The Pancake Queen Flips Again!

Happy Sunday my loves!

Show of hands, how many of you have missed the weekly celebration of one of our most beloved (can’t forget the oats of course) breakfasts?

Well, you’re not alone!

Let’s se…it’s been…*archive searching*…hmmm…

TWO WHOLE MONTHS?!

What the heck is wrong with me?

I have to admit, I’ve gotten a little lazy on the weekend…oats, yogurt bowls, and of course cottage cheese have all been taking the spotlight from the dear ol’ pancake.

But NOT today!

Oh no, after trying out Kasey’s recipe for her famous Powercakes the other day, I have NOT been able to get the thought of pancakes out of my mind. But not just any pancakes…healthy pancakes! I’ve been doing so well with cleaning up my diet and keeping my calories in check…I didn’t want to blow that on a plate of flapjacks!

And so I present to you…

Gluten-free, dairy-free, oil-free, egg-free, but flavor-FULL pancakes!

But you can call them Coconutty Protein Pancakes for short 😉

Coconutty Protein Pancakes

Prep Time: 5 minutes

Cook Time: 10-15 minutes

Ingredients (Serves 1)

  • 2 tablespoons coconut flour
  • 1 1/2 tablespoons brown rice flour
  • 1 scoop vanilla protein powder (chose a plant-based variety if you want your pancakes to be vegan)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon xanthan gum
  • 1 tablespoon chia seeds
  • 1/2 cup unsweetened coconut milk (carton)

Instructions

1. Preheat non-stick griddle or skillet over medium heat and lightly coat with coconut oil or non-stick spray.
2. Add all ingredients to a small bowl and stir to mix.
3. Pour batter onto skillet forming three small-ish pancakes.
4. Allow to cook for 5-7 minutes per side (or until the edges start to crisp and get a nice golden brown color).
5. Transfer to plate and load up with toppings!*

*I chose to top mine with almond butter sauce (1 1/2 tablespoon almond butter + enough water to thin to desired consistency), fresh blueberries, and shredded coconut and it was DELICIOUS!

I was afraid after this much time, I would have lost my pancake mojo…

But just look at that beautiful golden color…

With a texture that’s pillowy soft, just begging to soak up a drizzle of sauce…

And the nutritional stats?

Under 300 calories pre-toppings!

Oh yeah, I’ve still got it! 😉

  1. Those look great! I always wonder how recipes powered by so little amounts of flour will make anything more than a blip in my frying pan, but those cakes are sizable (as far as I can tell)
    I haven’t had pancakes for a couple months either. I had a brief thought to make them today but I tried (and failed) at protein fluff instead 🙁
    As for next time, have you ever worked with rhubarb? Like it? I think it would be delicious in pancake form.

      Oh I know what you mean! Before I ever knew the idea of grain-free cooking/baking even existed, I never would have thought it would work…let alone work and taste incredible! Lol! You need to get some pancake action back in your life…turned that protein fluff into some “frosting” for them! 😉

      And so funny you should mention rhubarb! I just bought some from the farmer’s market and hadn’t decided what I wanted to do with it yet. I just felt compelled to buy it since the old guy at the stand said it would be the last of this season’s crop! I made some rhubarb bars last summer that were marvelous…hmm, I’m off to get my pancake thinking cap on! …oh, I really need that…a floppy hat that’s actually a pancake…with maybe a “drizzle” of syrup that hangs down from the edge like Minnie Pearl! YES! Haha!

  2. OH YUM! I made some lemon blueberry protein pancakes a few weeks ago that were amazing. But I think I just found my next pancake breakfast. 😉

      Mmm, I swear lemon and blueberry is a combo that JUST works…can’t believe I went so many years never combining the two! Let me know what you think if you make them. And I promise I’m working on getting you the email with the questions for the guest post…promise! 🙂

  4. oh YUM! These look amazing!
    I’m not a fan of protein powder but every once and a while a recipe comes where I wish I kept it around. This is one of them!
    I’ll have to see if I can find some single serve protein powder!

      Oh definitely! I don’t like to lean on the powder as my primary source of protein (and really, with the way I eat, I always get more than enough) but I like to add it to things here and there for more “staying” power…and I’m always sure to look for one that has a short ingredient list, low sugar, and is in isolated form…protein concentrates don’t break down as well in the body.

      Thank you! Coconut flour has slowly become a staple in my house. At first I only thought to use it in baking, but now, I use it to make sauces or “frostings” as I like to call them, or it’s great mixed into Greek yogurt or cottage cheese and really good for thickening smoothies too! Definitely worth it to have some around!

  8. I haven’t had pancakes in ages either and these are making me crave them! Too bad I don’t have time in the mornings before my 7 am shifts this week, unless I want to wake up way earlier than necessary! 😛 I can’t wait until my next day off now!

      Oh I totally feel ya girl! I can’t understand how some people just have one big pancake…it’s just not as satisfying without a stack/mountain/pile to watch your sauce/syrup drizzle down! Mmmm!

  13. I usually have smoothies for breakfast on Sundays, because I teach spin class at 8 am. And by the time I’ve done (and haven’t eaten yet) a smoothie is usually the quickest thing I can throw together.
    I DID make pancakes this morning though- using peanut flour and coconut flour (and some other ingredients) plus blueberries. I love variations of PB + J pancakes!

My advice is this: Unless you’re planning on making a career out of it, never…I repeat NEVER lose focus on the fact that it is a HOBBY and not a JOB…as in don’t feel obligated to post a certain way, a set number of days, or for anything other than yourself. Be true to yourself and your readers and they will keep coming back! Oh, and have fun!! 🙂

    these just didnt work for me. the batter was MUCH too thick and i had to water it down. they fell flat in the pan even though the batter was still too thick. burnt on the outside and still mousse-like on the inside :[

      Oh no! I’m SO sorry to hear that! I know I wrote the recipe exactly how I made them…what was the scoop size on your protein powder? Mine was a 30 gram scoop which is about the equivalent of 1/4 cup. If your scoop was bigger, that could be the reason (I will definitely edit the recipe and be sure to add that info now). One thing I’ve learned in the last few months since I started experimenting more with protein pancakes is that the ratio of flour to protein powder has to be a little higher or you end up with this weird sort of “gloppy glue” instead of a pancake! Also, I know not all protein powders are created equal…I tried using Garden of Life protein powder in my Apple Pie Pancakes a couple of weeks ago and they cooked fine on the outside but were completely RAW on the inside after forever in the skillet! :-/ I hope you’ll give these another chance…or perhaps try another recipe before you give up hope! And if you have ANY questions, please PLEASE feel free to email me! 🙂

      I have heard that rice powders can be a little tricky. I actually JUST picked up some at the store the other day to try experimenting with. Let me take a look at it and I’ll get back to you. Maybe I can figure out a way to adjust things so that they come out using the rice protein. 🙂

      Chelsea,

      I’ve been meaning to send you a message for a few days now. Sorry about the delay (I had knee surgery on Friday and have been a bit out of it the past few days). Before my surgery, I gathered all the ingredients and made these pancakes EXACTLY as I had typed the recipe TWICE and they did NOT come out at all! I want to apologize SINCERELY for this! Since it’s been so long since I wrote the recipe, I’m not sure what happened…I must’ve written something down incorrectly. But I want to assure you that AS SOON as I’m feeling better, I will figure out what it is and I WILL make the necessary corrections. I want to thank you so much for letting me know about this, because since I rarely repeat recipes (especially for my pancakes since I’m always working on new ones), I may never have known that something was wrong with this one. I really am sorry and I promise to let you know as soon as I get the ratios worked out and the recipe edited!
