Victory Pancakes

Good afternoon lovelies!

I hope you Β are all enjoying your weekend so far. The weather here in Tennessee was FANTASTIC yesterday and it looks like we’re gonna have another gorgeous day today! We had quite the storm roll in late last night, but I think it was just what we needed to level out the humidity. Low humidity in the South…now THAT’S an oxymoron!

I laid low and had a good “chill” day yesterday because I decided on my last run (Friday) that I was gonna set a new goal…

10 miles for Sunday!

Eh, sometimes a girl just has to have something to shoot for.

And guess what…

I did it!!

Garmin 10 MilerIn an hour and a half!

I was afraid I made a mistake when I didn’t end up getting out there until around 7:30am, but the weather was absolutely PERFECT…65-70 degrees, sun behind the clouds, light breeze in the air…plus, I discovered a new station to run to on Pandora:

The perfect blend of singing and screaming to push me those extra miles! πŸ˜‰

After my run, I downed a protein shake (a blend of this and thisΒ given to me by a friend which now I’m thinking about buying)Β on my way back to the casa and started day dreaming of won one thing…

Victory Pancakes!

Since my French toast breakfast earlier this week, I have NOT been able to get the combo of peach and coconut out of my head, so I knew exactly where I wanted to go with this Pancake Sunday’s recipe.

Obviously, I was in some sort of recipe-creating daze because as I started throwing ingredients into a bowl, I suddenly realized I was out of milk. Luckily, I opened the fridge and found a good stand in:

Peach Chobani

And what a coincidence…my Chobani just happens to be PEACH flavored! πŸ˜‰

Cook Time: 8-10 minutes

Ingredients (Serves 1)

  • 1/3 cup oat flour (rolled oats ground in a food processor)
  • 1 Tablespoon coconut flour (optional)
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. Combine flax and water for your flax egg and allow 2-3 minutes to set.
3. In a medium bowl, whisk together all of the dry ingredients to work out any clumps.
4. In a separate bowl, combine flax egg, vanilla extract, yogurt, and water
5. Add wet ingredients to dry ingredients and stir until flour is incorporated. Spoon batter onto skillet, forming 3 small-medium sized pancakes.
6. Cook for about 4-5 minutes per side or until the edges of the cakes start to turn crisp (batter will not bubble).
7. Plate and layer with freshly diced peaches, unsweetened shredded coconut, and a little coconut cream (coconut flour + milk + sweetener).

Coconut Peach Victory Pancakes

Winner, winner, pancake dinner breakfast!

Hey, no one finished ahead of me, therefore I get a blue ribbon, right? We’ll just pretend that there were actually other people present at the time! πŸ˜‰

Coconut Peach Yogurt PancakesI topped AND layered my cakes with freshly diced peaches, unsweetened shredded coconut, and a little coconut cream.

Coconut Peach Yogurt Pancakes 1Coconut-peachy perfection!

But the REAL magic happened after my plate just happened to “bump into” my bottle of maple syrup!

Coconut-Peach-PancakesCheck out that maple drip hanging over the edge!

Yep, best way to celebrate a new PDR!

Let me know when they start serving up pancakes after races…maybe then I’ll finally sign up for one! πŸ˜‰

What was your last “victory”? How did you celebrate it?
Life is too short not to appreciate the little things…no matter how small, if it makes you well up with pride, do a “happy dance”, or whip up some celebratory pancakes, it deserves recognition!

  2. Congrats on the 10 miles! Those pancakes look like the perfect way to celebrate. I was all about the combination of peach + coconut this summer too!

  3. Alexis says:

Yum. seriously you should win the pancake/french toast queen! Your breakfasts always look like a winning combo πŸ™‚
My last victory was probably getting through a rough week and I celebrated with froyo… two servings πŸ˜‰

What are your favorite running stations on pandora? Or have you already posted this :)?

    • kissmybroccoli says:

I still play around with it a lot, but for the most part I listen to “Today’s Hits” or The Ting Tings when I’m working out. I used to have stations set for Rihanna, Lady Gaga, and Britney Spears, but they all got so repetitive. I thought I was gonna scream during a run once when I heard the same Pussy Cats song for the THIRD time! Since that’s not the kind of music I would listen to if say, I was in the car, I can only take so much sometimes!

If I’m having one of those days though and really just want to go balls to the wall and work off some aggression, I always go with Korn…it’s the only thing that gets me pumped when I’m pissed! Haha!

  5. Evan Thomas says:

I really love Breaking Benjamin. So glad to hear of someone else who does, too!

  6. CONGRATS! I can’t even fathom 10 miles, haha. Those pancakes look fantastic!

  7. peaches are soooo good right now. my victory was GF donuts, but i give all the credit to ashley (edibleperspective). i made the cinnamon cake- UNbelievable!

  8. Jessica says:

Congrats on the ten miles – that is awesome!! Definitely something to be proud of, too πŸ™‚ I’ve been totally failing on the distance-uppage lately πŸ™ Peaches + coconut…sounds lurrrvely!

    • kissmybroccoli says:

Nooooo, no frowny face! Distance-uppage can only go so far anyway…reasonably that is…and since I honestly never see myself running more than maybe a 1/2, it won’t be long before I’m kinda stuck…just in time for winter! Then I’ll lose all my endurance and in the spring it’ll feel like I’ve taken on a new hobby again! lol

  9. Your pancakes always look amazing!

  10. lindsay says:

holy cow woman!! thats awesome!! It must have been the low humidity. You can breathe!!

    • kissmybroccoli says:

For real! I just hope it stays like this for at LEAST a couple of months longer before the nasty winter weather comes barreling in…not too sure if I’ll be able to keep up with my love of running once that happens….I’m such a pansy when it comes to running outside in the cold! Haha!

  11. My last victory was not drooling all over myself and making a big mess while looking at your stack of pancakes. Whaaaaat? I consider that quite an achievement, because these look soooooooo good. I’m not much of a racer, but if you’re cooking the victory pancakes, I might just sign up for one myself πŸ˜‰ Hope you’re having a beautiful Sunday!

  12. Lauren says:

10 miles?! Woo-hoo! I’m doing ten next Saturday, but totally enjoyed my step back 6.2 mile run this weekend. Since when is 6 miles a “shorter” run for me?! Pancakes are definitely in order after a good run. Or on a day off. Whatever πŸ™‚

    • kissmybroccoli says:

I like the way you think girl! ANY time is a good time for pancakes, right? πŸ˜‰

I know what you mean about “scaling back”…I was just thinking today, since when did a 5K become a “short run”? I used to huff and puff after ONE mile! Haha!

  13. Congrats on the run! I would say this was a perfect celebration! Those look amazing!

  14. Great job girl!! 10 miles is def an accomplishment!

You could totally rock the Clarksville Half – its October 8th – I just signed up for it last month. Course looks pretty decent.

Congrats on the first 10 miler! Awesome accomplishment to say the least.

    • kissmybroccoli says:

Thanks Tess! I actually thought about it, but realized that I have a friend’s wedding to go to out of town on the same day. But after doing a bit of online perusing, now I’m trying to talk myself into doing the Nashville 1/2 in November…maybe…possibly…if I don’t chicken out! Haha!
