I’m so so glad you all got just as much of a kick out of yesterday’s pancake post as I did! I guess I’ve reached the point where my pumpkin consumption is starting to make me delirious!

I hope you all had a fantastic weekend FULL of pumpkin lovin’, some fun and exciting activities, and of course, a little R&R!
While I handled the pumpkin lovin’ and the R&R rather well this weekend, (Can I get a heck yeah for 10 hours of sleep on Friday AND Saturday…all on my own?! No pills or sleepy teas or anything…oh yeah!), the festivities were lacking. It seems our lovely 80 degree weather has decided to abandon us rather abruptly this season as it hasn’t gotten over 55 degrees in over a week!
I did manage to go out with some friends from work on Saturday night and had a delicious dinner of chicken tacos and grilled veggies from our local Mexican restaurant (sorry, no pics as I didn’t want to be “that girl”). I’m just proud of myself for showing some restraint with the free basket of chips and salsa instead of face-planting in it like I use to. Lol!
Yesterday was spent lounging around the house for the good part of the day (you know, before the bad part where I had to get ready for work…boo!), but believe it or not, I was pretty productive for a person who stayed in her pj’s all day!

I normally have the hardest time finding the motivation to prep any of my meals ahead of time. Which is why most of what I eat ends up being a random bowl
(or “bug” as Sarah so geniusly coined) of whatever I grab from the fridge in my I’m-about-to-chew-my-arm-off-need-food-right-now state.
But I’ll admit, lunch and dinner?…they aren’t really my problem.
(Or whatever you call that meal I eat after I get off work, before I face plant into my pillow while everyone else is getting their day started). Sometimes I have the energy to whip up something brilliant, but most of the time I just want to cram something in my mouth and hit the hay!
So I set to work on a recipe that would solve that problem…
AND give me a chance to break in the new whisk! 😉
Cheesy, eggy VICTORY!
Southwestern Cheesy Egg Cups
Prep Time: 10-15 minutes
Cook Time: 25-30 minutes
Keywords: bake breakfast low-carb high protein sugar-free eggs egg whites
Ingredients (Serves 4)
- 4 large eggs
- 6 large egg whites
- 1/4 cup milk
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced tomato
- 1/4 cup chopped fresh cilantro
- 1 1/2 tablespoon of your favorite salt-free Mexican blend (I used Mrs. Dash)
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 4 oz shredded/crumbled cheese
1. Preheat oven to 350 and coat a regular-sized muffin pan with cooking spray.
2. In a large bowl, whisk eggs, egg whites, and milk.
3. Add veggies and spices and stir well.
4. Transfer mixture to muffin pan, filling each cup 3/4 full.
5. Top cups with cheese.
6. Bake for 25-30 minutes or until edges start to brown.*
7. Allow to cool completely before removing from pan.
8. Serve warm or at room temperature topped with your favorite salsa.
*Note: The cups will naturally rise during baking, but will “deflate” (like a souffle) after you take them out of the oven…which creates a nice little “nest” for salsa or other toppings!
Nutrition facts for one serving (3 egg cups):
Fat content will differ depending on the cheese you decide to go with. I used my
roasted garlic cheese curds…which I will now refer to as “nuggets” since it sounds more appealing! 😉
Certainly not the most photogenic breakfast, but I’m pretty sure you’re tummy won’t care after you’ve had your first taste!

YUM! Those look pretty tasty! Living at home has totally changed my routine up so there isn’t much meal prep. I have made myself a few hard boiled eggs for easy snacks (which I need to do again) and plan to make some protein bites soon too!
You know, it’s not much but having boiled eggs on hand really IS convenient! I always say I’m going to boil up some for the week, but never do…so lazy! Lol

I need to get better a meal planning! Today I am going to write down meals I want to make each night before I head to the grocery store, it makes things easier and I want to do a crockpot chili for sure! Mike loves the turkey crockpot chili and I do too, win!

Awww, I love you so much! I’ve been craving chili like crazy lately! I totally blame the cold weather! And that is my next step – planning ACTUAL meals! I was always “that girl” growing up…the girl who could never pick out her clothes the day before because I always ended up changing my mind at the last minute. Yeah, I do the same with my food! Lol
I have been really wanting to make egg cups like this for exactly the same reason! I want something quick to take with me in the car on way to kids school! They look delicious.

Yay! Always glad to help motivate! I was really happy with the way the egg cups came out…my mouth was watering from the moment they came out of the oven…it took a HUGE amount of willpower to save them to try till the next day, but SO worth the wait! Haha!
It shocks me you struggle with breakfast. All those pancakes! 🙂 I used to make egg muffins all the time. Called the eggfins. I miss eggs. The incredible, edible egg. *sigh*
I have to prep at the beginning of the week. Sunday late afternoon/night is reserved for a massive trip to the farmer’s market and meat-making. Monday morning my hands are so dry I look like a reptile.
I love this and can totally relate to the reptile hands. By the end of prepping, my hands are dry and my nails are splitting.
Haha! Well, breakfast in general isn’t my problem…it’s breakfast during my workweek. I just don’t have the time/energy/motivation to cook when all I want to do is pass out after a 10 hour shift! Plus, since I know I’ll be going right to bed afterwards, I like to have something that is high in protein but low in carbs…and these fit the bill perfectly! 😀
Next week, I’m going to try to do even better and actually plan MEALS instead of just random food! Lol

You aren’t going to believe it, but I made mini egg frittatas last night for dinner: half were tomato, basil and mozarella, and the other half were spinach, feta and sun dried tomato. Of course, yours looked about a million times better than mine.
I also took pictures of the inside of the fridge yesterday too. Deja vue?!

Eggs, cheese, and salsa? Swooooon. Talk about heavenly. It’s been too long since I’ve had any kind of cheesy egg muffin type things, and while I can’t say that I’d be keen on eating them for breakfast (gotta start my mornings sweet!), they’d probably make a great breakfast for dinner 😀 And speaking of dinner, I could definitely afford to do a little bit more meal prep… As it stands, right now I do almost none and when I get home from work at the end of the day, the last thing I want to do is spend time in the kitchen so I usually just throw things together in under 10 minutes and hope for the best.
Oh I know that scene ALL too well! I have to say I’ve come up with some pretty great combos out of starving desperation, but it IS nice to be able to to come home to something that is already prepped…no thinking required…especially after a particularly LONG day!
I know you gotta have your yogurt bowls, but oh yeah, these would make a perfect BFD (breakfast for dinner)! 😉

Yay for being productive in pajamas (and double-yay for alliterations – yes, I’m a weird grammar nerd)! Actually, I’m pretty sure Sundays in Fall and Winter were meant to be spent in PJ’s and it’s us acting against the grain :D.
As for the weather it’s been getting cold quickly over here and I had to get out my warmest parka already. The highest we got on the weekend were around 46 ° F. Brrr for sure.

Thanks to going to school full time and working full time, there were some days where I would leave my apartment at 6am and not get home until close to 10pm!! Meal prepping was a MUST (even if back then I thought I was eating healthy by subsisting off 100 calorie packs, Healthy Choice microwaveable dinners, an snack bars)! And ps, I'm a total grammar nerd too...actually, you read my blog...I'm just a nerd in general! 😉
Sometimes I’ll make a big soup/stew/casserole and roast up some squash on the weekends, but I don’t prep ALL my food for the week.
Those egg cups look awesome! I love baking mini frittatas in muffin tins like that. They’re so convenient for taking on the go!
I’m the same way. I really like to have ONE big thing like a stew/soup that I can eat on during the week, but I also like to give myself options. I can’t even pick out my clothes for the next day because I’m so fickle…I can only imagine how my inner teenager would rebel if I planned EVERY meal for the week…it would probably all go bad while I had bowls of cereal for dinner! lol

You are prepared girl!! I always say I’m going to meal prep, but I never do. I try to make meals on Sat and Sun that we can have for leftovers, but that doesn’t help for lunch. I need to get on it!

Why do u have canned pumpkin in there?
I had to look at the picture…I was like, “There’s no pumpkin in the egg cups?!” Haha! The can opener that I have creates a sort of “lid” out of the top of the can…and I’m just too lazy (plus it’s amazing how fast I blow through a can) to transfer it to a separate container! 🙂

I liked the kuri, but I’m sorry…my heart still belongs to my precious kabocha. I think it’s just a bit sweeter tasting than the kuri. My next squash on the list to try: delicata! I almost bought one at the store the other day, but talked myself out of it since I have a fridge FULL of stuff to eat…I swear I have Foodie ADD! Lol

I’m impressed by your chip-resisting skills! I can’t walk into a Mexican restaurant without inhaling a basket and a half of chips all by myself. And a margarita. Thank goodness they don’t just keep bringing those out for free, too…And don’t even get me started on the Mexican place in town that has flour tortilla chips…those things are insanely crispy, flaky, holy cow. There is nothing that goes better with guacamole.
I get my prep on for my lunches/work food, but yeah, stuff-in-a-bowl is just how dinner goes. Nothing like food NOW.
Mmmm, guac! Yeah, I can’t order guac whenever I go out or I WILL eat a basket and a half of chips…and probably some from the table next to me! 😉
I haven’t done fig butter (yet), but I did mix the grain mix with pumpkin, cottage cheese, and roasted garlic fig spread the other day…omg, SO good!
I swear if I wasnt married, my fridge would totally be as organized as yours. But alas, Im a hitched woman, meaning my fridge will NEVER be clean and organized lol. I do try to meal prep, but mostly its just one or two things, like grains or roasted veggies, since the rest of the fridge is cluttered with my husbands goodies.
I am in love with that grain mix! Last week I had it for lunch almost every day. Topped with either a grilled chicken breast of my favorite; a dippy egg.

Now that I’m in college, meal prepping (if I want to eat any food that I cooked that is) is absolutely required(: I actually still have some eggie cups in my fridge (pretty sure I used one of your previous recipes with eggs and flax, delish!) What recipe did you use for the protein balls? That would be a great “on-the-way-to-class” brekkie.

Meal prep is DEFINITELY essential if you want to eat healthily in college (from personal experience, I don’t recommend subsisting off beer and pizza alone ;)). Eggie cups are my new go-to quick breakfast…I’m already dreaming up different flavor combinations! The protein balls were a recipe of Kristina’s (Spabettie). Here’s the link: http://spabettie.com/2012/04/10/apple-crunch-protein-bites/ She uses a high protein cereal to the mix which adds a bit of crunch, but I’m sure you could use Kashi or another favorite and it would come out just as good! 🙂

Hi I was wondering if u eat clean do u count calories ? I want to make sure I’m not going over 1200 calories per day , how can I do this when pre preparing ?
Yes, I use My Fitness Pal to keep a log of all my meals and snacks so that I can keep my calories in check. It’s really important for me since I work nights and can tend to get a little extra “snacky” when I start to get tired mid-way through my shifts. The website has a pretty good database for searching for any and all foods and if you have a smart phone, they also have an app that makes it even easier! The best thing to do when meal prepping is to just weigh out everything evenly and distribute it into separate bowls/zip-top bags…and if you need to, you can always use some tape and a marker for labeling them!
Also remember to take into account the number of calories you burn during exercise. You may be concerned about going over 1200, but you definitely want to make sure you’re not UNDER 1200…otherwise your body can go into starvation mode…not good at all!
