Banana S’mores Pancakes

Happy Pancake Sunday my loves!

 I hope you are enjoying the last bit of your weekend.

 We have been having some incredible weather here in Tennessee, but with the scent of autumn in the air and the knowledge that temperatures will soon be falling, I can’t help but think of fall festivities, bon fires, and what else,

S’mores!

 I whipped up these pancakes on a whim this morning, after having had a craving for s’mores over the last several days and let me tell you right now…

 They s’more than satisfied that craving!

After taking about 200 pictures (you think I’m kidding!), I finally narrowed it down to eight mouth-watering shots. Believe me, it wasn’t an easy task…taking the shots without fork-diving into the plate OR sorting through all the pics to find the best ones!

Banana S’mores Protein Pancakes

Prep Time: 5-10 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 1)

For the Pancakes

  • 1 modified flax egg (1/2 tablespoon ground flax + 1 1/2 tablespoons warm water)
  • 1/3 cup whole wheat pastry flour
  • 1 scoop vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened vanilla almond milk
  • 2 tablespoons semi-sweet chocolate chips
  • 1 graham cracker sheet, crushed and more chocolate chips for garnish (optional)

For the Chocolate Syrup

  • 1/8 cup maple syrup
  • 1 tablespoon unsweetened cocoa powder

Instructions

For the Pancakes

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. Prepare flax egg and allow to set.
3. Combine flour, protein powder, baking powder, and cinnamon in a medium-sized bowl.
4. In a separate bowl, combine flax egg, vanilla, and milk.
5. Add wet ingredients to dry ingredients and stir until all the flour is incorporated.
6. Fold in chocolate chips.
7. Spoon batter onto greased skillet (makes 3 small-medium pancakes) and allow to cook for approximately 4-5 minutes per side.
8. Transfer to a plate, layer with banana slices, and top with chocolate syrup.

For the Chocolate Syrup

1. Combine syrup and cocoa powder, whisk until smooth.

Spoons, fingers, or in times of desperation…

I believe it would be perfectly acceptable to bathe in it.*

*Avoid contact with eyes. I doubt “blindness by chocolate” is lethal, but I’m sure it doesn’t feel all that great. 😉

Yep, those would be my laundry room doors propped up by the vacuum cleaner acting as a light bounce and my “rocking” new tripod!

Who says you have to spend a lot on fancy camera equipment? 😉

      I think I finally have the solution to my lighting problem we were talking about the other day! The white doors make a HUGE difference! And to think, I was like thisclose to buying a huge white board the other day! Whew, close call there…I would’ve been out a whole 7 bucks! 😉

      Omg, fluff would have been amazing! And then I probably would have needed Ritalin to take me down off the wall! Haha!

      THANK YOU Katie! You are too kind! I still so much to learn about my camera as well! I don’t use a self timer…just a fast trigger finger! 😉 And as sad as it is, I usually end up with at LEAST 50+ shots of anything I photograph…all from different angles, and sometimes so subtle I can’t even really tell the difference! Haha!

  8. Because of this post, I literally just walked over to my freezer and opened the bag of chocolate chips in there.
    This looks amazing! I keep telling myself I’m going to experiment with pancakes… I have yet to get around to it. Any more recipes like this one, and that certainly wont last long!

    I love how you make your pancakes nice and thick! I love a thick, fluffy pancake. Those little flat ones just don’t do it for me.

      Thank you Allison! It actually took some practice to be able to make pancakes this way. Super fluffy, pillowy pancakes have always been my thing, but for the longest time, I was scared of using too much baking powder. Then I realized, THAT’S the trick! Beating egg whites, using less liquid, adding baking soda AND powder…sometimes it works, sometimes it doesn’t. But a 1/2 teaspoon of baking powder per serving of pancakes works EVERY time!

      Seriously?! I would take you up on that offer in a heartbeat! Do you know how hard it is to drizzle chocolate syrup while looking through your camera AND snapping shots?? I REALLY need to get a remote control clicker thingy! Haha!

    Omgosh! These photos are beautiful! The lighting is so fantastic that I’m a little lost for words. I can never get that lovely white light when I try to photograph my recipes,did you take them very early in the morning?

      Thank you Maddie! Actually, these were my lunch at about 2 in the afternoon! Haha! I think it helped that I played around with my wooden blinds in the window across from the table (I tilted them up a bit) and having the light bounce from the doors made a HUGE difference!

  24. These look epic!!! I’m actually going through serious s’more withdrawal right now because it rained through my one camping trip this summer, so we couldn’t make s’mores over the fire! And raw s’mores just aren’t the same as gooey melty ones. 😛

    Haha I love your photo “studio”! Mine last year consisted of a pillowcase on top of an Ugg shoebox on top of a table.

    These look amazing! I am so trying these soon. I was wondering how many grams is your protein powder and which one so you use? I find some hold up better then others in pancakes. Thanks.

      Thank you so much Ashley! And I’ve noticed the same thing with the protein powders…the one I used for this recipe is called Nectar Whey by Syntrax (25g of protein per scoop). I purchase it from this website: http://www.netrition.com/syntrax_nectar_page.html. The trick is to not let the amount of protein powder you use be greater than 1/3-1/2 the amount of flour…that’s when you get that plastic-y type texture and it also results in flatter pancakes!
