That slicing, dicing, and otherwise NOT mutilating a mango is oddly therapeutic?

Coconut Mango Chicken Salad

Prep Time: 10-15 minutes

Cook Time: N/A

Ingredients (Serves 1)

  • 3.4 oz cooked chicken breast, diced (approx. 3/4 cup)
  • 1/2 cup diced mango, peeled or unpeeled
  • 1 celery stalk, diced
  • 1/4 cup mashed ripe avocado
  • 1 tablespoon unsweetened shredded coconut
  • 1/4 teaspoon Mrs. Dash Citrus Seasoning (optional)
  • 1/2 teaspoon fresh lime juice
  • 1-2 tablespoons chopped fresh cilantro

Instructions

Combine all ingredients in a bowl and stir until well combined.

Serve in lettuce cups, corn tortillas, a whole wheat wrap, or just grab a spoon!

The natural sweetness from the mango and coconut paired with the tart lime and “zing” of the cilantro will have you looking for your hula skirt!

And who wouldn’t want to dance after seeing these stats?

Now if you’ll excuse me, this evening’s activities are going to include some fashioning of undergarments of the coconut variety…

Hmm, wonder how those are on chafing?

On second thought, maybe I’ll just stick to the hula!

  1. I didn’t know you could eat the skin! But does it actually taste good? I mean, I’m all for not losing delicious mango but I may miss fighting my dad for who is going to get to eat the extra mango off the skin!

  2. I’m a little mad at you right now for pointing out that I have been unnecessarily slaving over peeling/cutting mangoes. Once I get over it, I’m sure to love you (and this salad) again.

      Haha! I’m sure it’d be great with salmon or tuna too! Does that help the anger a little…maybe just a little bit? πŸ˜‰

    haha, yes! i am not crazy now. I eat the peel. It’s good! and exotic? I am going for training camp soon somewhere kinda exotic. I shall bring my mangoes. teehee

  4. I hate cutting mangoes! I can never do it properly and I always destroy my mango in the process. πŸ˜› I always thought there was some reason why you can’t eat mango peels – I don’t know why I thought that! That salad looks so good – I love mango and chicken together.

    This weekend I’m going to the farmer’s market with a friend and then tonight my mom is coming to visit. We’re going out for dinner tonight and shopping tomorrow! πŸ˜€

      Well, Allie did just leave a comment saying that the peel can contain similar chemicals to that of poison ivy/sumac…I didn’t know that. But I’m allergic to PI and it didn’t bother me!

    Not to spoil the easy-no-peeling parade, but mango skin has the same chemicals as poison ivy in it, so NOT everyone can eat the peel! You might want to throw a warning out there for anyone who’s allergic to PI or sumac, as they can react badly to it.

    And there’s a tropical Mrs. Dash? I’m all over that. I love me some Mrs. D.

      Wait a minute…duh! I’MMMMM allergic to poison ivy! But I didn’t have any problems with eating the peels…

      Yes, it’s true! It comes from the sap of the tree, so it could be that those that are more thoroughly washed and cleaned may be less irritating. My friends recently had rashes all over their faces and hands from mango skin (but they were close to the source and picking the mangoes from trees).

    I can’t eat the skin….if my lips even graze the skin a little I get the mango rash. Its not too bad… just an annoying dry itchy patch around my mouth that comes about 2 days after I come in contact with it πŸ™ It doesn’t happen to everyone but…..you might want to warn people haha
