Orange Creamsicle Protein Pancakes

There were PANCAKES!!

Doughy stacks pancakes layered with a cool pillow of “orange creamsicle” filling and warm sweet grilled orange slices…

How’s that for tantalizing your tastebuds? 

You guys have GOT to try these!

Orange Creamsicle Protein Pancakes

Prep Time: 15 minutes

Cook Time: 10-15 minutes

Ingredients (Serves 1)

For the Pancakes:

  • 1/4 cup whole wheat pastry flour
  • 1 scoop vanilla protein powder (mine was approx. 1/3 cup)
  • 1 tablespoon coconut flour (or a bit more protein powder)
  • 1/2 teaspoon baking powder
  • 1 egg white
  • 1/2 cup milk
  • 1/2 teaspoon orange zest
  • 5-7 drops NuNaturals Orange Stevia (or orange extract or more orange zest)

For the Creamsicle Topping:

  • 1/4 cup plain Greek yogurt (can use low-fat or fat-free)
  • 1 tablespoon coconut flour
  • 3-5 drops NuNaturals Orange Stevia (or orange extract or more orange zest)
  • 1/2 orange cut into 1/2 inch rounds (optional)
  • Orange marmalade, thinned with water (optional)

Instructions

For the Pancakes:

  • Preheat a non-stick skillet or griddle to medium heat.
  • Add egg white to blender and allow to blend for 2-3 minutes or until white and foamy.
  • Meanwhile, in a bowl, combine flours, protein powder, and baking powder.
  • In a separate bowl, combine milk, orange zest, stevia, and egg white.
  • Transfer wet ingredients to dry ingredients and carefully stir until all the flour is incorporated (careful not to overstir).
  • Pour batter onto skillet/griddle (mine made three medium-sized cakes) and allow to cook 5-7 minutes per side or until golden brown (batter will not bubble).

For the Orange Creamsicle Topping:

  • Whisk together Greek yogurt, coconut flour, and stevia in a bowl.
  • Slice rinds off of orange rounds, add to skillet, and cook about 30 seconds on each side.
  • Layer yogurt and orange slices on top of each pancake and drizzle with thinned marmalade.

You could always use your favorite pancake syrup and forego the “orange creamsicle” topping, but c’mon, would you really wanna miss out on this?

Sushi Eating Zombies & Chuck Norris

T….G…I…F!

Even though my weekend technically started yesterday, I couldn’t be more excited for today…because now YOU guys get to join me!

The night shift has been…well, the night shift. Let’s just say that as soon as I think I have the hang of the whole sleeping/awake/zombie thing, I get a friendly reminder…

And that “friendly” reminder is usually me hitting a brick wall!

To say this week has been interesting would be a bit of an understatement…

I can’t make this stuff up people! Lol!

I have to say, the cliental is a bit more entertaining after the sun goes down! 😉

Yesterday, I woke up at about 3:30pm and met up with my mom, my sister and her boyfriend to celebrate Tori’s TWENTIETH birthday…
Still not sure where all the time has gone. I swear she’ll always be the little snaggle-toothed 10 year old I left once I moved out of the house!

Ugh, now I feel old!

Anywho! We met up at Hananoki (no surprise there since we all LOVE it!) and while everyone else ordered Hibachi grill entrees, since this was technically my breakfast (remember, I JUST woke up), I kept it a bit lighter and ordered from the appetizer menu.

Pork shumai and seaweed salad!

This was my first experience with the steamed pork dumplings and I’ll definitely be getting them again! The wonton wrappers they were in were soaked wasabi and were perrrrrrrfect!

Unlike my last experience with wasabi! 😉

Tori and I also split a rainbow roll…California roll topped with sashimi!

Topped with a bit of wasabi and some ginger!

Somehow, Tori weaseled her way into getting FIVE out of the eight rolls, but I had to forgive her…

Especially after she posed for this picture like three times! Lol

Oh and it looks like TODAY is somebody’s “birthday” too…or at least it will feel like it! There was a sudden change of plans the other day so unfortunately BB won’t be able to come home for another week,

Peaches ‘n Cream

I could never pick just ONE
favorite when it comes to fresh summer fruit,

But I have to say peaches are pretty high up on my list!

And when combined them with a creamy mix of almond infused overnight oats, a sprinkle of cinnamon, and some candied nuts?

Well that just makes me wanna sing!

Wait a minute, they’re not talking about breakfast are they?

Well, they just don’t EVEN KNOW what they’re missing! 😉

So why don’t you get out some oats and yogurt, throw a few chia seeds around, and dance with your blender?…or you could just make this parfait….

Singing is optional, but highly recommended!

Peaches ‘n Cream Parfait

Prep Time: 15 minutes

Cook Time: N/A

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 6oz container plain Greek yogurt
  • 1/2 cup milk
  • 1 tablespoon chia seeds
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon cinnamon
  • 4-5 drops liquid stevia (optional)
  • 1 large peach

Instructions

1. Combine all ingredients (except peach) in a bowl, stir together, and refrigerate overnight.
2. In the morning, remove oat mixture from refrigerator.
3. Dice peach into 1/2-1 inch pieces (reserving half for parfait), add to blender and puree until smooth.
4. In a glass, layer oat mixture, peach puree, and peaches until full.
5. Top with peaches and other desired toppings (I chose these candied peanuts still leftover from my Blend swag!)
