What I Ate On The 4th Of July!
…duh! 😉

Alternate title: What I Eat When Running Makes Me a Ravenous Beast!

It was so nice to have yesterday off for the holiday. At the risk of sounding like I have no life (and although it is an easily amused life, I do in fact have one), I spent the Fourth of July at home, relaxing inside out of the heat…and whipping up some delicious eats! So delicious that I knew they had to be featured on the next WIAW link party!

Pre-Run Fuel (4:30am)
“Ol’ Faithful”

Post-Run Fuel (6:30am) 😉
Iced coffee with ONLY milk and NO sugar

Word to the not-so-coffee-wise: Obviously when you order an iced coffee with milk that translates into an iced coffee with milk AND cream AND syrup! And can you believe the barista looked at ME like I was crazy when I went back?!

Breakfast (7:00am)
BBQ French Toast with PB & Frog Preserves

Yeah, I’ll let you know when I stop dreaming thinking of new BBQ and PB&J combos…not that I see that happening any time soon! 😉

Morning Snack (9:00am)
Cantaloupe with Greek Yogurt & Granola

Pre-workout Snack (11:00am)
Quinoa/Cottage Cheese/Cinnamon Love

I started getting hungry in the early afternoon, but I really wanted to go to the gym for Bodypump. Luckily, this little snack was just enough to fend of the hunger beast and give me a little energy to “pump my body”!

Lunch (1:45pm)
Leftover pulled-pork from the party Friday night, steamed broccoli, baked sweet potato topped with sunflower seed butter & Appalachian Picalilly
 

Afternoon Snack (5:45pm)
Kashi Go Lean, banana, peanut flour, flax sprinkles, and almond milk

Dinner (8:15pm)
Leftover Lentil Soup, spinach salad, and a brown hockey puck
And just what could that brown hockey puck be exactly?

One of Jess’s Biscolls!…aka, fluffy, carby goodness!

And to round out the evening, a little Kombucha night cap!

Whew, now I’m hungry! If you’ll excuse me, I believe there are a couple of leftover Chocolate Chip Hummus Balls in the kitchen calling my name! 😉

      Thank you Karla! And mine may not be the most photogenic (Jess totally did them more justice on her blog), they ARE scrumptious and super easy to make! You should give them a try!

  2. Ohhh good god, woman!!! Your lunch consists of 2 of my favorite foods evuhhh. Sweet potato AND pulled pork in one meal?!? That’s not even fair.

  3. Amazing looking eats. It’s funny, but I have to comment on the peanut flour and bananas over the Kashi. Brilliant!

  4. I remember the first time I realized exactly what was in my lattes and mocha frapps. These days I would have gone right back to that Barista if she subbed that for my (slightly) healthier order!

      Oh I know! I used to have a caramel macchiato nearly every day before my classes when I was in college…no wonder I always crashed in the afternoons! Haha!

  7. All of that looks so good, will definitely have to try out the peanut flour sprinkled on a yoghurt bowl! I think the best thing I ate Monday was a huge strawberry and peanut butter green smoothie (that contained about 4 tbsp of pb plus more on top) it was so good 🙂

      It is SO good! I’ve been adding it to just about every cereal bowl I’ve had over the last couple of weeks! At this rate, my poor peanut flour stash is going to be dwindling in a month or so! :-/

    Oh. my. goodness. Just everything looks and sounds absolutely YUM. The quinoa, cottage cheese and cinnamon is an interesting snack! I may just have to try that one 😉 And I am all over cantaloupe and greek yogurt with granola/grape nuts at the moment!
    And once I again, can I just say how stunning your photography is? Very jealous!
    Best thing I ate? Probably a blueberry muffin mess with greek yogurt and raspberries – I tried to get the blue/red/white theme in even though I’m not American! 🙂

      Thanks girl! Yeah, I usually love eating themed meals for the holidays, but I was fresh out of anything red and blue! The cottage cheese snack was great! I’m thinking about next time, adding some raisins and maybe a drizzle of honey when I want a little bit more than just a pre-workout nibble.

  10. lol…hockey puck. i’m not sure what to think of that adjective :X They look a lot fluffier there than in the first pic, though! I just hope they’re a little softer than a hockey puck 😛
    All your eats do look amazing. BBQ french toast? girrrl, you have stolen my heart. And up at 4:30 on a day off to go for a run? dayum.

      Haha! I meant it totally in a “these are fantastic tasting, but don’t look HALF as good as Jess’s” way! 😉 I can’t wait to try them again with raisins and cinnamon! I topped one last night with butter and cinnamon sugar and it was great! Reminded me of an English muffin!

      And the inspiration for the BBQ French toast was actually from your cinnamon pancake stacks topped with BBQ eggs…just got me thinking! I mixed the egg and almond milk and then sprinkled in some cinnamon and BBQ seasoning! It was amazing!

      Sadly no…I only WISH I could take credit for that stroke of genius-ness! It’s actually something I picked up on a trip to the farmer’s market…it’s like sweet relish meets cowboy caviar meets veggie heaven! There’s all sorts of veg packed in that jar!

      Got to get to work on that recipe idea though…I have a feeling it’s going to be a real winner as it involves two of my favorite ingredients: mushrooms and cashew cream sauce! 😉

    That sweetener they use in their coffee is just too much. One time I forgot to ask for it unsweetened and took a sip and it was just so sweet that I couldn’t finish the drink. I think it’s weird that you have to ask for it unsweet.. it seems like it’d be the other way around.

    The best thing I ate on the fourth was veggie dogs with lots of mustard and snap pea crisps! mmm!

      I know! I only took 2 sips and I thought I was already beginning to get a sugar high! I hate how they always try to sneak stuff in on you like that! Not everybody appreciates a diabetic coma following their morning cup of coffee!

      Mmm, snap pea crisps? As in freeze-dried? Sounds delicious!

    We both had a porky 4th of July – the best thing I ate were baby back ribs in HOMEMADE bbq sauce (post is on my blog…do with it what you wish 😉 )

    I ate a bratwurst! Can’t remember the last time I ate meat, but that brat was calling my name and it definitely hit.the.spot. I NEED to make those biscolls next week! P.S. I work at Starbucks and your cashier is definitely supposed to ask if you want it sweetened AND what kind of milk you want if you ask for some. Bad, employees!

      Bahahaha! Avocado turkey burgers?! Mmmm! It’s been so long since I’ve had any avocado…that needs to change!

      Oh yes, BBQ French toast…I went there! I sware 😉 I could eat that stuff sprinkled on a stick!

Your morning snack is exactly what I had for a morning snack yesterday… I just did a post professing my love for cantaloupe, and one of my favorite ways to eat it is with yogurt and granola. And the cottage cheese with cinnamon? Get outta my head! I had that this morning as a pre-workout snack, along with a banana and AB. Spooky.

      Not egotistical at all…that pie looks FANTASTIC! I am seriously making that very very soon!

      The French toast was just two eggs, almond milk, cinnamon, and some McCormick BBQ seasoning. You can find it in the spice section of just about any grocery store…I’m kind of obsessed with it! Lol!

  29. Oooh Appalachian Picalilly!? Gimme gimme! Can the farmers at your market come to DC, please? Seriously, that stuff sounds soooo good!

    Quinoa + cottage cheese is a genius combination. I eat cottage cheese with granola and PB every night before bed…I think it’s time to switch things up a bit. 🙂

    Oh, and I can completely relate to the “umm, can you please remake my drink?” scenario. It happens to me every other time I go to Starbucks!

    Well, your food looks as amazing as ever! And wow, that french toast. And I spent my 4th at work, followed by at home doing a massive it-might-still-be-spring cleaning of the kitchen. So, yeah, I won’t judge a relaxing 4th 😀 I didn’t make anything unusual for the 4th, so I’ll have to go with round 1 of my barley stew as being the best thing I ate on the holiday (have had it for lunch every day since…)

  31. Running makes me a ravenous beast too! I remember after a long run last year going out for a huge dinner, coming home and eating a few bowls of cereal, and then going out for froyo and coming home still hungry 🙂

  33. Now that’s a tasty day! I LOVE lentil stew! YUM! I made lentil burgers for the 4th and have fallen head over heals for them! I need to get my hands on some of those FROG preserves! That looks so good on french toast!

    Im so in love with your WIAWs!! That lentil soup looks amazing, I dont know why I keep forgetting about lentil soup. Its so good!

    And just to clearify my WIAW yesterday- I hate to not eat for 7 hours. Its something Im working on all the time, and really a bad habit from my ED days. Eating regularly makes me so much happier, and I surly want to be happy 😀

      No I don’t, I just take about 82634 shots and go through them all to weed out the non-blurry ones! 😉 A tripod is on my wish list for sure though!

      And for real! I don’t fork over half my wallet for a sub-par coffee!
