Last week I saw Lee do a “What I’ve Been Eating” Wednesday post and I thought it was a great idea…plus it helps mix up the party a bit!Β So here’s what I’ve been nibbling/tasting/devouring lately:

Protein pancakes topped with angry birds bananas! πŸ˜‰

Obviously, I couldn’t sit down to eat with him just staring at me like that, so…

Melty peanut butter and vanilla bean paste to the rescue!

Drown in my peanutty pool of deliciousness banana slice! Mwahaha!

I finally got my hands on some Mama Chia!

Little tip when your at Whole Foods about to purchase something you’re not sure you’re gonna like: pick up item while checking out, tilt your head to the side, scrunch up your face and ask, “Are these any good?”

Proven to be 95% effective at getting said item COMPED!

Loved the light refreshing flavor and fun texture…and of course you can’t beat 10g of fiber per bottle!

Microwaved protein oats with Crunchy Nuggets (aka generic Grape Nuts), Biscoff, and TJ’s fig butter

And there was a reappearance of my other obsession…

More veggie pizza!

TJ’s whole wheat crust topped with cilantro jalapeno hummus, cheddar/mozzarella cheese, spinach, portabellos, tomatoes, red bell pepper, pickled jalapenos, and green onions

So quick…so easy…so delicious!

After I saw these dark chocolate and peanut butter mixed nuts on Jessica’s blog, I KNEW I had to try them…yep, they are as mouth-watering as they sound!

I may or may not have raided the container and polished off all the pecans within the first 48 hours after opening it. πŸ˜‰

  5. Oh wow that peanut butter sauce on your toast looks….amazing! My favorite snack lately maple nut Clif bar! It’s too cold for fruits and carrots lol!

  13. Goodness, this is where all the good food has been hiding!

    My favorite snack lately has been half a bagel thin cooked with an egg cracked in the hole. It’s so simple but it’s so warm and satisfying.

    I guess you can’t blame the banana for being so angry. I’d be unhappy too if I knew I was about to be drenched in a pool of peanut butter and eaten. Actually, I’d be thrilled (about the PB part, not the consumption part)

    Any chance a gal could score that protein pancake recipe? Pretty please with a cherry on top πŸ™‚

      Aww, you’re so sweet Jenny! I wish I could tell you these fluffy cakes of goodness came from some kind of secret family recipe, but this (now try not to be too audibly disappointed) is actually just one scoop of protein powder, 1 serving just-add-water pancake mix, and water. No frills…just plain, simple, FAST pancakes! Perfect for a hurried weekday morning when your priorities lean more toward spending time decorating/photographing your breakfast rather than cooking it. πŸ˜‰

    Love this post….those pancakes are a huge breakfast!

    I always pick out the yoghurt covered raisins from my cereal (there’s usually only about 10) and eat them. haha, guilty!

      Thank you Sharon! I have been on a serious pizza kick lately. Haven’t had any in months and now I’ve had it three times in the last 2 weeks! Haha!

      If you can find the vanilla bean paste, it is amazing drizzled on practically anything! I love it on oats too! So much better than plain ol’ vanilla extract!

    Hmm I’d have to say my new favorite snacky thing are the 365 vanilla cream cookies. I had about 10 before my 8 mile run today. Great life decision right there. πŸ™‚

    I am afraid to use old tofu, though. I had a *really* bad experience with tofu in Cambodia and I am now super cautious of the stuff unless I know for sure it’s fresh!!

    I just need to come over and eat what you are eating. Your food always looks so amazing. Although that scary pancake with the angry face. IDK about that one…haha but then it gets that melty yummy sauce on it and its like BAM amazing.
