Breakfast “Sushi”

Ever have one of those moments where you do something without much thought at all and then end up feeling like a complete GENIUS?

Yesterday morning was one of those moments.

As you guys know, I’m always looking for good low-carb breakfast ideas that are quick… and easy to whip up with my zombie brain after a 10-hour night shift.

On my drive home after work, all I could think about was eggs…and the drool-worthy #yolkporn I posted on Instagram last week:

Toast + hummus + egg = HEAVEN!

To make this breakfast more suited for my pre-faceplant status, I decided to enlist the help of my new favorite tortillas:

Seriously Joe, how could you have hid these from me for all those years?!

Originally, I was just going to wrap it up and call it a night morning, but then I spied some roasted asparagus and avocado in the fridge and well, any quick and easy breakfast that also sneaks in some veggies (ok, avocado is technically a fruit) is alright in my book…and heck, why not throw in a few shredded carrots while we’re at it! 😉

So I threw in the veggies (and the fruit) and rolled up my creation and THAT’S when the moment occurred…

Because I obviously didn’t get enough over the weekend! 😉

Breakfast “Sushi”

Prep Time: 5 minutes

Cook Time: 3-5 minutes

Ingredients (Serves 1)

  • 3 egg whites
  • 1 whole wheat low-carb tortilla (I used Trader Joe’s brand)
  • 1 tablespoons prepared hummus
  • 3-4 spears cooked asparagus
  • 1 small carrot, sliced into strips
  • 1/4 avocado, sliced
  • sriracha and furikake for garnish

Instructions

1. Set a small non-stick skillet over medium heat and coat with cooking spray.
2. Add egg whites to skillet and allow to cook, without stirring, for 3-5 minutes or until set.
3. Using a spatula, carefully flip egg white patty and cook an additional 1-2 minutes.
4. Spread hummus mixture evenly across tortilla and top with egg patty, asparagus, carrot strips, and avocado slices.
5. Roll tortilla, tucking the veggies tightly within and cut into 6-8 slices.
6. Drizzle with sriracha and sprinkle with furikake.

I picked up a jar of furikake at my local Asian market a few months ago and LOVE it, but if you don’t have access to it, feel free to sub in sesame seeds or even chia seeds for that extra “pop”!

That is if you can keep yourself from “popping” them straight into your mouth after plating! 😉

      I actually thought about trying to eat them with chopsticks but yeah, after that stroke of genius, my mind just couldn’t handle the coordination needs required for that! Lol

  2. Oh my GOODNESS. I definitely need to make this for lunch today. What a great idea! I still haven’t perfected the rolling the egg white in tortilla trick though – I always end up with a mess. xo

      Steady hand and patience…and it helps if the skillet you use is smaller than your tortilla, otherwise, I know EXACTLY what you mean…and I have the hummus stain on the elbow of my shirt to prove it! 😉

    Your egg looks good too. That’s what I was craving for lunch today, I had a poached egg on wholegrain toast with smushed avocado and some chicken. Definately hit the spot.

      Mmm, sounds like a winning combo…nothing like avocado and a runny yolk! I’m SO glad I finally figured out how to poach an egg for the first time this year!

  7. I’m more than a little sad I already ate breakfast. And I’m out of tortillas. Trying this ASAP… without the asparagus. *shudder*

    How many carbs do those tortillas have in them? I usually buy the Sonoma low-carb brand from the farmer’s market. I think it has 11g?

      Aww, I laughed out loud at the asparagus comment! Still not over the nightmares just yet, huh? 🙁

      These have 10 grams of carbs and SEVEN grams of fiber! Holy SHIT…like seriously! Bahahaha!

      Haha, thanks girlie! I still can’t get over how the idea just popped into my head…AFTER a 10 hour night-shift! Pretty sure I need a plaque or something commemorating this moment! 😉

  11. Now this is the kind of sushi I can definitely get into (not a fishy fan here). And I’m kinda, sorta jealous about your geniusness. I can’t really remember when my last genius moment was… unless you count the brilliant idea of sprinkling nutmeg into yogurt – that was pretty good 😉

    I will not disagree with the genius-ness of this idea. Or the amazing-ness of those TJ’s tortillas. Plus an excuse for sriracha first thing in the morning? Even better.

      I know, right? And that was my last one! Don’t look at me funny if I grab five packs next time we go to TJ’s! I’ll turn my head if you want to buy 10 things of winter spice coffee! 😉

        I will never look at someone funny for buying TJ’s seasonal products (or any products…) in bulk 😉 Just ask my five boxes of candy cane green tea! And I may have to buy five of EACH coffee flavor, the ginger’s been growing and growing on me the more I drink it, but I still love the wintry spice…I just don’t know which one’s better!

          Haha! I would love to see you hobbling up to the register with 10 containers of coffee! Can I video it? 😉 I think I’ve decided on the gingerbread…the spiciness comes through more when I mix it with half decaf than the wintry spice does.

  17. That is awesome. LOVE it. It would be easy to make vegan, too, with crumbled tofu instead of eggs. 🙂

    I’ve seen that rice seasoning at Whole Foods and wondered about it. Thanks for doing the research for me. And those wraps?!?! I KNOW! They are so delicious. I was going through a phase where I literally would just pull them straight out of the package, rip them apart, and shove them in my mouth…a bit rabidly actually.
