And well, I guess you can see where I’m going with this…I confess, it’s also a little #strangebutgood…but I promise you can barely even taste it! Especially since the texture of this cake is somewhere between angel food and CHEESECAKE!

Wait, did I mention that it’s gorgeous??Β Because IT IS GORGEOUS!

And that topping? That is a thing of brilliance right there, if I do say so myself! Vanilla Greek yogurt…cream cheese…almond milk…and even if you don’t have my prized cream cheese bakery emulsion (TJ Maxx score, but I have seen it at Wal-Mart too!) you’ll still want to slather that stuff all over every surface that’s appropriate to lick.

But hey, it’s Valentines Day…I’m not looking! πŸ˜‰

Red Velvet Mugcake

Prep Time: 3 minutes

Cook Time: 2-3 minutes

Ingredients (Serve 1)

    For the Cake

    • 2 Tablespoons coconut flour
    • 1 Tablespoon unsweetened cocoa powder
    • 1/4 teaspoon baking powder
    • 1/4 cup unsweetened almond milk
    • 1 large egg
    • 1/4 cup finely diced cooked beet (steamed or roasted)
    • 1/4 teaspoon butter extract
    • 5-7 drops NuNaturals chocolate (or vanilla) stevia*Use coupon code QQQ940Β at iherb.com for 5-10% off your first order!

    For the Icing

    • 2 Tablespoons vanilla-flavored Greek yogurt
    • 1 Tablespoon low-fat cream cheese
    • 1-2 teaspoons unsweetened almond milk
    • 1/8 teaspoon cheesecake emulsion/flavoring (optional)
    • Dark chocolate shavings/pieces/chips for topping

    Instructions

    1. Combine all ingredients for the cake in a small bowl and stir well.
    2. Transfer to a large mug or ramekin that has been coated with non-stick spray or coconut oil.
    3. Place in microwave and heat for 2-3 minutes.
    4. Meanwhile, prepare icing by stirring all ingredients with a small whisk or fork until smooth.
    5. Transfer cake to a plate, drizzle on icing, and sprinkle with chocolate shavings.

    1. When I first read this I thought it said Red Velvet mugshot and I was so confused- haha apparently I need another cup of coffee. This looks great and we finally purchased a microwave so I can try all of the mugCAKES I want!

    2. I’m in love with everything about this, except the beets! I sort of hate them with a passion. Can they be substituted for anything? I think I’ll have to try it regardless though! πŸ™‚

        Thank you, Emma! The beets only lend a small amount of flavor to the cake…mainly, I just use them for color purposes, but I’m sure you could use something like grated carrot if you’re looking for a sub! πŸ˜‰

      Wow you really BEET the competition for strange but good recipes… Hehe so puny. I have to admit beets are one of those things that really freak me out because I am really clumsy and I swear every time I try and use a beet my fingers, t-shirt and everything surrounding me gets stained. This recipe is tempting me to sacrifice those things however…

    8. Ummmm yes. I added beets to my Vday recipe, too! They are a great hidden veg. I was actually contemplating adding the leftover ones to my mug cake last night but I didn’t feel like figuring out ratios, ahah. You cleared that up for me! happy Vday lady!

    10. The only thing I may leave out is the beetroot which I know you probably can’t taste and would defeat the purpose of it being a ‘red’ velvet cake but I really don’t like it.

      As I am finishing off beets now, I am kicking myself for not starting with this post. I HAVE ALL THOSE INGREDIENTS (except for the icing) on hand!!! ARGH! I was complaining how I’m a fail at roasting beets because I wasn’t a fan but in a mugcake…ARGH.

    16. I’m always so amazed to see red velvet cake recipes with beets as the color source. You are impressive. No beets at home now, but we have everything else. This looks so decadent….
