Tonight, she had an encounter with a Jeep Grand Cherokee.
I swear I’m not a horrible driver. Before this year, my last accident was like 5 years ago!
Besides some minor bruising from the seatbelt and a bit of a stiff back, I’m ok. And Vickie is still drivable, but if you notice in the last picture from tonight, the back door is stuck open…so hopefully I can get her to the doctor body shop soon and get her bandaged up!
I was lucky. It could’ve been worse. And I’m so grateful to have had some of the best responders in Clarksville come to my aide.

I hope you are all enjoying the last bit of your weekend. Am I the only one who totally forgot about Daylight Savings Time last night? I woke up this morning and was SO confused, but it was nice once I realized that I had a whole extra hour!
And I have to say I used that time very, VERY well!
Eh, well, it WAS like FOUR months ago, so I don’t blame you if you’ve forgotten.
I vowed to not let the apple beat me…I was determined to find a balance that made for a good pancake rather than applesauce with a crust! π
Well, it took a few tries, but I’m telling you folks, this one’s a winner!
In fact, I just made more for dinner.
And yes, I’m a poet and don’t know it! Watch out Dr. Seuss! π
Perfect Apple Cinnamon Pancakes

Prep Time: 10 minutes
Cook Time: 10-12 minutes

Ingredients (Serves 1-2)
1/3 cup whole wheat pastry flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 medium banana, mashed
1/4 cup plain Greek yogurt (I used Chobani 0%)
1 teaspoon vanilla extract
1/4 cup water
1/2 a small-medium sized apple, finely diced
Instructions
1. Heat a non-stick skillet to low-medium heat* and coat with cooking spray.
2. In a medium sized bowl, combine all of your dry ingredients and stir with a wire whisk to mix evenly.
3. In a separate bowl, add mashed banana, yogurt, extract, and water. Whisk well to blend the banana into the other ingredients.
4. Add wet ingredients to dry ingredients and stir just until combined.
5. Fold in diced apple.
6. Pour batter into greased skillet (mine made 3 good-sized pancakes) and cook for approximately 5-7 minutes then flip and cook for 3-4 minutes more.*
7. Top with chopped walnuts and maple syrup.
*The lower cooking temperature prevents the banana from turning the cakes into something that looks like it’s been run over with a tractor…trust me, low and slow…your patience will be rewarded! π
I hope you all had a great day! I had the day off yesterday and today in order to gear up for the next 3 weeks of night shifts that I’ve got coming up on Sunday night and I have to say, it’s been a great…and much needed.

Oh, and speaking of workouts, I went to BodyPump for the first time in about a month yesterday and it was AWESOME…so awesome in fact that I woke up this morning unable to raise my arms! Haha!
I wanted to get in some kind of workout today, but I’m holding out for some sunshine for an outdoor run tomorrow morning (fingers crossed the weatherman is on my side) so I headed to the gym this afternoon for a little cardio mix!
30 minutes on the arc trainer and 30 minutes on the bike.
I was POOPED after the 8 miles on the bike…but I forgot all about that once I got home and made some lunch…
C’mon, how can you not smile at that?!
I promise this wasn’t on purpose…I plopped two fried eggs on top of a plate of spaghetti squash (this was actually my dinner last night…told you I was obsessed) and couldn’t help but notice the eyes and nose…
I named him Steve.
And then I ate him! Muhaha!
Before my evil little shenanigans (that word always makes me think of the movie Super Troopers), I did a little shopping and if you can believe it, I did NOT buy anything food-related…I know, total shocker!
I kid you not, I originally bought this jacket at Dick’s thinking I was getting a pretty good deal…$35 marked down from $50.
But then…
I spotted the SAME jacket at TJ Maxx for $25!
You better believe the first one went back to the store! π
