The Ultimate Christmas Combo

My dad and I have to work Christmas day so I’m at my parent’s house this weekend celebrating the holiday. Since this post is set to publish early in the morning, I’m probably about knee-deep in tattered pieces of wrapping paper right about now…

Hopefully Santa brought me some more blogging propsย this year! ๐Ÿ˜‰

Last weekend, as I was conjuring up my next pan-COOKIE creation, I got to thinking about classic Christmas combos andย I don’t know about you, but the FIRST thing that popped into my head was chocolate and peppermint.

And with only a few subtle changes from my Almond Cookie Protein Pancakes, these babies came together in a snap!

Chocolate Peppermint Cookie Pancakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 1 Tablespoon coconut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1 1/2 tablespoon unsweetened cocoa powder (my favorite is Hershey’s Special Dark)
  • 1/4 cup no-salt-added lowfat cottage cheese
  • 2 Tablespoons unsweetened almond milk
  • 1/2 medium ripe banana
  • 2 large egg whites
  • 10 drops NuNaturals peppermint stevia or 1/4 teaspoon peppermint extract + preferred sweetener

Instructions

1. Heat a non-stick skillet to medium heat and coat with cooking spray.
2. Combine oats, coconut flour, and baking powder, and cocoa powder in a blender or small food processor and process oats to a fine powder.
3. Empty contents into medium-sized bowl.
4. Combine cottage cheese, milk, banana, and stevia (or extract + sweetener) in a blender or small food processor and blend until smooth.
5. Add wet ingredients to dry ingredients and stir until flour is incorporated.
6. Spoon batter onto skillet, forming 3-4 pancakes.
7. Cook 5-6 minutes per side.
8. Top with Healthy Chocolate Sauce and candy cane pieces.

  • 1 1/2 Tablespoons unsweetened cocoa powder (my favorite is Hershey’s Special Dark)
  • 1/2 teaspoon sodium-free baking powder
  • 1/2 medium, ripe banana
  • 1/2 cup unsweetened almond milk
  • 10 drops NuNaturals Peppermint Stevia (or 1/4 teaspoon peppermint extract)

  3. Heather those look heavenly! I have to agree with you, chocolate and peppermint scream Christmas! I love the combo all the time but since there’s so much more of it around Christmas I enjoy it a little more during the holidays. I’m actually drinking a homemade peppermint mocha right now!

      Aww, thank you Giselle! Honestly, I always forget how good a combo it is UNTIL the holidays…but I’m thinking I’m definitely going to tinker around with the flavors a bit more…mmm, bet it would make a rockin French toast! ๐Ÿ˜€

      And um, yeah…a homemade peppermint mocha needs to happen ASAP! Yum!

      Actually, they DO have an annual holiday meal that is complimentary if you work on Christmas…only bad thing is it’s served by the hospital cafeteria. We’ll have to see if they bring out anything tasty (aka, worth it) this year! lol

    GAH I am seriously kicking myself for having already ate breakfast. Owell, I can eat these for lunch too right?! I adore peppermint, and have been adding it to everything! Although Ive been using eggnog in my pancakes as of late, these just look so stinkin delicious!

      Heck yeah! I made these babies twice per recipe in ONE week! I was having them at ALL hours of the day…and still never got tired of them! ๐Ÿ˜‰

As much as I love chocolate with peanut butter, I kinda think I prefer chocolate with peppermint during this time of year – blasphemy, I know!

  10. Working on Christmas should be outlawed. Sorry, girl… BUT! On the bright side, you get to enjoy these ridiculously amazing looking pancakes, and I’m still eating my cereal messes ๐Ÿ˜› Chocolate and peppermint is seriously the best Christmas combo. You know those After Eight squares? Gah! I used to be able to go through a whole box of those without even realizing it… before I knew it, I was surrounded by a huge pile of wrappers with no chocolate in sight…

      You should spike your yogurt with a little cocoa powder and peppermint extract…best of both worlds! ๐Ÿ˜‰

      Oh yeah, it does feel weird working on Christmas (this is actually my first one), but I am so grateful that I was able to see ALL of my family this weekend!
