Pumped Up Pumpkin Oats

Please tell me I’m not the only one singing Foster the People now!

So this is how my morning went:

Alarm goes off at 4:45

Hit snooze

Alarm goes off at 4:50

Hit snooze

Alarm goes off at 4:55

Hit snooze

Alarm goes of at 5:00

I think to myself:
“GET UP! You WANTED to go to Bodypump at 5:30…REMEMBER?!”

I then peeeeeeeeeeeeled myself out of bed, threw on my workout clothes, swiped on some deodorant, and threw my hair up into some halfway presentable bun ponytail thing.

Then I sat on the side of the bed to put my shoes on…

Reached over…

reset the alarm and went BACK TO SLEEP!

#fail!

Oops! 😉

Luckily, when I finally DID get up, breakfast was far from failure.

Pumped Up Pumpkin Oats: (serves 1)

  • 1/2 cup rolled oats
  • 1 cup water
  • 1 teaspoon vanilla extract*
  • 1/2 medium banana (sliced thin)
  • 2 egg whites (I used the stuff in the carton)
  • 1/2-1 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 1-2 tablespoons chocolate chips
  • sweetener if desired
1. Combine oats, water, vanilla, banana, and egg whites in a larger than normal cereal bowl (these oats are seriously fluffy people…I mean SERIOUSLY!)2. Microwave on high for 3-4 minutes, stirring halfway through.
3. Add pumpkin puree and pumpkin pie spice to the oats and mix well.
4. Top with chocolate chips and tie on a bib!

Mmm! I think chocolate and pumpkin is entirely UNDERrated as a winning combo!

And it went perfectly with a glass of cool, refreshing…

Homemade almond milk!

That’s right, the weekend experiment was indeed a success!

I only made a small batch this time because I was scared I wouldn’t like it, but WOW, it tastes so good! It’s no Almond Breeze and it doesn’t hold a candle to the thick consistency of Silk, but the almond flavor is so natural, just like the smell of almond shortbread cookies baking in the oven…mmm, now THAT’S something I should make! 🙂

One thing I did learn is that I can NOT use my food processor for this. Yeah, so you know the place on a food processor where the bowl sits on the stand…yeah, the one with a HOLE in it? Well, when you put water and almonds in there and hit “on,” you get a nice little waterfall off the side of the kitchen counter onto your toes!

It’s really quite refreshing!

But you may want to just trust me on that one! 😉

And of course I see entire process as a bold statement that I do indeed deserve a Vitamix!

How many days until Christmas again? 😉

Are you a “snoozer” when it comes to waking up in the morning?

Anybody know where I can get a REALLY good deal on a Vitamix??
Like seriously, those things don’t come cheap!

    But what IS cool is that amazing bowl of oats. Dang girl. Lookin good 😉

    Also, that snooze situation is the store of my life. For reals. (Tonight, I’m sleeping in my workout clothes to see if that will help…)

    I am the snooze QUEEN! I hit it at least a few times before I get up bad bad bad habit for me. I am trying to work on it:) I have never thought of having chocolate and pumpkin but now I need to try!

  4. 5:30 is definitely too early for ANY exercise class! I go to bed quite late around 1am so 5:30 would be a definite SNOOZE for me. your pumpkin oats look so bright- love the colours in your photos! delicious!

  5. I’m a snooze hitter like no other. I set two alarms on my phone the other day since I had to get Tony from the airport late the night before and I knew I would end up turning one off and going back to sleep. I hit the snooze on BOTH way more times than I should have. I eventually got up…I did not like it one bit!

    I LOVE that song. I swear, there are few fun songs that sound like me…that’s one of them.

    I have yet to master the art of microwave oats. I think I need a bigger bowl!

    Lately I’ve actually been having a really difficult time sleeping and wake up before my alarm. I guess that makes me the opposite of a snoozer. What would that be called?! 🙂

    I’ll hit snooze once every once in a while. As soon as my alarm goes off I start thinking of all the things I need to get done and just jump out of bed. You would think that would be a good thing, but I think it just means I have anxiety, ha ha. I just had pumpkin oats with chocolate chips too!!! Twins!

    im curious about the price breakdown of homemade vs store bought. i dont think the yield is worth the price of the almonds but im wondering what you think on the subject.

    i am sorry to say i laughed at the thought of it all leaking out the hole in the food processor.

    i never hit snooze. ever.

      I was actually thinking about that the other day. Let’s see…I get my almonds from a warehouse club store, so I figure I’m saving a bit there….I can get a 3 pound bag for around $12. I used 1/2 cup of almonds and made just a little over 2 cups. So that means with my bag of almonds I could end up making about 18-19 cups of almond milk. That’s 0.55 cents a serving. The cheapest I’ve found Almond Breeze is at Walmart for $2.74 and that is……..0.34 cents a serving! Dude, why am I splashing around in puddles of homemade almond milk when I can be content (AND DRY) buying the store bought version?!?!

      You did that on purpose, didn’t you? 😉 Laugh at my misfortune and then mock me with your passive aggressive ways! Haha!

  18. Oh man, I’ve been whining for someone to buy me a Vitamix for ages. I still don’t have one, dang it. Let me know if someone hooks you up with a good deal. I’d like to get in on that. I’ve been wanting to try my hand at making my own almond milk too. Glad to know you had a successful test run. Thanks for the pretty pictures of your pumpkin oatmeal. I’ve pretty much been living off that stuff in the mornings for the past month. Can’t get enough of the orange stuff. I have the tinted skin to prove it 🙂
