Whole Wheat Gingerbread Pancakes

So I’m sitting here typing up this post while listening to Christmas music on Pandora radio.

Yes, I am well aware that it is only October.

No I’m not in any hurry to drag out the Christmas decorations…in fact, I have absolutely NO CLUE where I’m even going to put my tree in the new house…but there’s just something about hearing good ol’ Frank tell me that he’ll be home for Christmas that makes me smile.

It also makes me want to bake!

And well, since gingerbread cookies aren’t exactly breakfast fare, I did what any normal person pancake addict would do…


I made gingerbread cookie PANCAKES!

Whole Wheat Gingerbread Pancakes

Prep Time: 5 minutes

Cook Time: 6-8 minutes

Ingredients (Serves 2)*

  • 2/3 cup whole wheat pastry flour
  • 1 teaspoon sodium-free baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/8 teaspoon cloves
  • 1 egg (or 2 egg whites), whisked
  • 1 teaspoon vanilla extract
  • 2 Tablespoons molasses
  • 1 Tablespoon butter, melted
  • 1/2 cup unsweetened almond milk)

Instructions

1. Heat a non-stick skillet over medium heat and coat with cooking spray.
2. In a medium-sized bowl, stir together all the dry ingredients.
3. In a separate bowl, combine the rest of the ingredients and whisk well.
4. Add wet ingredients to dry ingredients and stir just until combined.
5. Pour batter into greased skillet, forming 6 small-medium-sized pancakes.
6. Cook for 4-5 minutes or until edges start to turn crisp.
7. Flip and cook an additional 2-3 minutes until done.

I layered my cookies pancakes with some Greek yogurt that I spiked with vanilla bean extract and a few drops of stevia and dusted the whole plate with a bit of cocoa and powdered sugar


It’s beginning to look taste a lot like Christmas! πŸ˜‰

Do you like listening to Christmas music out of season?
I’m sure I’ll be ready to pull my hair out by the middle of December, but I usually get in the mood a bit early every year.

  1. these are brilliant!!! especially the spiked greek! I am for sure going to try that!!! actually i can do the pancakes with unbleached flour that i have on hand… but i’d sooo rather wait for the WG stuff when i make my grocery trip! =)

  2. ps: is all purpose and pasty flour pretty much the same oooor should i hunt down some of each? teach me your ways! haha

      You would probably be fine using all purpose flour if it’s not whole wheat. Whole wheat pastry flour bakes lighter than regular whole wheat because there is less gluten in it. It makes the difference between serving whole wheat ROCK muffins or whole wheat fluffy muffins! πŸ˜‰

    I haven’t started listening to Christmas music yet. Luckily I get out super early this semester (first week of December), so I’ll have plenty of time to get into the Christmas spirit. I usually start right after Thanksgiving.

    I took Frosty the Snowman out of storage today and added him to my Halloween decor on the patio. Just for kicks. Then I dressed him up and he is now Frosty the Witch Cat.

      One of the doctors and I were talking the other day about possibly pranking another doctor who we work with. We want to buy one of the HUGE blow up Santa Clauses and set it in his front “yard”…he lives in a condo! Bahaha!

    Have you paired pumpkin and gingerbread together (ahem, pumpkin gingerbread pancakes?)? The two go amazingggg together- like PB&J amazing- and better yet, blackstrap molasses is really high in iron and calcium!

    Wow Heather! Looks amazing!! Yes, I’ve been singing Christmas songs…and told Erik recently that I’m feeling festive and want to put out the tree. However, I had standards. The tree goes up the day AFTER Thanksgiving, when our Fall decorations go down. It’s driving me crazy to wait almost a month!! πŸ˜›
