my beverage to suit my palate. Good news is instead of $3 for one chocolate milk (highway robbery), I ended up with two (small victory)!

I think I’ve done a fine job of perfecting balance in my life today because since I got home from my ride I have done…absolutely nothing! Haha! Feels great to be lazy, ESPECIALLY when you’ve already busted out an early workout!

Now, I’m going to finish the evening catching up with my favorite cereal serial killer…

Don’t worry Dex, your secret’s safe with me! 😉

What’s your favorite TV show?
As you know, I don’t have cable, but I do like using Netflix to catch up with a few of my faves: Dexter, Glee, and True Blood!

Finer Things Friday

Some days it’s just best to stop and appreciate the finer things in life. Things like…

Finally making it to the weekend!

Waking up to a ready-made breakfast

Ahh, Peaches ‘n Cream Overnight Oats
how you make my morning!

Realizing your workout from last night was better than you thought

Oh, it hurts so good!

(stupid computer won’t embed the video!)

Turning the radio on first thing to your favorite (at the moment) song

Even though the video is totally creepy :-/

Diving into a trough bowl of fro-yo for dinner after a 10+ hour shift

Don’t judge!

My peanut butter & cake batter flavors were topped
with all the major food groups:

chocolate, cherries, and SPRINKLES!!

And speaking of sprinkles…

The excitement that comes when reading all the sweet comments on my newest kitchen concoction!

And finally, quiet evenings at home spent with some new friends
