What I Ate Wednesday: The Early Edition

 

What’s up everybody? I hope you are all having a great week! I decided instead of doing a regular Tuesday post, I would jump into the WIAW link up party a few hours early! Plus, I just finished dinner and it was so good, I couldn’t wait to share!

Pre-Run Snack (5:00am)
Date on the go-go!

Oh yeah, you read that right! 5 A to the M baby!

And I had one of the nicest runs in a while! Who knew the secret to dodging Tennessee humidity was getting up before the sun??

Post Run Chow Time aka Breakfast (7:45am)
Peanut Butter Carob Chip Pancakes

Suuuuuuper simple “recipe”: 2 tablespoons peanut flour, 1 tablespoon wheat germ,
and a teaspoon of vanilla added to a just-add-water pancake mix.

Topped with powdered sugar and carob chips

And, to balance out my kiddie breakfast (’cause you KNOW I also had my gummis)…

Some grown up style crack “juice” in a mug that I pilfered from my parent’s house last weekend!

Lunch (12:45pm)
2 slices whole wheat bread, hummus, spinach, baby heirloom tomatoes, and cucs

and a big JUICY peach!

We were CrAzY busy at the hospital again today…there must be something in the air…quick! Everyone quit breathing!

My breakfast was good, and it held me over until just before noon, but by the time I actually got lunch, I was about to gnaw my own arm off! That sandwich lasted all of about 5 minutes!

Snack (5:00)
Oh Cashew Cookie bar, it has been too long!

And for dinner?

Gi-freakin-normous potato from the farmer’s market

(don’t hate on his size folks…he’s a big dreamer!)

Dinner (8:00)
Broiled portabello topped with sauteed onions and yellow squash (in olive oil/balsamic vinegar) and topped with fresh tomato,

1/2 mutant potato with nooch and ketchup,

and

Sweet Yogurt Broccoli Slaw
(recipe coming soon)

Camelbak Liter x 3!

So there really should be some sort of celebration…this was my first non-breakfasty (that’s totally a word by the way) dinner in over two weeks! Luckily it was delicious enough that I didn’t even miss my cereal, oats, or French toast!

  3. I miss dates! I ran out a while ago and have yet to stock up :[ $11.50/lb for the organic ones at the co-op is just not going to happen anytime soon!

    i think we switched appetites because I’ve been on a breakfast for dinner kick and thats not normal for us. But still heavenly! I love the little tomato, well done green thumb Heather!

  8. Now those are some good eats! I was up at 5AM to pick blackberries yesterday. Crazy and delicious. The things I do for some good eats! I love my potatoes covered in nooch and ketchup! That’s been a standard here lately too. I’m totally doing that to my portabello mushrooms today. I picked up two yesterday at the store and I have all the veggies from the garden to fill it up! Looks great Heather!

      I thought of you when I was trying to decide what to top my potato with! Nooch and ketchup is so good together! Ohhh, I’m jealous of your blackberries! My parent’s have bushes surrounding all of their property, but I haven’t seen any so far. I might just have to go this weekend and see if I can “pilfer” some berries too! Broiled portabellos are the best!

  9. VA also gets really hot and humid so I have to roll out of bed early, or go late at night! I usually go later in the day haha.

    Those pancakes look like heaven on earth! I too had some spuds in my WIAW… the cousin of your ginormous tater showed up in my kitchen as cousin sweet tater. And that lunch looks just like the sammy I ordered while eating out the other day!!! It was SO good and I had never tried that kind of sandwich before. I guess I was out of the loop, but thankfully I have now seen the light πŸ˜‰

    that is a beautiful hummus/veggie sandwich! simple but so fresh. I haven’t had one in forever–that needs to change! And cashew cookie is one of top five larabars.

    Ugh, I keep trying to beat the TN humidity as well, but am not quite dedicated enough to get up and going at 5am…I guess I’ll stick to the Y with it’s A/C. And woah, potato!

    So jealous of your homegrown tomato. And pretty much everything else you ate today, err… yesterday? I ate too many good things yesterday to pick a favorite, but favorite summer fruits? Peaches are by far my favorite, but strawberries, cherries, pineapple and watermelon are all up there!

  17. You keep rocking those early workouts. I’ve had to change up my workout time with my new work schedule, and I must say, earlier sometimes IS better. Greet the day, right? [Or at least sneak in some old school sitcom reruns while on the elliptical in my case.]

  18. I remember when my mom used to have a garden and we’d have homegrown tomatoes. They were so good and I miss them. I’d grow my own, but I kill plants so it’s probably not the best idea. Send me some of yours? πŸ˜€

    And summer fruits I’m loving right now are cantaloupe, blueberries, watermelon, and peaches.

    because I trust your taste more than anyone, I have to ask – what brand of pancake mix do you use?! Although I’m all about homemade pancakes, some times the store bought kind are just so much better.

    favorite summer fruits = berries! though they’re my favorite fruits, year round. They’re just so much cheaper and delicious right πŸ™‚

    I’m sort of shocked to realize this- but I’ve never made peanut butter pancakes before. I think it is time! Yummy foods, I love the powdered sugar sprinkled on your pancakes too!

  22. Yeah for WIAW!! I feel like I ate a lot on my day πŸ˜‰

    I overslept this morning and didn’t get to my run until after the sun had come up. It was already hot and muggy at 7:30am! So you are right, the trick to beating the heat is to wake up at the booty crack of dawn. *sigh

    My favorite eat of the day so far has been my leftover chorizo and veggie pasta bake w/ goat cheese and tomaters from my farm! Yum yum.

  23. The best thing I ate today was an oriental cole slaw with chicken! My summer fruits are watermelon and strawberries πŸ™‚

  24. Those are all my favorite summer fruits too πŸ™‚ I so admire your early morning motivation! I just cannot get my butt out of bed before 7 these days. I used to be able to wake up early to work out, but now I’ve been waiting to go running until after work. It gets hot here, but never humid thankfully!

    Hmmm – best thing I ate today were bananas and strawberries in yogurt – holy yum!

    I’ve still never tried a date and I see them all over the health living blogs. They look kinda creepy to me so I’ve been hesitating buying any. Haha! I’ll have to ignore my fear and just try one this weekend.

      They do look a little odd, but they are DEEEEElicious! Think raisin only bigger, chewy-er, and sweeter! You’ll love it!

    nectarines are usually my favorite summer fruit, but the strawberries today were perfect!

  35. I wake up at 5 to fit in my workout before work! People are always shocked when they hear I do this most days of the week but after awhile it becomes habit and there’s NOTHING better than starting your day with an awesome workout! πŸ™‚
