Don’t worry, I’ll spare you my mad rhyming skills for today…but only because I’m totally brain-dead at the moment.

I had my sister over for a little pizza and movie action last night and tooooootally forgot about prepping this post until just before midnight. 😯 Of course seester-seester bonding time trumps just about anything, but I DID promise you guys a recipe! I just want you to know that this post is powered by kabocha!

But back to my shit…I mean my BOWL! 😯

I have absolutely NO IDEA how this combination came to me. A desperate attempt to eat all the things perishables before my trip? A sleep-deprived moment of confusion (though I have to say, it tastes a LOT better than peanut butter and garlic toast)?

“Tofana” Porridge

Prep Time: 2-3 minutes

Cook Time: 45 seconds (optional)

Keywords: microwave breakfast high protein no sugar added vegan vegetarian gluten-free dairy-free tofu bananas #strangebutgood

Ingredients (Serves 1)

  • 1/2 package organic silken tofu
  • 1/2 medium-sized banana
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 Tablespoon unsweetened cocoa powder (optional)

Instructions

1. Combine all ingredients in a bowl.
2. Mash with a fork until mixture reaches desired consistency.
3. Serve cold or microwave on high for 45 seconds if you prefer (I liked it both ways!)
4. Top with fresh fruit and nuts, nut butter, and/or granola.

    Hi Heather, I definitely pay attention to expiration dates. Plus, I actually keep a black Sharpie in the kitchen and write the “date opened” on foods like milk, mayo, Greek yogurt, salad dressing. Most dairy products spoil in 7-10 days and it’s just nice to not have to guess how old they are!

    I love your strange but good combos. Here are a few of mine:
    -Meat/fish marinade: soy sauce, mustard, black pepper
    -Sandwich: grilled cheese with crunchy peanut butter
    -Sandwich: toasted white bread (must be white!) slathered with mayo, sprinkled with soy sauce, layered with cucumber slices. That’s it!
    -Pad Thai-ish noodle sauce: oyster sauce with ketchup
    -Childhood fav: white rice with Thousand Island! Yum!

    Yes I am a scaredy cat when it comes to expiration dates and if something has a hint of not being right I will throw it out. Only because I have experienced really bad food poisoning, nothing to actually do with expiry dates but it just made me extra cautious!

    Favourite midnight munchie, depends if I am drunk or sober. If drunk it would be a Souvlaki all the way! If sober but maybe matched with some red wine I would never go past a cheese platter. Mmm cheese platter.

      Cheeeeeeeeeeeeeeese!!! Yes, I think we would get along just fine…drunk or sober! haha!

      I’ve found the same thing to be true with other people who’ve had food poisoning. The man-friend is EXTREMELY leery of expiration dates…which is actually just a bonus for me because that means I get the extra food he doesn’t/won’t eat! Lol

  3. Wow, so Amanda mentioned to me about how good Kabocha is cold and I was skeptical…until I had it with lunch- So GOOD!

    I used to not pay attention to expiry dates, until I ate salmon which was one day beforehand and got food poisoning. Fail. So now I’m wary with meat/dairy but cereals and other things… if it still tastes good, its plausible. Although that tofu one….well, as you said your still alive and thats the main thing! Love that idea!

    Favorite midnight snack- I swear vanilla ice cream tastes better in 1. Winter. 2. Under blankets. 3. Just before bed. Boom.

      That is the exact reason why I can’t convince the man-friend to join me on the dark (and reckless) side…he’s had food poisoning more than any other person I know! Though for the record, all his experiences were with dining out. THAT should tell him something, ya think?

      So glad you’ve joined the cold veggie club! It really is amazing how much sweeter they taste when they’re cold! And I agree with you 100% on the ice cream thing! haha!

  5. I love the idea of adding in some extra protein! I’m SO skeptical about expiration dates. I never want to risk it! (Although right before seeing this post I seriously DID just check the expiration date of tofu, since I’m going out of town and didn’t know if I needed to use it up. I had no idea tofu lasts so long! haha I guess it makes sense…)

    Also, I ate the recalled chobani and lived to tell the tale so…

    i seriously haven’t had tofu in forever, but for one of my breakfasts i really want to try your smoked tofu pb, i think that’s what you had, right? anyways i haven’t gotten it out of my head and i think i’ll need to try this too if you say it’s so good!? πŸ™‚

  7. I’ll eat things like crackers and cereal if they’re past the expiry date, but I’m really wary when it comes to meat, dairy, etc. I’ve had some bad experiences with drinking expired milk… ugh.

      Oh god! Drinking spoiled milk is definitely a bit scarring…I pay more attention to meats, but cheese and dairy, especially Greek yogurt? I just use my sniffer! πŸ˜‰ I actually have some yogurt in the fridge now that went out in early September! Haha!

  8. I love kabocha cold, it’s usually always my afternoon snack at work. I watch expiration dates on meat, dairy and stuff but don’t ever bother to look at them on boxed or canned items.

I’m really in dire need of breakfast options. dairy is out. eggs are out. i’m so so so so so so sick of the only cereal I can eat (enjoy life’s flax / chia cereal). or maybe sub out another fruit? i could make this work (probably only for a week since it’s soy, but hey, it’s different than chia cereal every day!) …

      Oh yeah! The banana really just acts as a way to sweeten it…to get more of a porridge-y texture, you might want to go with firm tofu as opposed to silken though! πŸ™‚

  10. cold kabocha = the way to go. Actually, cold squash in general = the best way to go about it. I love it!

    Intrigued by the idea of putting tofu in an oatmeal bowl, but you do know your strange but good so I imagine it’s awesome!

    Expiry dates are just a suggestion, in my mind :-p

  13. So … These expiration dates you’re talking about … what exactly are they? It’s safe to say I don’t really care about them. Just like your example shows it’s more exp[er]i[men]tation [I’ll sub the ‘r’ for a ‘t’ and you won’t mind, right?] dates. You just made me feel SO much better with the date on that tofu ;). Not like we were going to talk about the secrets hidden in my fridge right now …
    Actually, I’m no stranger to tofu pudding – makes me think of vegan french toast! – but I hadn’t thought about microwaving it yet. That’s a great idea for the cold season. Hmm. I wonder about the expiration dates of the silken tofu in my fridge …

      And yeah, that’s exactly what happened with this tofu…I bought it (for SOME reason) and then TOOOOOOOTALLY forgot about it! I ended up finding it stuffed in the back of the cheese draw last week…sneaky little devil hanging with the wrong crowd! I swear I sniffed it for a good five minutes before I dared have a taste! Lol

  14. Use-everything-in-the-fridge weeks are the best! I’d eat this – cold from 2012. Those dates are just guidelines anyway. If it smells ok, I eat it. #thatswhatshesaid

    I’m sooo crazy about expiration dates, haha. I’ve eating things that were “bad” quite a few times over the years and now I’m paranoid. I’m sure I throw out a lot of good food because of that though!

    Ever since I found out I had PCOS I have shied away from Tofu. When this first appeared in my email the photo looked like oats! It looks so yummy I might have to make this as a treat. I believe everything is ok in moderation and certainly a little soy can’t hurt me. I mean – look at that!

      I try to limit the amount of soy I take in since there always seems to be so much controversy around it. But I have to admit, this bowl was so good, I had it three times in one week! Lol

  19. I’m pretty lenient with expiration dates, but there are certain things that I definitely pay attention to — tofu, meat, and beans being some of those things. I have a serious fear of throwing up, and even the slightest nausea can send me into a full blown anxiety attack. Totally irrational, but there you have it πŸ˜•

    That being said… I’m glad you lived to tell the tale. The world would be a darker place without your mad rhyming and pancake flipping skills πŸ˜‰

  22. Oh shiz! That shit bowl sounds like, the shit! I need to do this. I scored a carton off egg whites for .40 frackin cents the other day b/c it was “use by” like 4 days away. Puh-lease. I made some protein bread and used it all in a day and half.

  26. One of my favourite breakfasts is an entire pack of tofu (don’t judge me…) whipped up with a little stevia and sometimes cocoa powder or carob topped with a huge necterine. YUM. And nut butter, of course. Can’t get enough.
    As for expiration dates..well, let’s just say that some of those boxes of tofu were supposedly well past their prime. I’m still kicking.
    Kabocha in any manifestation is wonderful. I haven’t found it here in Taiwan yet, but I”m looking!!

Lol! So crazy you are THAT close to Japan and haven’t found kabocha yet! Hope you get your hands on some soon…I bet it tastes even better when you can get it that much fresher!
