Choose Your Chick Salad

Hey hey to all my bad bowlers out there…glad to know I’m not the only one out there making a fool out of myself on the lanes!

So I had another post in mind for tonight, but so many of you seemed interested in yesterday’s chicken salad recipe, that I just didn’t have the heart to make you wait for it!

Annnnnnd? Guess what!

You get TWO recipes for the price of one! Wait, now how does that work exactly when the first one is free to begin with? Hmm, I digress…

The flavors in this salad are just TOO good to only share with my fellow meat lovers out there so I just had to put a little twist on it so that all my little veg-heads could enjoy it as well!

Choose Your Chick Salad

Honey Curried ChickEN Salad: (serves 3-4)

  • 1 large chicken breast, cooked and diced (about 1 cup)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup diced onion
  • 1 heaping teaspoon curry powder
  • salt & pepper to taste
  • 1 Tablespoon honey
  • 1/3 cup dried cranberries
  • 1/4 cup sliced almonds

1. Combine all ingredients in a medium-sized bowl and stir well.
2. Serve as a sandwich or alongside crackers for dipping!

Mmm, sammich!

  • 1 can chickpeas, drained and (partially) mashed
  • 1/2 cup Greek yogurt
  • 1/4 cup diced onion
  • 1 heaping teaspoon curry powder
  • salt & pepper to taste
  • 1 Tablespoon honey
  • 1/3 cup dried cranberries
  • 1/4 cup sliced almonds

1. Combine all ingredients in a medium-sized bowl and stir well.
2. Serve as a sandwich or alongside crackers for dipping!

You can hardly tell which salad is which!

And the best thing about this recipe?

No thinking about tomorrow’s lunch!

    Genius, just sheer genius, I tell ya! Those both look really good. Of course being the salty/sweet person I am, I have always loved something sweet in my tuna or chicken salad – like apples, grapes, or craisins. You never disappoint in that department, always a merging of flavors!!

  5. Both of these look awesome! I wish I had some plain Greek yogurt so that I could make the chickpea one right now! But all I have is vanilla flavour, which I don’t think would taste so good. 😛
