Thursday Things and an Egg Epiphany

Happy Thursday friends!

Wow, you guys REALLY want to win some Simply Bars! My Twitter feed has been blowing up with all your entries and I couldn’t love it any more!

But besides all the excitement I feel from you guys, there have been some other things I couldn’t love more this week…

Yep, it’s time for another round of Thursday Things!

First up…

HEALTHY BITES!

But more specifically, the drool-inducing PB&J and Muddy Buddy Brownie flavors! I put in an order with Lindsay a few weeks ago so I could finally get my hands on some of the most talked about balls in blog world. She was kind enough to put together a smattering of flavors so I wouldn’t have to chose (because frankly, that’s the hardest part) and out of the five flavors I received, these two are my absolute FAVORITE!

I swear the PB&J tastes JUST LIKE a sandwich…no fake peanut butter flavor at all! And the Muddy Buddy? Yeah, it’s pretty much laced with CRACK!

MOJITO MANICURES

Love love LOVE these two new Essie colors I picked up a few weeks ago!

Light green = Navigate Her
Darker Green = Mojito MadnessΒ 

And yes, I think I’m now officially addicted to painting my nails. Kinda funny since over a year ago, I hated the look of polish on my hands!

GNC POWDERS!

Oh my gosh y’all (yes, I said y’all)…I am beyond in LOVE with these two supplements! The casein protein has already made an appearance on the blog, but the superfood powder, I just tried the other day and was seriously impressed by the natural berry flavor (no weird aftertaste or anything).

Then it took me all of about 2.2 seconds to come up with my new FAVORITE combo:

Berrific Protein Bowl: 1/2 cup cottage cheese, 1 scoop casein whey, 1 scoop berry superfood powder all mixed up and topped with fresh fruit!Β 

It’s also really good with bananas, but I ran out…so today, it was bloobies! πŸ˜‰

And speaking of brilliance ;)…

I’m sure you guys are probably wondering what the heck an egg epiphany is. Well, allow me to introduce you:

EGGS IN A JAR!!!

While mixing up an egg & veggie scramble for lunch today, I reached inside the fridge for my favorite jar of salsa and realized it was just about out. While it sat on the counter awaiting it’s eggy destiny, it dawned on my that I didn’t have to painstakingly scrape eachΒ and every last micro-ounce of tomato/pepper/onion deliciousness OUT of the jar when I could just put my scramble IN the jar!

I know, I know…sometimes it hurts to be such a genius! πŸ˜‰

I made my meal complete with a multigrain Wasa cracker sch-meared with creamy peanut butter and topped with TJ’s chocolate coffee bean grinder…not exactly genius, but definitely delicious…and too pretty of a pic not to share! πŸ˜‰

Any delicious epiphanies for you lately?
I’m always up for new flavor combos…like this one I got from IG today:
Somebody asked if I had topped my PB with salt and pepper.
Now THAT is something to try!

  1. My great uncle tops his bread with pepper. He’ll butter it and then put on pepper. It definitely caught me by surprise the first time I saw him do that!

    And I’m thinking some FitMixer chocolate slim might have to make it’s way into my oatmeal in the morning. Why have I not done that yet?!

      Hmm, that’s different! I used to hate pepper when I was a kid, but now I put it on just about everything…mmm, peppered eggs are the BEST! I may have to try it on toast sometime!

      Heck yeah girl! Protein oats are incredible! Such an easy way to add a little extra “punch” to your breakfast! πŸ™‚

  3. No delicious epiphanies here, but a delicious rediscovery!

    I haven’t been able to eat sweet potatoes (or regular potatoes) for a while without extreme pain, but this week I retried a baked sweet tater with NO pain – so I am once again in love with sweet potatoes (especially topped with cottage cheese and almond butter). It’s like reacquainting yourself with a long lost lover, haha. Watch out Jesse!

      Haha! Love it! That’s how I felt when I rediscovered my love for kiwi fruit the year before last…and then I found out I was allergic! Gahhhh! They may be deeeeeeelicious, but I do prefer breathing to their sweet flavor!

      LOVE sweet potatoes with cottage cheese and nut butter! So many people think that’s weird! They DON’T even know!

  6. Love those nail polish colours! I’ve never really been into painting my nails, but I’ve had a huge urge to do it lately! But I can’t right now because my summer job doesn’t allow it. πŸ˜›

    Also love the eggs in a jar idea!

    This isn’t a new epiphany for me since I’ve been eating them together forever, but I seriously love avocado + hummus + tahini. Best combination ever!

      Aww, boo! Well, I hope you get a little splash after the job is over! I swear it brightens my day just to look down and see happy colors on my hands! …And I feel like a 3 year old saying that! Lol

      I remember my first time combining hummus and avocado…mind blowing! Never tried adding tahini before…but then again, I’m not really a fan of the stuff either (foodie confession)

        gasp, i don’t like tahini either! I thought I would just throw that out there. It’s so weird for me when I don’t like something that is all over the blog world (I know, I’m such a cliche right(; ?)

          Finally, someone who agrees with me! I know so many people love it…and I came close once when I did a combo of tahini and chocolate over oats, but I don’t know, it’s just to bitter for me!

      Omg, I saw somebody (can’t remember who) do that a few weeks ago on IG so I tried it with a mint chocolate chip Luna protein bar…SO good! πŸ˜€

  8. I’ve heard about those Healthy Bites! I too would need a variety pack because I like trying everything!

    Question about the nighttime protein powder, I often get hungry at night and eat a bowl of cottage cheese or Greek yogurt with banana but it’s been getting irritating eating when I just want to relax and then go to bed, and but was wondering is this would be a good substitute for something lighter before bedtime?

    And the eggs in the jar is brilliant!

      Definitely! And since it’s formulated to breakdown slower than other protein supplements (and whole foods), it should help stave off the tummy rumbles till breakfast! Just make sure you get one that doesn’t have a lot of crap in it…it took me a while at the store to find one without a bunch of weird (and IMO unnecessary) ingredients!

        Exactly! I prefer the ones with all natural ingredients and a SHORT LIST OF THEM!

          Me too! I swear I picked up every container in the store…sad to say the majority had those “extras” in it and I kept seeing carrageenan in a bunch of them…not fully done researching that one, but I’d like to try to avoid it until I come to a conclusion. But I swear they add it to everything!

  9. Love your nail colors!!! I’ve been having fun with nail polish this summer. Just took off a bright glittery yellow last night and now moving onto a sea green.

      Of course dahhling! It’s a mixture of greens like spinach, alfalfa, and kelp with “superfruits” like acai mixed with a natural vegetarian protein and digestive enzyme blend. Basically, it’s like they took everything you can think of that’s good for you, dehydrated it, and crushed it into a fine powder…then gave it a kick ass berry flavor! πŸ˜‰ Each serving (2 scoops) is 100 calories, 5g fiber, and 4g protein…enough to give any shake or smoothie that extra bit of “oomph” but yeah, I can’t get past mixing it in yogurt and cottage cheese so far! The flavor is out of this world good! I used to work at GNC and I’ll be honest, they make a lot of stuff that tastes like…well…crap! So needless to say, I am MORE than impressed with this stuff!

          It’s actually the first SEVEN days of the month…but yeah, it does kinda suck that you can’t use it all the time. That’s one perk to having friend that can get me on post at Ft. Campbell…they do their discount every day and there’s no tax on food supplements like bars and ready to drink shakes! #winning

      Oh wow, so nice to meet a fellow Clarksvillian! I do a lot of my shopping at Kroger and Publix…and believe it or not, you can find some pretty sweet things at Big Lots! Other than that, every few months or so I make a trip to Nashville and hit up my foodie trifecta (Farmer’s Market, Whole Foods, and Trader Joes). I haven’t actually seen the Simply Bars anywhere (these were given to me by the company in exchange for a review) but you CAN order them online which is something I plan to do VERY soon! They have a chocolate coffee bar that I’m DYING to try! πŸ™‚
