What I Ate Wednesday on a Tuesday!

Hey guys!

So you would think I might have took yesterday’s “snooze episode” as a little learning lesson and maybe, I don’t know…try going to bed a little earlier so I could ACTUALLY make it to the gym?

Nahhhhh!

For the record, I blame it on Pinterest…and Avery’s late night dessert pinning spree!

Anywho! Let’s get to what you came here for…it IS Wednesday after all.

And you know what that means!

Breakfast (7:00am)
Pumped Up Pumpkin Oats, this time with added candy coated sunflower seeds to bring a little cheer to my cool overcast Tuesday morning.

And a big ol’ mug of half caf pumpkin spice coffee (Dunkin Donuts) because what’s a cool morning without a cup of some warm to sip?Β I’m an addict!

Mid-Morning Snack (10:30am)
Sarena’s Nutmeg Muffin topped with dark chocolate almond butter (MaraNatha)

And an unpictured sliver of banana bread made by a coworker.

You can tell the holidays are approaching with the amount of baked goodies showing up at the hospital lately! And I can’t say that I mind!

Lunch (12:15pm)
Salad-o-randomness

Spring greens, cooked wheatberries, roasted rosemary & garlic eggplant, Yves meatless pepperonis, and crumbled goat cheese all doused with a good amount of balsamicΒ vinegar!

Mid-Afternoon Snack (4:00pm)
A perfectly ripe sweet/tart Honeycrisp apple + half a (unpictured) Cashew Cookie Larabar…the other half went in the trash…yeah, I THOUGHT I liked that flavor πŸ™

Forgive me for the following iPhone pics as my camera battery did not get the memo to jump out of the camera today and charge itself while I was at work!

After I got home from the gym and showered, I realized I was STARVING!

There could be no waiting for something to cook…it was a sandwich or cereal kind of night. And since “someone” needs to make a little trip to the store to replenish her cereal stash…the sandwich won over!

Dinner (7:15pm)
CPB&FB Sandwich and a whole mess of carrots

For those of you not down with the acronym-age, that would be a coconut peanut butter and fig butter sandwich!

And the fate of those carrots?

Yeah, I’d have to say about half of them ended up like this!

Then I curled up on the couch with my latest Netflix movie, A Lot Like Love (such a good movie!) and sipped on some “dessert”

Almond milk + sugar cookie tea = a mug full of buttery cookie goodness!

  1. Ah I always try to avoid those “I have to eat something now because I feel so hungry I’m going to be sick” moments, but I actually got to that point tonight! I was not-so-patiently waiting for my homemade pizza to cook so I snacked on a few crackers and pretzels…those are the times I usually want to grab a cookie or chunks of chocolate though!

    I hate having those ‘can’t wait another minute to eat’ moments!! They usually happen when I’m cooking my lunch/dinner and I’ll snack so much it ruins my appetite! So, I try to make sure they don’t happen to often! πŸ˜€

      Omg, how did I miss that?! Girl, you are genius! And I am totally in love with maple extract right now. I bet it tastes fantastic mixed in! I’m definitely going to try it!

      And if you keep pimping stuff like that, I’m gonna have to start charging you a corner fee! πŸ˜‰

  7. Can we talk about how that nut butter looks like frosting? Win right there.
    Salad o randomness looks amazing. I’ll take that any day. esp if it has roasted veg in it. I wish I could get that nut butter over here. Perhaps I’ll just have to find someway to make it *cough smart kitchen* I totally dip carrots in nut butter. all the time.
    lastly, holiday teas are the best. I love the candy cane lane one. They used to sell/still do(?) a green tea peppermint one at TJS. fav tea hands down.
    In a pinch I usually do salad beast. throw things in. easy.

    Averie’s desserts make me drool, everytime I go to her page she has amazing cookies or bars that she created!

  10. Coconut peanut butter and fig sandwich = amazing!

    When I have a snack attack, I reach for the jar of homemade apple sauce in the fridge and grab a spoon! Then I get the peanut butter jar and do the same πŸ™‚

    I am totally intrigued by your eats! Why didn’t I know maranatha made chocolate almond butter? I just cried I need to get that asap!!! I’m a coffee addict to, don’t worry ;P Your salad looks amazeee. Anddd I have never tried coconut pb or fig butter!

    an apple. I don’t know it why. It’s lame. But for some reason NOTHING fills me up like an apple can. I think it’s the fiber/carbs/sugar.

    I’m so excited for the celestial seasonal flavors to come out. The ONLY redeeming part of winter, IMO !

  16. Aw was the cashew cookie Larabar not good? I’ve actually never tried that flavor but I LOVE Cashews so it sounded like a good one!

    I’m also obsessed with honey crisps these days. The only ones I can buy are HUGE but I’m totally ok with that πŸ˜‰

      You might actually like it then…I like cashews, but more in like cashew cream sauces. Not a HUGE fan of them solo. It just tasted sort of bland. :-/

    but ending with that tea. omg. i love tea and am mad i can’t find all the holiday flavors yet in my stores.

    also i am still so mad my TJ’s doesn’t carry the fig butter!! i want to try it so bad. gah.

    and your candy coated sunflower seeds are so cute! stuff like that just makes eating breakfast so much more fun.

  18. haha I feel like that happens to me a lot when I can’t wait another minute to eat and need something NOW. it’s either a sandwich (like pb&j) or cereal ! Or sometimes a rice cake with peanut butter or nutella πŸ™‚

  20. Ooo I like that idea with the tea… I have some of that kind in my room but for some reason never thought of pairing it with almond milk. I bet it would taste great with vanilla soy milk as well πŸ™‚

    3. I hate that “I need to eat right now or I’m going to die” feeling. Usually I grab some almonds and raisins and by raisins I mean chocolate chips to tide me over and get started on a real meal. Not that PB&J isn’t a real meal, because it totally is!

  24. this may sound like a stupid question, but did you make your tea without water and just the milk?

      Yep! Just warm the milk in the microwave and steep the tea like you would in water! Soo good…especially with chocolate/chai teas! πŸ™‚

  27. Ugh, I hate those moments when you need food NOW. Mostly I try to never let that happen, but the important part is listening to your body and eating something asap. Is that coconut peanut butter? I’ve never heard of that. I can’t imagine it’s better than coconut butter. I don’t know if I can handle two amazing butters together!! πŸ˜€

  28. You put chocolate on the muffin…I need to do that! YUM! I love that tea…it’s my favorite! I ALWAYS reach for an apple. However, things are changing in my tastes and I’m starting to get bored. I need to find some new snackage! Your eats look perfect!

  30. Sandwiches are definitely my favourite meal when I’m too starving to wait to cook something. Turkey and avocado sammies always do the trick!

    Sugar Cookie Sleigh Ride sounds amazing! I don’t what it is about Christmas, but it sticks around so long compared to the other holidays. I mean Easter’s pretty awesome, but it doesn’t get 2 months of anticipation/celebration! Maybe it’s the presents πŸ™‚

      So true…I never really thought about that before. It’s not like we decorate our houses/yards with easter stuff the day after Valentine’s Day!
