What I Ate Wednesday! 🙁

I don’t know about you guys, but with summer’s end getting closer day by day, I’ve felt myself LOADING UP on every bit of summer produce I can possibly get my hands on! Even with the promise of apple and pumpkin season right around the corner, I have to admit I’m going to miss my all of my summer staples.

But enough of the pining over produce….et’s get this party started, shall we?

I rolled out of bed in the wee hour of 2pm NSZT (night-shift zombie time) and headed straight toward the coffee maker…

You know, ’cause that’s where I keep my Fitmixer! 😉

I still can’t believe it’s been a MONTH since I’ve had one cup of coffee. I’ve always said I would never give it up because I love the taste, but I haven’t even had a craving for it in weeks!

After hitting the gym, I had a little appetizer before I got started on lunch:

Vegan Bacon Date Roll straight from the fridge and oh so delicious with it’s perfect sweet and salty combo!

Definitely hit the spot and held me over long enough so I could prep this masterpiece:

It’s been TOO long since I’ve made an Egg White Breakfast Pizza!

Loaded UP with fresh summer veggies!

Jalapenos, tomatoes and peppers oh my! 😀

After lunch, I got started on dinner prep. I knew exactly what I wanted and knew it would take a bit of time to put everything together…

Oh yeah, look who’s the spring roll MASTER! 

When I picked up the package of spring rolls at the Asian market a few weeks ago, I honestly thought this would be a REAL challenge for me, but I’m telling you guys, it was a CINCH!

Stuffed with avocado, sprouts, tofu, carrots, and pickled ginger with a super easy spicy peanut sauce (2 T peanut flour + 3 T water + 1/2 tsp Bragg’s liquid aminos + 1 tsp sriracha)

DEEEEE-licious!

Snackage for the rest of the night included a perfectly juicy peach:

And a not so perfectly tasting Greek yogurt:

Never again, Kroger, will you lure me in with your enticing flavors!

I tasted no cranberry, no fig…just sugar…with a sandy texture! Ick!

And surprisingly, after a CAAAAAA-RAZY 10 hour shift at the hospital, (maybe it was the sugar high from the yogurt) I came home and whipped up this beauty:

  1. Heather. You are my foodie soul mate. I keep my Fitmixer by the coffee maker too… you know, the one I don’t use anymore. 😉 Your spring rolling ability is 10000x better than mine though. One day I’m going to master it!

    I was 0.5 seconds from buying the Greek tonight. now I don’t need to. Thankyouverymuch.

      Ugh, if my disappointed tastebuds save ONE soul from that mockery of Greek yogurt, I will have done my job! And I’m totally itching to make the spring rolls again…just don’t know what I want to cram into ’em this time…thinking I might pick up some shrimp this weekend and make shrimp and avocado rolls! Mmmm!

      I kinda feel bad for my coffee pot…poor lonely thing! 🙁

    Oh my goodness…I think we might share a brain.
    I’ve been on such a spring roll kick lately. Whole Foods and Trader Joe’s both have AMAZING tofu spring rolls that I’ve spent a ridiculous amount of money on in the past few days. I thought making my own would be too difficult but you’ve officially inspired me…If you can do it, I can! My wallet and my tummy thank you. (:

    Like you, I’m going to miss my summer veggies. Thankfully, I’ve frozen enough stews, chili, and ratatouille to tide me over for awhile.

    Love the sweet/salty combo, love the pizza (what’s the delicious cream cheese-looking sauce?), love the spring rolls, and I’ll definitely be back for the parfait! Like many, mint and chocolate is probably my favorite flavor combo….well, ever.

      Thanks Lauren! And funny you should ask what the cream cheese-looking sauce is because it IS cream cheese! 😉 Before topping my tortilla with all it’s eggy wonderment, I slather on a couple of tablespoons of low-fat cream cheese. It goes GREAT with flavors of the peppers and onions…one of my favorite savory combos!

      Yes, totally summer…poor things just stand in the shadow of all the summer squash and tomatoes…eggplant is ENTIRELY underrated! Which reminds me, I need to buy some more!

  9. The Mint Chocolate Chip Parfait is a beauty – curious about the recipe. But best about your post: you remembered me that there are some leftover rice wrapers somewhere in my cupboard, waiting for me to be wrapped around fresh veggies and taken to work as light and healthy summer-lunch.

  16. I think I’m seriously trying to squeeze as much fresh fruit into my system before summer ends, because it’s all I’ve been wanting to eat lately. Watermelon, blueberries, and peaches, in particular, I can’t seem to get enough of. I’ll be sad when summer is gone and I’ll have to go back to eating frozen fruit 🙁 Tbh, I don’t think I’ve ever eaten spring rolls, much less made my own, but I DO love the chocolate/mint combo, so spill the beans on that parfait, lady!

  17. OMG You are amazing, I want that mint chocolate chip parfait, it looks so GREEN and fluffy haha and I love spring rolls. So much. I haven’t had any in about a year, but I get them every time I go to a Thai place – so darn good. I’ve never made them myself though.

    I’m trying to shove in as many tomatoes as possible! I can’t stand them from the grocery store, and I don’t want a single one in my garden to go to waste. Same goes for all my eggplant–but now I know what to do with those! Bacon time 😉 That bacon sauce sounds deeelicious.

    I have never made spring rolls before, but it is definitely on my foodie “to-do” list:) Your spring rolls look fabulous; I love anything dipped in peanut sauce–it is one of the best condiments!! That Mint-Chocolate-Chip Parfait looks soooooo delicious as well; I am looking forward to the recipe…

      And thank you for the sweet compliment on my photography. It’s like I always say, “you eat with your eyes FIRST!” But you don’t have to spend a bundle on a camera…the main thing is just having the right lighting and angles! 😀

  22. I can’t believe that summer produce will soon be leaving us! It is so sad and I think I might have separation anxiety from my beloved peaches 😉 I can’t wait to find out how to make that Mint Chocolate Chip Parfait!

      Oh I know! I’m gonna be the SAME way once I realize I’ll have to go a WHOLE year without my precious tomatoes…you just CAN’T get away with eating those out of season! 🙁

    OH LORD. I can’t wait for that mint chocolate chip parfait recipe. It looks amazing. Then again everything you eat looks pretty great. I wish I could just hire you to be my personal chef. Then I would never eat food that looks ugly again.

  26. I know what you mean about summer produce – I’m going to miss fresh tomatoes more than anything! I hate how bland imported tomatoes taste in the winter. 🙁

    And oh my gosh I can’t wait for that parfait recipe. Mint + chocolate is the best flavour pairing ever!

      Oh yeah, tomatoes are just something you canNOT get away with on the off season…they always end up tasting so watered down! Which reminds me, I need to be sure to whip up a good cheese and tomato sandwich before they’re all gone! I swear I used to live off those as a kid…with tomatoes straight from the backyard garden!

      They really do getcha, don’t they? I also got a blueberry lemon-verbena…sounds amazing right? Yeah, it tasted like blueberry…that’s it…and it still had that really weird texture! What is WITH that?!

      Ahh, pizza NEVER gets old! Have you tried the cauliflower pizza crust yet? I’ve made it twice and it’s AMAZING!
