Snickerdoodle Protein Pancakes

Oh yeah, I did it again…

It seemed to me that last week’s oatmeal raisin panCOOKIES simply had too much fun and well, with a few of you guys mentioning a love for the cinnamon-sugar classic,
I just couldn’t resist!

And let’s face it, we food bloggers DO have a thing for cinnamon, don’t we?

So…who wants a cookie? 😉

Snickerdoodle Protein Pancakes

Ingredients (Serves 1)

For Cinnamon Syrup

  • 1/8 cup maple syrup
  • 1/4 teaspoon cinnamon

For the Pancakes

  • 1/3 cup rolled oats, ground into flour
  • 2 Tablespoons coconut flour*
  • 1 scoop (30g) vanilla protein powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon sodium-free baking powder
  • 1 egg white
  • 1/2 cup unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon butter extract (optional, but recommended)
  • Note: Can sub coconut flour with the same amount of ground flax. Just decrease the amount of milk to 1/4 cup. The texture will be a bit different (not as soft/moist) but still tasty!

Instructions

For Cinnamon Syrup

Whisk together syrup and cinnamon in a small bowl until all of the cinnamon is incorporated.

For the Pancakes

1. Preheat a skillet or griddle to medium heat and coat with cooking spray.
2. Combine flours, protein powder, cinnamon, and baking powder.
3. In a separate bowl, whisk egg white until frothy.
4. Add milk and extracts to egg, stir.
5. Add wet ingredients to dry ingredients and stir well.
6. Spoon batter onto hot skillet, forming 4 small-medium sized pancakes.
7. Cook 5-6 minutes per side or until golden brown.
8. Transfer to plate and top with butter and cinnamon syrup.

Nutrition facts for pancakes only*:

*The protein powder that I use is 110 calories with 25g of protein per 30g scoop.

Like I mentioned in the recipe,  ground flax can be used instead of the coconut flour. Just be sure to decrease the amount of milk you use to 1/4 cup.

BUT if you CAN get your hands on some coconut flour,
it makes a HUGE difference!

A soft, fluffy, and incredibly moi-…yeah, that kind of difference! 😉

Pyramid-O-Protein…Ice Cream!

Happy Friday my little half pints!

Well, I finally managed to get my bag packed last night this morning and I’m just about ready to head out the door to meet up with Allie for our trip to Atlanta, but before I go…

I have something special for you guys!

About a month ago, I contacted Arctic Zero about doing a review of their “ice cream” for the blog. If you’ve never heard of Arctic Zero, you are surely missing out. Their trademark phrase in advertising says it all:

“A protein shake in ice cream form”

It is most definitely NOT ice cream, but for those of you who are, like me, a little lactose challenged and/or looking for a sweet treat that won’t weigh you down, Arctic Zero has the solution:

A WHOLE pint of “ice cream” with 14 grams of protein, 8 grams of fiber and ONLY 150 calories!

Behold, my pyramid-o-protein…ICE CREAM! 😀

Before their arrival, I had tried every flavor except for the chocolate peanut butter, chocolate, and pumpkin spice. Since I usually only “treat” myself to a pint every so often, I was super excited to have all the flavors at hand so that I could hold an official
“quality testing” event! 😉

So without further adieu, here are the results of my “testing”:

CHOCOLATE
Out of the bunch, I thought this one had the least flavor to it. It tasted muted and a bit watered down. I know I’m not really a fan of chocolate, but I also know the difference between GOOD chocolate and “healthified” chocolate.

CHOCOLATE PEANUT BUTTER
Same thing goes for “healthified” peanut butter flavor. It had only the slightest hint of peanut butter taste along with that same watered down chocolate flavor. A step up from the plain chocolate, but I’d rather just have the real deal when it comes to my precious peanut butter.

PUMPKIN SPICE
Obviously, I had high expectations for this one. As long as you keep in mind that it is called pumpkin “spice” and NOT pumpkin “pie”, it’s pretty tasty with it’s hints of cinnamon and nutmeg. Unfortunately, I couldn’t get the thought of creamy silky pumpkin pie out of my head so I was a little disappointed at first, but it grew on me.

VANILLA MAPLE
This one has always been a favorite of mine. In fact, it was the very FIRST flavor of Arctic Zero that I ever tried. It has just the right amount of sweetness and the hint of maple really makes it. All the other flavors I tend to enjoy by themselves, but I love pairing this one with some crunchy granola!

STRAWBERRY
I had heard a lot of people say the strawberry tasted bad, so I was a bit leery to try it at first, but I ended up loving it! To me, it tastes like a cross between ice cream and sorbet. It has little strawberry seeds throughout and a very fresh taste but still has a hint of creaminess.

 MINT CHOCOLATE COOKIE
Out of the three chocolate flavors, this one is my favorite! Honestly, it is more minty than chocolate-y (perhaps that’s why I like it) but I love how the taste of the mint isn’t too strong.

COOKIES & CREAM
Once I got over my alarm from the gray color, I fell in LOVE with this one! The chocolate-y creamy combo is so surprisingly perfect…makes you wonder how they do it without any actual cookies (mmm, cookies…)

COFFEE
Last, but CERTAINLY not least…my favorite one! Are you surprised? The coffee flavor is perfect and it doesn’t have that weird aftertaste that sometimes comes with coffee-flavored treats. Now all I need to do is plop a spoonful on top of some
Tiramisu Protein Pancakes and I’m set! 😀
