Peaches ‘n Cream

I could never pick just ONE
favorite when it comes to fresh summer fruit,

But I have to say peaches are pretty high up on my list!

And when combined them with a creamy mix of almond infused overnight oats, a sprinkle of cinnamon, and some candied nuts?

Well that just makes me wanna sing!

Wait a minute, they’re not talking about breakfast are they?

Well, they just don’t EVEN KNOW what they’re missing! 😉

So why don’t you get out some oats and yogurt, throw a few chia seeds around, and dance with your blender?…or you could just make this parfait….

Singing is optional, but highly recommended!

Peaches ‘n Cream Parfait

Prep Time: 15 minutes

Cook Time: N/A

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 6oz container plain Greek yogurt
  • 1/2 cup milk
  • 1 tablespoon chia seeds
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon cinnamon
  • 4-5 drops liquid stevia (optional)
  • 1 large peach

Instructions

1. Combine all ingredients (except peach) in a bowl, stir together, and refrigerate overnight.
2. In the morning, remove oat mixture from refrigerator.
3. Dice peach into 1/2-1 inch pieces (reserving half for parfait), add to blender and puree until smooth.
4. In a glass, layer oat mixture, peach puree, and peaches until full.
5. Top with peaches and other desired toppings (I chose these candied peanuts still leftover from my Blend swag!)

    why do you keep doing this to me love!? I cannot keep up with these amazing recipes your busting out! I need to try this! When I was younger, I would have a bowl of nectarines and cream (real thick heavy cream) with sugar sprinkled on top for a snack. 🙂

      Oh my, that sounds absolutely fabulous! I need to get my hands on some good nectarines. And it’s funny that you say you can’t keep up, because I just said the SAME thing to Laura last week! Haha!

      Ohh, Greek style? I’ve heard of the Amande brand of almond yogurt, but I didn’t know they had a Greek style. Sounds interesting!

    Ms. Heather – I am glad you are a nurse because if I fall off my chair at the computer one more time, I am going to need medical care. Traction? OMG, I swear I looked at this incredible recipe with its luscious pictures and started to have hot flashes. I am fairly new to being on a healthier diet but this is right up my alley. I can’t stop drooling. You recipes are totally faboo, and I cant get started quick enough.

    There aren’t many things that will get me out of bed early on a Saturday morning – but NOW YOU’VE DONE IT!!! I’m going right to the farmers market at the crack of dawn (about 8 AM to me) to buy the biggest, juiciest peaches I can find – scurry home and start the lusciousness! I may even do the Ren and Stimpy Dance of Joy with my cats. I will send you further details…………

      UPDATE: While I did get up and out to to the incredible Farmers’ Market and got lovely peaches, I have to wait until my next shopping trip later this week to make the Peaches and Cream. Why? Because I forgot the chia seeds. I am such a dufus! I have to remember patience is a virtue (?)

        Awww, poo! You could still do it without them, but honestly, I think chia seeds MAKE overnight oats…you just can’t beat the thickness they create! Can’t wait to hear what you think next week! Keep me posted!
