WIAW: Fresh & Local Summer Staples

What up peeps?

So glad you all enjoyed my MIMM post yesterday! I can see it being the first of many more to come…gotta show my favorite diva some “luv” you know! 😉

But don’t pack away the streamers, balloons, and noise makers just yet…

Yesterday we MIMM-ed, but today…today we WIAW! 
In my mind, that’s pronounced “wi-awww”…you know, kinda like ye-haw! 😉

So I thought it’d be fun to show you guys how I’m making my way through my farmer’s market haul because if there is one thing that I consider a staple in the summer, it is definitely supporting our local farmers!

 But first, I have a confession.

You know the old adage “If everyone jumped off a bridge, would you?”

CANNON BALLLLLL! 

Calee did it, Amanda did it, heck, Jenn even did it…seems like everyone is on the apple cider vinegar shot train!

But truth be told…I’ve never been a huge fan of shots…of anything…so when I saw Laura add some to her Fitmixer aminos, I knew I just HAD to try it!

I am now officially HOOKED! You can barely even taste it thanks to the fruity flavor of the aminos! I have it first thing when I wake up and it definitely helps jump start my morning afternoon…and I don’t even need coffee! 😉

For breakfast, I decided to make something new! After drooling over Megan’s microwave cake for DAYS, I had to try it for myself…with a few personal touches of course!

I didn’t have any pumpkin, so I subbed applesauce instead, and while I knew I wouldn’t be able to taste the apple, I just couldn’t get the thought out of my head…

Remember those Capella drops?

Well, stirred into a bowl of yogurt, topped with crumbled cake and some steamed cinnamon apples annnnnnnnnd…

Apple pie for BREAKFAST!

 Like the bowl? It’s new! 😀

Lunch was put together in a hurry since I was running a bit late for work, but that doesn’t mean it was anything short of delicious…

Especially after a drizzle of this mustard sauce!

Omg, HEAVVVVVVEN!

Trust me on this one…blueberries and mustard…give them a chance!

A few hours later (getting into the 2am range just to explain), I got hungry for a snack and well, things got a little crazy!

Jalapeno cuke chip sandwiches…just as good as their BBQ brothers! 😉

C’mon, I have to do SOMETHING to entertain myself!

My next snack was a little…ok, a LOT more normal…

One of the last few of my Coconut Cranberry Protein Bars…it’s been over a week and they’re STILL just as tasty as the first day!

And just enough to fuel me through the last few hours of my night shift and then a bit of errand running.

Once I got home, I was starving, but I knew EXACTLY what I wanted!

If you follow me on Instagram, you may have spied my Mexican inspired breakfast pizza the other day….

Well, for the second edition, I wanted to change things up a bit…

Thai Breakfast Pizza anyone?

Notice anything different about the crust?

I followed my Egg White Breakfast Pizza recipe only instead of sauteing my veggies, I just let them steam on top of the egg whites. But here’s the kicker: instead of using a tortilla, I swapped in my favorite puffed wheat cakes!

Brings a whole new meaning to “crispy crust” but the best part? It snaps, crackles, and pops once you put the warm egg whites on!

Takes me back to my Rice Krispie days!

Not too shabby for one day, huh? I used everything from my haul except the eggplant…which I have plans for, but more on that later! 😉

    I love my acv shots, but yeah, Laura is the genius to combine with fitmixer… which I STILL need to try ACK.

    that pizza looks incredibly Nom Chompsky.

  2. wow I guess i just have to try the ACV shots after all. how do you recommend mixing it if I dont have these fancy schmancy fruity amino acid supplements?? that breakfast pizza looks amazing. how big is it?? sometimes photos can be so misleading. i dont think its the size of a rice cake right? haha that would be way too small.

      Haha! No, that would be sadly disappointing. These are some wheat cakes that I picked up at my local Asian market…like rice cakes on steroids! It’s probably a good 8 inches across! You could of course do the same thing on rice cakes…you’d just have little “mini” pizzas!

      I definitely DON’T recommend the ACV straight…or even just in warm water. I know some people don’t mind it like that, but ugh, makes my stomach turn! It does help a little if you add lemon to the water…like a LOT of lemon! 😉 But other than that, you could try it in fruit juice…OR I’m sure it would hide really well in a green smoothie! 😀

    I have a farmer’s markets across the street from my house, yet I hardly ever go, because I always sleep in too late on Sundays (the only day it’s on). Am I an idiot or what?!!
    Whenever I DO go, it’s awesome, and I get so much great stuff – and SAMPLES (mostly of the ice cream variety) 😉

    The cuisines my boyfriend and I mostly cook are Italian (a loooot of pasta and risotto gets eaten in our house), Indian, Thai, French, and a lot of bastardised Moroccan-meets-Middle-Eastern. Most of what we cook tends to be kind of hybrid creations of several countries’ cuisines 🙂

      Haha! I do the SAME thing with international cuisine…Mexican meets Italian, Thai…Indian…that line’s a little blurry. Lol But hey, at least it tastes good right?

      As far as the market goes…do what I do! Set an alarm, get up and go, then come home and go back to bed! Lol 😀

    I love Thai pizza. and farmer’s markets. We have a year-round market where you can find everything you never knew you always wanted on the c-h-e-a-p. Plus they have a hot bar. If they had showers and kept it warmer, I would move in.

      You’re very welcome m’dear. I love it! The aminos cut out the bitterness of the ACV and the ACV cuts down on the super sweet taste of the aminos! I already have to mix my aminos with like 3 times the amount of water because I think it’s too sweet. When they gave us our pre-mixed bottles at Blend, I could barely choke it down! Lol

      “…everything you never knew you always wanted” <- Haha, so true, right? 😉 A hot bar? That's awesome! The Nashville market it open year round, but sometimes it is just so hard for me to get down there! I'm hoping they extend the season of the one here locally like they did last year...it was up until mid October I think!

    I haven’t jumped on the Fitmixer bandwagon yet but all of you ladies are making it extremely tempting! Anything that will help me cut back on my coffee addiction would be much appreciated. Plus, it looks delicious.
    I have a Farmer’s Market that sets up every Sunday right down the street from me. I love it. Walking there and stocking up on fresh produce is the perfect Sunday morning and I look forward to it all week!

      Aww, I wish my town was more pedestrian friendly. Can you believe that over half the city has absolutely NO SIDEWALKS?! I know, it’s ridiculous! I went for a walk the other day and almost got run over!

      Fitmixer is great! I’ve only tried the aminos and the chocolate protein powder, but the flavors are awesome. And the aminos seriously taste like Kool Aide! I’m thinking about signing up for the Fitmixer Bootcamp that starts next month and if I do I’ll be able to try the other products they have, but I haven’t decided on it just yet. I feel like I could use a little change-up on the workout front, but not sure if I wanna shell out the dough! Haha! 😉

  8. I must find that horseradish mustard sauce. I’m on a horseradish kick right now… actually, I guess I have been for about 8 months, but it’s still going strong!

      Dijon mustard + honey + horseradish…and maybe a few spices. I’m gonna try recreating it because this bottle is NOT gonna last long! Lol I’ll keep ya posted!

  11. Meg’s microwave cake looks awesome! And I love the way you ate it with yogurt and apples. Yum!

    I have a farmer’s market nearby and I try to go every week – I hate buying imported produce from the grocery store when I know I can get fresh stuff from the market! I can’t wait for apples to be in season in a few weeks – I’m going to go crazy with apple oatmeal, pies, yogurt, muffins, etc! 😀

  12. ACV shots are the best and make me feel so good! Also, microwave cakes are a serious thing in this house. Everyday someone is asking for a new flavor…the options are endless! We have so many farmer’s markets, but strangely this year, I haven’t been to any of them. There is one I really want to go to, but its on Friday from 2 until 6. It’s a weird time for me since I have to pick Jay up at 2 and Max doesn’t get home until almost 5. I’m gonna try to get there though!

      Ohh, so your a shooter, huh? I never saw it in you Sarena! 😉 I’m only just now starting to dive into the magical world of micro-cakes…can’t believe I’ve gone this long without them! You’re right…they are just so versatile! I’m thinking about trying my hand at making my own…of course I’m sure whatever combo I come up with has been done already. I swear they’re ALL OVER blogworld!

      2-6? That’s an odd time. Hope you’re able to make it soon though! I expect a full report! 😉

    We do have a local farmer’s market, but it is only open during the summer months and only on Saturdays:( Wow, that horseradish mustard sauce looks AMAZING!! I love both horseradish and mustard, so I am sure that I would find it delicious:) Oh, and I lose those jalapeno Popchips as well; they are one of my favorite flavors! My favorite international cuisine to cook at home is probably Indian food–I love using all those fantastic spices to create delicious stews, curries, dahls, etc…Though Mexican food probably comes in a close second place, since I love beans, tomatoes, avocados, salsa, and other Mexican-related food:)

      I’m just getting into Thai food since I tried my first curry about a month ago so I’m DEFINITELY excited about making some dishes of my own. Like you, I love those spicy sweet flavors! And I make a LOT of Mexican…but it almost always turns into breakfast! There’s just something about peppers and onions with eggs! 😀

    I had never seen your egg white breakfast pizza recipe until today. My goodness where in the world have I been!! Love the inspired thai pizza, pure genius.. just like that apple pie breakfast you got going on too :).

      Thanks Jessie! You HAVE to try it! With or without the tortilla, it’s is one of my FAVE breakfasts…so versatile…so DELICIOUS! 😀

  15. My old roommmate was the girl that introduced me to apple cider vinegar saying it helps with sinus problems cause she had horrible congestion. I bought some recently but it’s still unopened… I have to find ways to use it cause I don’t have the Fitmixer amino thingy. Love your new bowl, it’s cute!

      I’ve tried it straight…blech! I’ve tried it in hot water…eh…better if you add some lemon (no, more like ALL of the lemon, haha!). Maybe try mixing it in juice? Or you could probably add it to a smoothie without tasting it! 🙂

    I love the farmers market too, I go to the one at Union Square every Saturday. It’s pretty awesome because it’s open year round, although in the winter it’s pretty much just kolrabi and baked goods…

      Yeah, we have a market it Nashville (about an hour away from me) that’s open year round and it’s usually just full of winter squash and apples. It’s nice to visit if I happen to be in the area, but nothing like it is when it’s in full bloom in the summer!

  18. YES! Blueberries and mustard is the best. You wouldn’t think so, but it’s awesome.

      Alright! I KNEW there would be somebody out there on my side! So many people are quick to turn down a good sweet and tangy combo!

  19. Oh you just HAD to mention Rice Krispies right at the end, didn’t you? 😉 I’m in the middle of a hardcore homemade rice kirspie treat craving right now! And it’s like the end of the day can’t come fast enough before I can run out to the store and pick up some marshmallows. Grr to you 😛

    We do have a farmer’s market here, but it’s really hit or miss. Sometimes I think it’s fantastic, and at other times I can’t find anything to buy at all. I do love the atmosphere of those kind of events though… the music, smells, and people are just fun to be around 🙂

      Haha! You too, huh? I don’t know where it came from, but I’ve been DREAMING of them lately! I haven’t had a rice krispie treat in years so I have NO idea where that came from, but I’ve been brainstorming a bit and just might have a recipe coming up soon! 😉

      I agree…there is nothing like the atmosphere at the farmer’s market! Love it!

    Haha, you can make some AMAZING faces. Am I allowed to be jealous? Or at least be jealous of apple pie for breakfast? That sounds deee-licious.

    And I looove making Indian food at home–curries are the best way to use up anything and everything out of the fridge!

      Haha! Don’t be jealous…just scrunch up your nose in front of a mirror and see how cute you look! 😉

      I’ve never made my own curry…actually, I JUST tried my first curry a few weeks ago. I’ve been a Thai virgin for too long…it’s time I started trying it out myself!

      Oh girl, it’s so good! Def a must. I think the aminos are a bit over sweet (I actually mix them with 3 times the amount of water just to get it to my taste preferences) but the ACV totally cuts the sweetness and balances it out perfectly!

  26. I’ve got a farmer’s market on Friday’s about a mile away from me…I don’t go to it as often as I should!

    At the same point, I work at one on occasion and it is actually impossible for me to leave without picking up something!

  27. Your farmers market haul looks almost identical to mine – except I have yet to buy okra! I always see it… I guess I just don’t ever think of actually using it (I’ve only ever used it when making gumbo!).
    Breakfast pizzas are the best, aren’t they?

    Perhaps instead of trying to find this, I’ll just mix some of the horseradish I have leftover from my Bloody Mary Gazpacho into my favorite Whole Foods 365 dijon mustard…almost the same? Maybe?
