WIAW: The Graveyard Edition

Hey boos!

Hope you are all having a good week! Thank you guys for your caring comments regarding my car accident last night. I’m pretty sore today, but not sore enough to keep me from going to work…

I’m on night shifts until Thanksgiving…because I happen to be the best tech in the world and volunteered to cover while the regular night shift tech goes on vacation…and ok, maybe I like the boost in pay too! 😉

So this week’s edition will give you guys a little peek into what I eat while I’m fighting off zombies working the graves:

This morning, er…this afternoon (2pm) started with my multis and a swig from the almond milk carton.

Hey, don’t tell me you’ve never done it!

Then I sipped on a mug of 1/3 caff coffee while trying to decide what to make for breakfast

Since I couldn’t get Sunday’s pancakes out of my mind, I figured what the heck…I had the time!

Apple Cinnamon Pancakes layered with Greek yogurt, pumpkin butter, and walnuts!

Mmmm! Hit the spot!

Before I jetted off to work, I FINALLY got around to making Jenn’s hash brown breakfast sandwich with jalapeno ranch…only in wrap form along with the other half of my apple leftover from breakfast.

Seriously folks, she wasn’t lying…that sauce is DELICIOUS!

There may or may not have been another mug of coffee involved 😉

Snacktime came around midnight:

It was time for some carrots and…

KETTLECORN!

Mmm, LOVE the sweet taste of kettlecorn!

Around 3am, I started getting hungry for breakfast dinner:

So I added some hot water to my bowl of oats/vanilla protein/cinnamon/cranberries and drizzled it with coconut peanut butter!

Yes, I did in fact eat breakfast THREE times on this day…but if there’s one thing I’ve discovered since working on this shift, it’s that you HAVE to just give your body what it wants…you’re already messing up your internal clock, might as well treat yourself to a little comfort food…and my comfort food happens to be breakfast!

Like you guys didn’t already know that! 😉

Along with my eats for the day, MUCH water and warm decaf green tea (which I like to pretend is caffeinated) was consumed…especially around 4am when the temperature in the hospital always seems to drop about 20 degrees!

Ouch!

Does anyone happen to have a bandaid?

Like a really REALLY big one?

Or maybe just a can of red spray paint…

Because obviously, my girl Vickie has a target on her!

Remember this?

Exactly 7 months and 7 days ago Vickie was assaulted by a Chevy Silverado.

Tonight, she had an encounter with a Jeep Grand Cherokee.

I swear I’m not a horrible driver. Before this year, my last accident was like 5 years ago!

Besides some minor bruising from the seatbelt and a bit of a stiff back, I’m ok. And Vickie is still drivable, but if you notice in the last picture from tonight, the back door is stuck open…so hopefully I can get her to the doctor body shop soon and get her bandaged up!

I was lucky. It could’ve been worse. And I’m so grateful to have had some of the best responders in Clarksville come to my aide.

Perfect Apple Cinnamon Pancakes

Hey guys!

I hope you are all enjoying the last bit of your weekend. Am I the only one who totally forgot about Daylight Savings Time last night? I woke up this morning and was SO confused, but it was nice once I realized that I had a whole extra hour!

And I have to say I used that time very, VERY well!

Apple Cinnamon Yogurt PancakesRemember my first ever pancake fail?

Eh, well, it WAS like FOUR months ago, so I don’t blame you if you’ve forgotten.

I vowed to not let the apple beat me…I was determined to find a balance that made for a good pancake rather than applesauce with a crust! 😉

Well, it took a few tries, but I’m telling you folks, this one’s a winner!

In fact, I just made more for dinner.

And yes, I’m a poet and don’t know it! Watch out Dr. Seuss! 😉

Perfect Apple Cinnamon Pancakes

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1-2)

  • 1/3 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 medium banana, mashed
  • 1/4 cup plain Greek yogurt (I used Chobani 0%)
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 1/2 a small-medium sized apple, finely diced

Instructions

1. Heat a non-stick skillet to low-medium heat* and coat with cooking spray.
2. In a medium sized bowl, combine all of your dry ingredients and stir with a wire whisk to mix evenly.
3. In a separate bowl, add mashed banana, yogurt, extract, and water. Whisk well to blend the banana into the other ingredients.
4. Add wet ingredients to dry ingredients and stir just until combined.
5. Fold in diced apple.
6. Pour batter into greased skillet (mine made 3 good-sized pancakes) and cook for approximately 5-7 minutes then flip and cook for 3-4 minutes more.*
7. Top with chopped walnuts and maple syrup.

*The lower cooking temperature prevents the banana from turning the cakes into something that looks like it’s been run over with a tractor…trust me, low and slow…your patience will be rewarded! 😉

Apple Dice

This is about how big you want your apple pieces to be. Mine was probably about 1/2 a cup’s worth.

Apple Cinnamon Yogurt Pancakes 2 A light drizzle of syrup was really all it needed. The banana did a great job of holding in the moisture in these cakes.

Oh, and for dinner I found these went excellent with a dollop of pumpkin butter…just FYI!
