Nothing starts a week out right better than a new pancake recipe in celebration of my favorite blogging tradition, Pancake Sunday, and boy do I have a winning recipe for you today!
While at the store last week, I picked up some mangos that were on sale for 50 cents a piece! What a bargain, right? There was no way I was passing that one up…even though I’d put cutting a mango in the same enjoyment category as going to the dentist!
I’ve Googled a-plenty, but I somehow I always manage to mutilate my mango in the process of cutting it! Anyone else out there with mango-mania? 😉
Anywho, I guess I can’t say “there were no mangos harmed in the making of this breakfast,” but I CAN say that it was well worth getting my hands a little
Coconut-Mango Yogurt Pancakes: (serves 2)
- 1/2 cup whole wheat pastry flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 egg white, whisked a bit for better mixability (if that’s not a word, I’m making it one!)
- 1/2 cup plain yogurt (I used Greek)
- 1/2 teaspoon coconut extract
- 1/4 cup water
- 1/4 cup chopped fresh mango
- 1/8 cup unsweetened dried coconut flakes
1. Combine all of your dry ingredients in a medium-sized bowl.
2. Whisk together egg white, yogurt, extract, and water.
3. Stir in mango and coconut.
4. Add wet mixture to dry mixture and stir until combined.
5. Scoop batter onto a greased skillet over medium heat and cook for about 5-6 minutes (or until bubbly), then flip and cook for another 2-3 minutes until done.
These tropical little cakes would fare perfectly with any number of toppings: Sarena’s coconut cream, coconut butter, almond butter, or even just a simple drizzle of maple syrup, but since I had extra mango
guts pulp strewn across my cutting board to use, I decided to give it a whirl in the trusty MB (magic bullet) for a mango “sauce.”
I could NOT believe the taste of these beauties! They were perfectly (and naturally) sweet, smooth and…BUTTERY!…and there’s not even any butter in them! This is definitely a “must-try” recipe! I can’t wait to have the other two for breakfast in the morning!

girl, I’m definitely not a master mango ANYTHING, but I love them so I *curse* my way through! 😉 these pancakes look incredible! today’s breakfast… if I’m being honest I have to say a nice piece of salmon from last night’s Blackened Salmon Caesar… oh SO yum! 😀

Oh wow – those look divine! I wonder how coconut flour would work in these? I am sure more egg whites would be needed! And if your really feeling tropical, I bet a mashed very ripe banana would be great too! Great recipe and is bookmarked at the top of the list ;)!!!
As far as the mangos go – I am a visual person so I go to youtube!!
Oxo makes a mango splitter you can get at Bed Bath and Beyond or Amazon – but I don’t have one so I am not sure how well it works – but if you make these alot, it may be worth it to try!!
Awesome! Thanks Missy! I just watched the video…I’m thinking either my mangoes are a bit overripe or my knife is pretty dull. Haha! He made that look so easy. Maybe I’ll just sit HIM in my cabinet to do all my mango slicing! 😉
Obviously I was thinking about these things all day but I was thinking the addition of a banana would be perfect! I bet the coconut flour would be great too, but I would only sub it in for about 1/4-1/3 of the total amount.

I can never get my mango carved like that, it ends up half on the floor. But at least its tasty! I like the yogurt addition in this. So tropical!
Mango is my favorite fruit! It’s horribly annoying to cut, but these pancakes look MORE than worth it. Yum!

I have been loving mangoes recently too! I have no idea how to cut them- I almost cut my hand off in the process. I think I’m going to watch that video to learn how!
I think the trick may be a sharper knife! Pretty sure my blade just wasn’t up to the task yesterday. I just watched the video and that guy made it look easy peasy!

it took me so many tries to finally cut a mango correctly! it’s still rather laborious….just not quite as dangerous, haha. The first time I ever had one I thought you could eat the skin. Uhhh, that didn’t end well…
Well, according to Caitlin, the skin IS edible. I’m thinking more of around the lines of the smaller yellow ones though and not the green or red since I think the skin is a bit thinner on those!
Oh yes, it felt like a nice warm vacation at the breakfast table yesterday…and it’s about to again as I go tackle the leftovers! 😉
Those pancakes look perfect for the spring weather you had yesterday! I had a bowl of oatmeal with sliced strawberries and it was perfect. Mangos are tricky little things, but so work the mess! Have a great week Heather!

Such a great idea. I love mango and I never thought of combining it with pancakes. My only “unusual” pancake is applesauce pancake, but I am definitly making these this weekend (or for dinner!)

im glad somebody posted that mango vid because i was trying to find it to show you. your mango is probs a tad underripe because thats how i do it and i dont have too many issues. same with avocados. now im craving a mango and avo salad….
