Cake Batter French Toast

Ahem…

*movie man voice*

“And now

the moment you’ve ALL been waiting for…

tighten up those bibs folks,

it’s time to get yo drool on!”

Oh yeah!

So I know most bloggers seemed to have put they’re cake batter lovin’ ideas aside as of late, but when I opened the door to the pantry the other day and spied that open box of cake mix in the wake of a French toast hangover, I was nearly knocked over by a sudden stroke of genius!

Why should oats have all the fun?!

I tinkered around with this recipe for days and this was the ratio that seemed to be the closest to that cake-battery taste I was going for!

Cake Batter French Toast: (serves 1)

  • 2 slices soft, whole wheat bread (I used my new favorite)
  • 2 whole eggs
  • 3-4 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vanilla protein powder*
  • 2 tablespoons yellow cake mix (remember gluten-free mixes are less sketchy)
1. Pre-heat a large non-stick skillet to medium heat and mist with cooking spray.
2. While waiting for skillet to warm up, whisk together eggs, milk, and vanilla.
3. Add protein powder and cake mix and whisk until smooth.
4. Dip bread slices in the egg mixture, giving each slice enough time to soak up as much of      the liquid as possible.
5. Add slices to hot skillet and cook about 4-5 minutes per side or until a crisp brown             crust forms.

*The day I tried out the recipe with 1 1/2 tablespoons of cake mix and 1 full scoop of protein powder kept me full for the longest but the cake batter taste didn’t shine through quite as well. But hey, there’s another idea…protein packed French toast!

6. And don’t forget to make your French toast omelette!

Now comes the fun part! Icing your “cake”

You can make them rich and decadent with a bit of coconut butter!

Or maybe some banana “frosting”
(1 small ripe banana blended with 1 tablespoon almond milk)

Or you could go for the goods…

the, “I can’t believe it’s not icing” icing!

Creamy Cashew Drizzle: (serves 2)

  • 1/8 cup soaked, drained raw cashews
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • unsweetened almond milk as needed to thin (I used a little more than 1 tablespoon)

Combine all ingredients in a mini food processor or magic bullet (smaller is better…TNWSS!) and blend until creamy!

And of course sprinkles are NOT optional! 😉

I am a firm believer in the thought that sprinkles make everything better!

WIAW: Nothin But the Best!

Hello loves! It’s time for another What I Ate Wednesday here on your favorite broccoli kissing blog!

Just like last week, this post is actually a WIAT, but bear with me for posting time purposes! Plus, this was one of the tastiest WIAWs yet!

Breakfast Appetizer (6:45am)
1/2 caf coffee & “candy”! 😉

Breakfast (7:00am)
Cake Batter French Toast (recipe coming tomorrow!)

I packed a banana for a mid morning snack but was surprised to find that this breakfast kept me satisfied for a full FIVE hours!!

Lunch (12:00pm)
Burrito wrap and carrot sticks

What’s in a burrito wrap you ask?

Pure deliciousness!

Cilantro jalapeno wrap with hummus, avocado, salsa, red onion, tomato, bell pepper, a sprinkling of some real cheddar cheese and of course

Mrs. Dash Crack!

I swear this was one of THE best wraps I’ve had in a long time! The perfect combo of ingredients…tasted just like a leftover burrito!

Snack (4:00pm & 6:00pm)
Half a Luna bar pre-run and half post-run

Lovin’ this new-to-me flavor!

Dinner (7:30pm)
Leftover Apple Maple Tempeh Burger
Honey Butter Greens
and
Cinnamon Roasted Kabocha

I simply sautéed up red onion slices and some of the ginormous bag of turnip greens I got from the farmer’s market in a tablespoon of the raw honey butter (also a purchase from the market) and threw in a dash of nutmeg to finish it off. The sweetness went perfectly with the leftover tempeh burger and the roasted kabocha squash!

If you’ve never added nutmeg to greens, you HAVE to try it! It really takes the flavor of the dish to a whole new level!

I’ve gotta give myself some props for making this plate last nearly 30 minutes! I’ve been trying to focus on slowing down during meal times and I’m happy to say that this was one of the most relaxing and enjoyable dinners I’ve had in a LONG time!

I AM a Runner!

Thank you guys for all the sweet comments on the house decor! I’m definitely keeping the curtains…just have to starch, iron, and hem those babies!

A few weeks ago, I stumbled upon one of those blog posts that gets ya thinkin’. It was a guest post on Lisa’s blog from another Lisa (did I lose you?) on learning to claim the title of “a runner”.

I’ve never considered myself a runner. I enjoy running, but I always thought that I was too slow or took too many walk breaks to ever call myself a runner. That is until I read this line from Lisa’s post:

  • “It’s all about having the confidence to say that you are running. If you’re not walking, you’re running. (Besides, jogging’s something people did in the 80′s.)”

Wow! Talk about a confidence boosting slap in the face! What’s that I smell…roses? Oh yeah, I’m awake!

Who cares if I’m not the fastest. Who care’s if I stop for walk breaks. Who cares if I’ve never run further than 5 miles. The fact is:

I AM running!

Lately, running has become a bit of a release for me. I was feeling a bit of leftover “I hate my job because it’s no longer the weekend” funk today and when my shift finally ended and I saw how beautiful it was outside, I decided to go for a little impromptu run!

Oh yeah, poor gal’s forerunner right there!

A freebie watch the hospital gave me and my car to drive the course to figure out my mileage

Would it be too much to ask for Christmas in July??

I’m currently using a little strip of highway that leads from Walmart to a gas station for my runs…2.5 miles there, 2.5 miles back…and I get a pee break! Haha! I had only planned to run about half the distance today, but when it came time to turn around and head back to the car, my legs just weren’t ready to quit yet!

I was really proud of myself for going the entire distance, especially on the way back from my “pee break” when the wind had me wondering if I was even moving at all!

(For those of you who don’t know, Matt of The Athlete’s Plate is a total.speed.demon! I’m sure he looks like a blur to passersby!)

You wanna know the best part? Even with the wind, the humidity, AND the fact that I had just worked an 8 hour shift…I cut SIX MINUTES off my time from Saturday! I’m sorry, but I’m kinda feeling like a rockstar right now!
