Take Me To Tupperville

I hope you guys had a fantastic Easter Sunday!

After I finished caressing all my jars of nut butter, promising never to abandon them again, BB and I met my family at my grandmother’s house in Nashville for a picture perfect plate of comfort food!

I provided the steamed asparagus and (mandatory, as far as I’m concerned) deviled eggs!

But you know what the best part is?

LEFTOVERS!!

There wasn’t much food left after my family nibbled and noshed through the afternoon, but I did manage to smuggle a ziploc bag of ham home with me!

Once I got home with my ham haul, I felt a spark…

Let me just say right now that I am the world’s WORST at planning ahead for mealtimes…mixing up a batch of overnight oats before bed (ok, usually I’m already in bed when I think about it and have to get up) is as far as it goes with me. Which is why I can’t understand how I INSIST on buying a bag of dried beans nearly every time I go to the store thinking,

“I’m gonna switch to dried beans…no more canned ones for me”

Fast forward a week or so after I’ve looooong forgotten about that bag of beans and run to the store to stock up on Kroger’s organic low-sodium cans.

So about that spark…

All in just under an hour, sweet potatoes were roasted, rice was cooked, fruits and vegetables were sliced, dips were mixed…

And then I had a little tupperware city in the middle of my fridge:

I shall call it Tupperville! πŸ˜‰

Oh and I also roasted up those golden beets I picked up forever ago from the farmer’s market.

Aren’t they gorgeous?…like little slices of sunshine!

Who know’s, maybe after more than a year of reading this girl’s blog, something finally rubbed off on me…I think we could ALL take a few lessons from Elise…

So, where are those beans, you ask?

Hush your mouth…we’re taking baby steps here, people!

When I got up this morning, I realized that I didn’t have to rush around the kitchen trying to figure out what to pack for lunch while throwing back chugs of coffee and bites of breakfast. I actually had time to sit down for an extra 20 minutes and savor my coffee and my meal and I have to say…

I could get used to this!

  1. Hahaha the only time I’ve used dried beans are when I did this $2 a day challenge for my church (you only spend $2 a day on food for a week and donate the difference of what you’d normally spend, which for me, is a LOT!) because you can get way more beans for your money when they’re dried!

    And yet… I’m still lazy!

      I remember that post! I always buy them telling myself how much money I’ll save, but it never really sticks either! lol!

      Haha, thanks! I feel like I should bow or something…do I get flowers? Wait, how about spoons?…because obviously I’m covered in the nut butter department! πŸ˜‰

      And THANK YOu for giving me the motivation to get to preppin! This week has been so much easier!

    I don’t often do a lot of meal prep – I’ll pack my lunch for the next day or maybe make a dish with leftovers, but that’s about it. I don’t like to decide what I’m going to eat until that day – I hate feeling like I have to eat a meal because it’s already made. πŸ˜›

  6. Planning ahead is really hard, but it does help. Sometimes I do the quick soak method for my dried beans. Then they only have to soak for an hour. Good for you getting prepped! That makes for a great week with meals! Have a great one Heather!

  8. I try to plan out because it saves me from frantic eating (when I don’t plan for busy nights, apples and a sleeve of saltines looks like an excellent dinner) and helps me make sure I’ve got the right portions/nutrients goin’ on (Re: saltines).
    Hi I need a golden beet they’re so preeety <3

      Apples and saltines…dinner of prisoners…um, I mean CHAMPIONS! πŸ˜‰ Haha! My no-think in a hurry meal is almost always cereal…or pb&j!

    I stink at thinking ahead which is why I keep a stockpile of already cooked beans in the freezer. Example: we eat a ton of black beans (soups, on salads, black bean burgers, etc.) so I buy a HUGE bag of dried black beans, soak, cook, & drain them. Then (once they’ve cooled) I put about 15 oz in a sandwich baggie (the kind that fold over – just fill it up – it ends up being about 15 oz) & nestle those into a freezer bag. That way, whenever i need a ‘can’ of beans in a recipe, i take the beans out & they defrost pretty quickly b/c there is no liquid in the baggies). I also take one bag out each week to put on my salad. you can do this w/any beans – give it a try! πŸ™‚

      Oh wow, that is such a great idea! I am so bad about remembering to make my freezer work for me…most of the time it’s where food goes to die (because I always forget about it). Thank you so much for the tip! I will definitely be trying it!

    Grrrrrrrrrreat planning! Whenever I get home from the grocery store I chop up all my vegetables and keep them in large Ziplock bags or Tupperware and it makes lunch and dinner SO much easier. How do you cook your Brussels sprouts? I love them but have not found a successful cooking method on my own. <3

      Oh my goodness, it’s so easy! I just cut off the ends, toss them in some olive oil and sprinkle on whatever spices I’m in the mood for…the other night it was salt and pepper, garlic, and smoked paprika (the best spice ever…next to cinnamon). Then I roast them on about 425 for 45 minutes…450 for 25-30 minutes if I’m in a hurry. You’ll smell them when their done! πŸ™‚

    I bought a variety of canned beans to see which ones I liked (so far red/kidney, black, black eyed peas and pinto. NOT garbanzo beans!) and then I buy the dry versions of those. Hopefully I will remember to soak them before I need them!!

    I try to make meals ahead on Sunday, but I also manage to make a few during the week on days I don’t work late. I do not prep for any. Maybe I should!!

    I want to try those beets. I have always hated beets — the red ones pickled — but recently discovered they do not have to be pickled!! LOL. I sampled a roasted red one and it was not too bad.

    The best thing I ate on Easter was scrambled eggs πŸ™‚ And a Sees Candy Bordeaux egg.

      I have to say I’m also a fan of the pickled variety, but roasted beets are the BEST! The golden ones taste the same…just prettier! Haha!

      So…not a fan of garbanzo beans?
