So I’m sure you guys have figured out by now that I’ve developed quite the infatuation with French toast lately. I’ll admit it, I woke up this morning, on Pancake Sunday of all days, thinking about sinking my teeth into some soft and sweet, doughy French toast!
WHAT?!?!
Has this pancake loving gal changed her ways?
Then, in the wake of the rapture, I felt the power of the pancake gods…French toast pancakes?! Nahhh, that wouldn’t work…
or would it?
You know what you find if you Google “French toast pancakes”? You get a handful of “recipes” that instruct you to take ready-made pancakes and dip them into an egg and milk mixture. Well, that’s just not how we do things around here, now is it?
Forget all about those mystery pancakes full of sodium phosfiddlefaddle and pyramids of monochemistrybooks…this recipe was screaming to be made from scratch!
French Toast Pancakes: (serves 1)
1/4 cup whole wheat pastry flour
2 tablespoons wheat germ
1/4 teaspoon baking powder
1/16 teaspoon salt (just a smidge)
1 teaspoon cinnamon
2 whole eggs
1/4 cup unsweetened almond milk
1/2 teaspoon vanilla extract
1/2 teaspoon maple flavoring (optional, if omitting, use 1 teaspoon of vanilla)
1. Preheat a non-stick skillet to medium heat.
2. Stir together dry ingredients in a small bowl.
3. In a separate bowl, whisk eggs, milk, and extracts.
4. Add wet ingredients to dry ingredients and stir just until combined (careful not to over-mix your batter. A few lumps are normal)
5. Pour batter into greased skillet (I made 3 small-medium pancakes) and cook for about 5-6 minutes or until batter starts to bubble.
6. Flip pancakes and continue cooking for 4-5 minutes until browned.
I topped my cakes with raw honey butter and pure maple heaven syrup
Creamy whipped buttery goodness!
Close your eyes and take a bite…

I actually didn’t know anything about this possible “doomsday” until this morning when I was on Twitter. What? Isn’t it completely normal to stay up-to-date on current events via social media networks?? Hmm…
Well, just in case this WAS my last day on Earth, I made sure to conserve my energy…you know, to fight off the looters! If anyone is staking claim to the peanut butter aisle, it’s gonna be ME!
Today, I met my friend Jen downtown for the first day of the Clarksville Downtown Market (kind of a blend between a farmer’s market and a craft fair). They will have the market open every Saturday until sometime in September and after seeing it today, I’m pretty sure that I’ll be making an appearance each week!
Even though we got to the market a little late, we were still able to grab up a few goodies:
Two dozen fresh local eggs for $4
Why do I suddenly feel the urge to make more French toast?
1 pound of collard greens for a buck fifty!

And I also got a jar of raw honey butter but my camera seems to have gotten hungry!

Got it? Ok, moving on…
After finishing up at the market, we decided to take a little trip on base to look at some furniture (Jen’s hubby is in the military and she always takes me on post to get the tax-free goodies!). The bad news…still no luck on a desk, but I may have found a pretty affordable alternative to my bedroom set! Still thinking about it.
While we were there, Jen suggested that we go to the Commissary (the HUGE grocery store on post). She told me that she KNEW I would love it there…
She knows me too well! 😉
I got waaaaaay too much stuff to ramble on and on about on here so I’ll just show you some of my proudest purchases!

I knew as soon as I saw the picture Beth posted on Twitter earlier this week that her Maple Apple Tempeh Burgers would be on the menu this weekend. I was all set to have them last night, but somebody got a little carried away “cleaning the food processor” while making hummus balls and ruined her appetite for dinner!
They were worth the wait!
Maple syrup, fresh grated apple, sweet red onion, and earthy sage
I swear to you this tasted JUST like Thanksgiving Day dressing! And the yogurt sauce on top made of Greek yogurt, dijon mustard, and maple syrup? Oh my gosh, I could lick that stuff off a stick!
I ended up making 4 patties out of this and served them up with some yucca fries seasoned with some smoked crack paprika.
Allie had it right when she renamed this “yumma” fries!They’re like potatoes but heavier and with a bit more oomph and lots of yum!
The best part about this meal?
LEFTOVERS!
Have you ever tried yucca? Honestly, they only LOOK intimidating! It was such a cinch to make these!
Tell the truth, did you think today might be the end of the world? Since I didn’t really know about it until TODAY, I can’t really say it affected me any, but I’m still on the fence on what to think about come December 21…although part of me says it won’t happen because we’ll be expecting it!

Ok, enough with the alliteration! =/ Haha!
Well, as you have probably figured out by now (because you are all highly intelligent people), I am in fact alive. The bigger question, did I get a good night’s sleep last night?
YESSSSSS!
It’s about dang time! I actually slept for 9.5 hours and besides having to get up to pee twice…thank you camelbak…I woke up feeling great! In fact, I jumped right out of bed and did my workout first thing this morning which is something I NEVER do unless I have to (ie, during the work week).
Post workout, I refueled…
My first iced coffee at the casa!
With almond milk and a couple drops of vanilla creme stevia
I used the simple, lazy girl recipe for protein pancakes using pancake mix, protein powder, and water, but this time I used one scoop of protein instead of two, threw in 1 tablespoon peanut flour and some maple extract and topped them with thinned peanut butter, carob chips, and maple syrup! Mmmm!
Definitely something to look forward to when you’re sweating your arse off with J. Dubb!
This afternoon, I ventured out to take a look at a couple of furniture stores to see what they had for desks and bedroom sets. I really need a desk for the office, and I H-A-T-E my master bedroom set that I currently have. I’m not exactly in the market (money-wise) for a new set at the moment, but I figured I could look around and get some ideas.
Well, I ended up getting a few ideas of what I DON’T want, but the trip was surely not a waste. I wandered over to Big Lots and was lucky enough to find some foodie gems!

Anyone ever tried anything from the e.l.f. line? I used to order from they’re website a lot before the products made it to the stores. Now, you can find it at Target, Walgreens, AND Big Lots! Yay!
When I got home from shopping, I was starving and I knew EXACTLY what I wanted!

CHAI HONEY CREME!
I knew it would be delicious…because I totally heart anything chia chai AND because it was the LAST one! 🙁

I enjoyed my YIAC (yogurt in a container) out on the patio while reading a book…don’t you just love all our blogger acronyms? I swear between blogging, the hospital, and texting, it’s a wonder I can even hold a conversation in proper English these days! Haha!
Yeah, so the book reading lasted all of about 30 minutes (it’s a slow starter) so I decided to do some baking instead…ever since Christin posted her cookie dough hummus balls the other day, I knew they had to be mine!

As in LICKED CLEAN!
It was a hard job but somebody had to do it! 😉
While I baked up my balls (TWS…nah, nevermind), I decided to play a little “dress up”!
Aww, I’m sorry, they haven’t developed THAT technology yet!
