A Halloween Gift From Me to You

Hey guys!

I hope you all had a very Happy Halloween!

We had a pumpkin carving contest at the hospital and my department (imaging) won FIRST PLACE!

I wish I could take credit for the creativity, but this was all the x-ray manager’s doing. My favorite part was the “x-ray in use” box on top of his head…it had a red flashing light in it just light our warning signs outside the exam rooms.

We’ll be celebrating with a pizza party later in the week!

Oh and I was sure to do my part to show my Halloween spirit:

Too bad I can only wear this top one month out of the year!

So I know that celebrating Halloween doesn’t normally entail gift giving, but I thought I’d surprise you guys with a little somethin!

This ladies and gentlemen is a jar Heaven.

A few weeks ago, the lovely people over at Tropical Traditions sent me a jar of their highly blogger-coveted coconut peanut butter to review.

After having tasted a bit of Emilia’s when I was in California, I was more than excited to have a jar of my own. I had big plans for that jar…there were going to be muffins, granola, and repeat coconut peanut sauces like this one:

Β Coconut peanut butter, ginger, soy sauce, and whatever spices “jump” out at you! πŸ˜‰

No measurements…just eyeball/taste test till you get it right

But alas, my jar is now half empty and the only thing I have to show for it are memories of coconutty peanut buttery oats

…and an empty bag of carrots

Roasted in Tropical Traditions Coconut Oil for 20 minutes at 450
Sprinkled with coconut shreds and drizzled in Heaven!

I’m seriously hooked on this stuff!

    Woah that pumpkin cat is craaaaazy cool! I love it how you guys go so nutty for Halloween, I would so love to an experience October 31st over in the US. Such a tease, that coconut peanut butter sounds amazing (nothing like that down under) I’m going to have to make my own πŸ™‚

      I usually don’t get into Halloween as much, but I had a blast dressing up this year. I have a ton of decorations that I’ve accumulated over the years but since I pack them away in the same boxes with the Christmas stuff, I always forget about it until after Thanksgiving! #fail

    Well this one’s a no brainer! The coconut pumpkin pie smoothie… I can’t even begin to tell you why. Okay, I will.. Coconut = Love. Pumpkin = True love. Pumpkin PIE = soul lovin’. Throw all of that into a smoothie? Can love last forever? By remaking that smoothie, I bet it can!
