The Fluffiest Banana Pancakes Ever!

So this morning marks a mile stone in my life.

Wanna hear what it is?

Ok, here goes…

I slept in till 9:30am!!!

Seriously guys, I can’t even think of the last time I slept past 8:30 at the ABSOLUTE latest! Even if I stay up to all hours in the night, most of the time 7am rolls around and my eyes shoot straight open…I blame it on work…and the fact that over the years I have become a retiree trapped in a 26 year old body.

Since it’s been for.ev.er since I’ve slept in, I realized that I had forgotten something…

You wake up STARVING!

There were no creative pancake-making juices flowing this morning…all I wanted was to eat…NOW!

So I did what any (somewhat masochistic) person would do…I pulled up Foodgawker on my laptop and started drooling over the “pancake” search.

And well, after about 15 minutes of pinning recipes for pancakes whose ingredients I DIDN’T have, I took another approach…

C’mon, are you really surprised that I have an “Everything Pancakes” board?

Whole Wheat Brown Sugar Banana Bread Pancakes from How Sweet It Is

Whole wheat flour?…check!

Brown sugar?…check!

Bananas?…CHECK!

I followed Jessica’s recipe exactly but halved it since my bananas were a bit on the small side.

And in about 15 minutes, I had five of the fluffiest banana pancakes I’ve ever seen in my life!

Since I don’t normally add sugar to my pancake recipes, I was worried that the maple glaze topping would be a little too much for me, so I decided to mix up a lightly sweetened peanut sauce instead.

All I did was whisk up a bit of peanut flour with some almond milk, added about 1 tablespoon of maple syrup and some of my new vanilla bean paste, and voila!

    You can never go wrong with ANYTHING Jessica makes! Those really do look awesome and fluffy, but then again, your pictures would make syrup on shoe leather look good.

    I don’t sleep in too much – too much stuff to do but I definitely sleep later than my workdays!

      Aww, Missy! You’re making me blush! I swear I’d make everything on Jessica’s blog if my waistline could handle it…but sadly I have no since of moderation at all. If I bake, I eat…the whole thing! haha!

    I had a baggie of Captain Crunch on my way to church. After I came home I had tomatoes and cottage cheese.

    I am totally putting peanut flour on my grocery list!

  3. Congrats on sleeping in! I think I would faint if I slept in that late. Last weekend I slept in until 7:45 (after a night of partying til the wee hours) and I almost had a party to celebrate. 😛

    Your breakfast looks amazing – they’re so big and fluffy! I had pancakes today too, but mine were pumpkin pancakes!

      Mmm! Pumpkin pancakes! I thought about making some of those this morning, but I’m still hoarding my one can of pumpkin until I can find them in the store again! Haha!

      I’m the same way usually…out all night and STILL super early! Boo!

  5. Oh my gosh! Those are seriously so fluffy! They look awesome – and so easy! I love simple recipes, especially for breakfast. Digging out 12 ingredients is no fun when you are hungry and barely awake 🙂

    I’m so jealous of those vanilla bean specks!! Yum! The pancakes look awesome, too. I always find myself doing the same thing when I foodgawk…just loving everything and I may or may not find something to make after it all, haha.
    Lately I’ve found myself sleeping in later and later as I stay up later and later 😛 8:00 isn’t a rarity anymore, and happens once a weekend lately.

    oh girl, in my apartment 9:30 is deemed to be the butt crack of dawn! I’m an early riser myself but my roommates have been known to hibernate until well in to the afternoon.

    Those pancakes look phenomenal! I’m trying to calculate how to “single serving-ify” them. Whenever I make large batches of things they always go to waste!

      Well, I’ll tell you right now…the rest of the batch did NOT go to waste! Actually, they didn’t even make it to the next morning! Haha! But if you DO happen to have a bit of willpower, freezing always works too…then you can just pop them in the freezer whenever you need a quick pancake pick-me-up! 😉

  9. These look soooo fantastic – maybe I will make a batch in the next week or two! Generally on the weekends I sleep in a little later than my wake up call–which is anywhere from 5:45-7:15 depending if I go to the gym or not. I try to stay in my bed until at least 9:00 AM.

  10. Oh my gosh. Not only are those gorgeous but they look DELICIOUS!!! My goodness. I LOVE fluffy pancakes! It’s been forever since I’ve made some though. I normally only make them when I’m having breakfast for dinner! I don’t tend to crave them in the morning.

    P.S. I LOVE that you have a pinterest board dedicated to pancakes 😉 Haha

  13. Ugh, I wanted to sleep in more than I did on Sunday! I was the designated driver Saturday, but woke up feeling like I was the drinker! Those pancakes look killer and I LOVE peanut butter sauces on my pancakes. I like to put grapes on there too for a fun pb&j!

      Aww, I hate it when that happens!

      Great idea to add the grapes! I can’t believe I’ve never thought to try that before…probably because I’ve never been a huge fan of grape jelly…but I LOVE grapes!
