So what goes well with citrus?

Lip Smackin’ Vegan Mac

The other day, I had a craving for cheese.

But not just any cheese.

I wanted warm…creamy…cuddle-up-with-my-blankie-and-take-a-nap-after-dinner, the one TRUE comfort food…

MAC ‘N CHEESE!

I blame THIS girl.

So I opened the fridge, peered in the designated cheese drawer and discovered to my horror…

NO CHEESE!?!

Ok, ok…so there WAS cheese…I’m never a girl to be without, BUT I wasn’t really feeling macaroni mixed with cranberry goat cheese…

Lip Smackin' Vegan Mac - 1

But I didn’t let that stop me! 😉

Because you wanna know what also takes up residence in the “cheese drawer”?

TOFU!

Which I’m sure is against some sort of vegan code of refrigerator ethics, but I digress…

Lip Smackin' Vegan Mac - 2

Instantly, I started singing…*

“Heather’s gonna GET some vegan mac”

“Heather’s gonna GET some vegan mac!”

*Complete with a Carlton-esque dance WITH the package of tofu IN the middle of the kitchen.

Lip Smackin' Vegan Mac - 4

But as I sashayed around the kitchen door, I just happened to spy some leftover pumpkin puree…and that just happened to be sitting next to my jar of sunflower seed butter.

Hmm…

Best.decision.ever!

I Would Never, Unless…

I would never go to the store and walk out with more than I intended on.

DSC_0002

Unless I was on a mission for a NYE outfit and armed with a couple of gift cards.

I would never be able to pull off any of the boots that are in style these days.

DSC_0031

Unless the perfect amount of material is designed in such a way to mask the fact that I have chicken legs.

I would never in my LIFE own a pair of jeggings.

Jeans

Unless they just happen on sale for $15 and look rocking with the afore-mentioned boots.

I would never buy something just because it’s sparkly.

Ha! Who am I kidding?

Must.have.all.the.sequins!!!

I would never take multiple pictures of myself in one the night…especially in the restroom of a nice restaurant.

NYE 2012

Unless I just happen to feel like a princess/rock star in my banging new outfit!

I would never choose chocolate over wine.

Unless that chocolate was in the form of a rich and smooth stout.

I would never place a random picture in a post that didn’t really fit.

Unless I just wanted to brag about how the man-friend made me my first meal of 2013 while I sat on the couch and channel-surfed. 😉

I would never be one of those people who refuses to take down their Christmas decorations weeks after the holiday has passed.

Christmas

Unless I’ve convinced myself that since it only went up two weeks ago, that I have at LEAST two more weeks of celebrating left to do!

I would never DREAM of touching another cookie after the mayhem that went down over Christmas.

Unless it was that time of the month and that cookie happened to look like this!

I would never make a smoothie just to justify my new obsession with kiddie cereal.
