Hey guys!

Did you think I forgot about you?? Well, I promise I could never do that! I’ve just been BIZZ-ay! Since I got off the plane from California on Friday night, the last 36 hours have been non-stop!

First up, there was a visit to Berry Bear:

Nothing like a bowl of peanut butter and cookies and cream fro-yo after 6+ hours on an airplane!

And a run to the grocery store for the “necessities”:

There was pedicures with the sis:

As much as I had hoped, sadly we did not get to sit in the butterfly chairs! 🙁

But I DID get something a little different:

Tiger toes!

There was farmer’s marketing:

This should keep me busy for the week!

Some baking and catching up with a good friend:

Fudgy Cherry-Cheesecake Brownies

We used this recipe with the following changes:

  • 1/4 cup sugar in the cheesecake topping instead of 1/2
  • 1 1/2 cups sugar in the brownie batter instead of 2 cups
  • 1 cup fresh cherries + 1/2 cup water + 1/2 cup sugar + 1 teaspoon arrowroot powder + 2 tablespoons coconut flour simmered on the stovetop until thickened instead of cherry pie filling

Served with vanilla ice cream, red wine and a side of witty humor from Jennifer Anniston and Adam Sandler made for a great Saturday night!

And then, of course, this morning, there were pancakes…made with the help of a little west coast stow-away:

Oh yeah! It’s about time I got my hands on some Kodiak Cakes pancake mix! I’ve seen this stuff ALL over blogworld and have been dying to try it, so when I spotted it in Cali, I couldn’t help but snatch it up!

And now I’m in LOVVVVVVVE! 

Easy Protein Pancakes

Prep Time: 2 minutes

Cook Time: 6-7 minutes

Keywords: stovetop breakfast pancakes high protein pancake/waffle mix

Ingredients (Serves 1)

  • 1/3 cup Kodiak Cakes flapjack & waffle mix (or other just-add water mix)
  • 1 scoop protein powder (any flavor)
  • 1/3 cup + more as needed water to thin

Instructions

1. Heat a non-stick skillet to medium heat and coat with cooking spray.
2. Combine all ingredients in a bowl and stir well.
3. Spoon batter onto skillet surface, forming 3 medium-sized cakes and cook for 2-3 minutes per side.
4. Transfer to a plate and top as desired.

Seriously, easiest breakfast ever…and SO filling! Now, the rest of the day is looking like unpacking, laundry, and some snuggle time with this little guy:

Little man missed me more than I thought he would! He’s been my shadow since I walked through the door!

I had a GREAT time in Cali and I want to give a BIG thank you to Emilia and her family for allowing me to stay in their beautiful home during my time there! Stay tuned for some vacay recapping later in the week!

What has been the highlight of your weekend so far?
Without a doubt…brownies!!

What’s the first thing you typically do after coming home from vacation?
I rarely ever unpack for the first couple of days! Typically, I take out what I need as I need it only to find myself a week later with a half-packed suitcase still laying in my bedroom floor! Haha!

    Those brownies look amazing! What a fun weekend to have and after such a amazing vacation in Cali!!!

    Glad you had fun, and LOVE the tiger toes! I saw those butterfly pedicure chairs at the nail salon here, I SO wanted to sit in one, haha! I pray for a little girl one day so I can take her to get a mani-pedi !!

  3. Welcome back home! I’m glad that you and Emilia had such a wonderful time together. I wish I could have come down to see you guys, but I’m sure there will be other opportunities! I hardly ever unpack as soon as I get home from a vacation. I usually open a beer and plop myself down on the couch for a while! 🙂

      Sounds like a good way to go to me! YES! There will definitely be other opportunities! I LOVED Cali so much that I can’t see myself NOT going back!

  6. Now that looks like a great weekend recovery from a vacation! We typically chill, but I think tiger toes are the way to go! Those look like some fun toes! Enjoy the rest of your weekend Heather!

  9. first things first after traveling: Grocery store run!
    I was in NYC this weekend (awaiting Irene, of course), but had a good time despite the storm! Love your toe nails.. I need to get more creative with mine! I recently posted about Kodiak Cakes too, I was so excited when I found them!

    I’m just the opposite of you and always unpack my bag right away. In fact, I usually can’t stay still when I get home and end up doing all kinds of cleaning up things and everyone stares at me wondering where my excess energy is coming from. And then I usually go out to eat because I’ve wasted all the energy I could have used on cooking for cleaning. And let me tell you, going out to eat is depressing after you come back from a vacation with really good food. The chains here don’t quite taste as good…

    when i come back from vacation (which hasn’t been in forever ahhh) i typically TRY to unpack right away. because I know if I don’t it will NEVER get done.

    welcome back! i’m absolutely LOVING your nails! to be honest I’ve never gotten a mani or pedi, I should probably get on that…
    and I also love how you cut sugar from that delish-looking recipe… whenever I see a good recipe with a ton of sugar I immediately try to figure out how much I can cut without tasting a huge difference.
    when I come back from vacay I usually just plop myself on the couch, watch t.v. and just relax. unpacking happens only after a week, minimum

      Oh you HAVE to try it at least once! I rarely ever splurge on mani/pedi’s but this time was a special occasion for my sis! It’s nice to do something to pamper yourself every once in a while, but I usually lean more toward massages….ahhh, LOVE em!

      I was actually pleasantly surprised with the sugar cuts in the brownies! It was already a “light” recipe, but 2 cups of sugar seemed a bit much. I thought they came out perfectly sweet…especially after having some time to chill…they get sweeter the longer they sit!
