Angelic Eggs, Cookie Crack, and Donut Damning

Hey hey hey everybody!

I hope you all had the MERRIEST of Christmases!

Monday, I told you guys all about the weekend of celebrating that went down around here, complete with an alcoholic rendition of Dirty Santa, a garbage bowl hat, and how I FINALLY managed to get that pony I’ve been asking for for years…

But today? TODAY it’s ALL about the FOOD!

The food-filled weekend began with our family’s finger food FEASTival:

Christmas Buffet 2012

My contribution, also known as the ONLY healthy thing on the table (besides the carrots and celery sticks), was of course, the deviled eggs!

Originally, I had planned on making my Herbed-Ricotta Deviled Eggs, but since I was all out of ricotta, I had to improvise and what I came up with was even BETTER than the ones from Thanksgiving!

“Angelic” Deviled Eggs

Prep Time: 5 minutes

Cook Time: 10-15 minutes

Keywords: boil food processor side snack high protein low-carb eggs cottage cheese

Ingredients (Serves 12)

  • 12 large eggs
  • 1/3 cup cottage cheese
  • 2 Tablespoons dijon mustard
  • 1-2 Tablespoons sweet pickle relish
  • paprika

Instructions

1. Place eggs in a large pot and cover with one inch of water.
2. Bring water to boil, remove from heat, cover with lid and allow to sit for 10 minutes.
3. Drain water from pan and immediately submerge eggs in cold ice water to halt the cooking process.
4. Peel eggs and slice lengthwise, carefully removing the yolks.
5. Combine egg yolks, cottage cheese, and mustard in a small blender or food processor and process until smooth (add a little water if needed).
6. Transfer mixture to a bowl and stir in pickle relish.
7. Spoon mixture into egg halves and garnish with a sprinkle of paprika.

Christmas Plate

I loaded up my plate with a little bit of everything and then totally went back and attacked that meat and cheese tray…seriously, how do I always forget just how good summer sausage slices are?!

Then it was time for dessert…

A slice of almond cake and a few dark chocolate covered pretzels.

And then, this happened:

As practically polished off half the jar of peanut butter and entered my Christmas food coma, I couldn’t even consider the thought of having dinner later…

Until my mom mentioned homemade french fries and sausage balls.

Of course then my dad just HAD to bring out the leftovers from lunch, the meat and cheese tray was attacked again, Ritz crackers scattered the table, and then THIS happened:

I swear I’m not pregnant! But it was SO good! ๐Ÿ˜‰

The next morning, after opening gifts, I put my new spatula to good use and I whipped up a batch of Trader Joe’s pumpkin pancakes!

After breakfast, we all got ready and headed over to my grandmother’s for lunch, but since my aunt had some leftovers from Christmas breakfast at her church that morning, we ended up having a lunch BRUNCH sort of meal…

For the record, ham and French toast is REALLY good together! ๐Ÿ˜‰

But that wasn’t all my aunt brought over…

You may laugh, but I kid you not when I say those little squares at the top should be ILLEGAL!! It was like a blondie but it was covered in chocolate chips and cranberries and…well, CRACK!

And I did just what any other crack head cookie lover would do…

I overdosed!

Later on that evening, back at my mom and dad’s house, I got the munchies (obviously)…

Remember those powdered sugar donuts from earlier?

Cookies may be my kryptonite, but a powdered sugar donut is just something I can NEVER turn down! And since I only had one the day before, I…ummm, well, I kinda maybe sorta ate half the package! Whoops?

And washed it down with a cup of this:

Christmas Eggnog

What would a Christmas weekend be without a little gluttony egg nog?!

So much for doing better with the sweets this year! ๐Ÿ˜‰

Needless to say, once I arrived home that evening and laid down for my nap before work, I slept like a friggin’ BABY!

But now…three days later, and STILL feeling out of whack, the majority of my eats have looked like this:

For the record, I’m petitioning for a REAL family dinner next year instead of the
finger food thing we’ve been doing for the last couple of years…
the madness has to stop and well, I just miss all the home cookin’!

  1. My thoughts on this post are: ‘Oh, yumm.’ ‘What is this? I want it.’ ‘Oh my God. hmmmmmm.’ ‘I totally need to call my dealer and get some more crack’. ‘Aaaah, this looks SO good. I need this, NOW!!’ – Well, everything looks SO good. As you know I am a cookie/crack head too and I am still suffering from palpitation cause of the sugar-shock I have from stuffing my face with countless of these babies ๐Ÿ™‚ We always do a traditional dinner, this year with a fish meal which was SO good. Have great day girl!!

  2. The deviled eggs sound wonderful! I personally can’t think of anything that couldn’t be improved by the addition of cottage cheese! I love that lemon ginger Bigelow tea. It tastes good and certainly has the desired effect. ๐Ÿ˜‰ The finger food thing is a good idea, but my problem would be grazing which is my problem anyway. I like the confines of a dinner plate…I fare much better that way. Merry Christmas, Heather!!

  3. Merry Christmas, lady! Please feel free to send some ACV my way…lol ๐Ÿ˜‰ There were a lot of sweets and treats this year but I did TRY to keep it under control. We do a traditional Christmas Eve dinner, Christmas brunch and Christmas dinner. There are snacks between brunch and dinner just in case you get hungry. ๐Ÿ™‚

      Oh gosh, I only WISH I had the recipe! Unfortunately it was something someone brought to my aunt’s church so she wasn’t sure what all was in it, but I’m sure it can’t be too hard…some good crusty bread, a little egg and milk mix…Oh yeah, I’m totally ON THIS! ๐Ÿ˜‰

    The deviled eggs look delish! They are my families favorite. I’ve never seen them made with cottage cheese or any cheese for that matter. Yours look so great!

    It’s always good to detox with some good eats after some sweets. ๐Ÿ™‚

      This was the first time I’ve ever tried them with the cottage cheese and I thought they were some of the best I’ve ever had! I didn’t tell my family about the switch and was pretty proud of myself when no one even seemed to notice the difference! ๐Ÿ˜‰

    My family has a traditional Christmas meal for lunch. I just had soup for most of the day though. Butternut and kabocha squash were the highlights.

      Oh girl, the French toast casserole was SO good! I will be working soon to recreate it for sure! But first, I need to get to the store for some kabocha! It’s been FAR too long! Thanks for the reminder! ๐Ÿ˜‰

  12. Finger foods can be DANGEROUS. I know that when I am at home I tend to just graze and graze and not stick to a meal routine which does TOTALY throw your system out of whack. [I, luckily, don’t have a weakness for doughnuts. My weakness is for things like Skippy peanut butter and haystack cookies.]

    Speaing of peanut butter, isn’t that Crazy Richard’s the creamiest you have ever had?!?! Stepmama Smart gets it and I am ALWAYS in awe of how it dribbles and drizzles.

    Ritz + ketchup is amazing. When I had the hamburger-tasting mustard (featuring relish and ketchup mixed in) I found that Ritz really taste a bit like a butter hamburger bun, so adding ketchup isn’t that much of a stretch really.

    Love the looks of those eggs…mustard + relish + cottage cheese are always a delicious combo. [When you are weirdo like we are, that is. ;)]

      Mmmm! Great, now you’ve got me craving haystack cookies…just when I thought I was RECOVERED! Lol! And oh my gosh, the Crazy Richards is SO good! I love how it’s perfectly drizzly for oatmeal and yogurt bowls since I don’t seem to have much luck when I try to warm up the thicker stuff (it always ends up turning into a burnt peanut paste! ick!)

      Gah! I should have known I could count on you to back me with the Ritz/ketchup combo! One of the many MANY reasons I love you! xoxox

  13. My family does finger foods on Vhrstmas Eve, and it gets me every time! I can relate to your woes. It was so good going done, but my body is still off kilter.

  14. I think your family’s finger food Christmas meal is such a cute idea! And those deviled eggs look awesome – good to know that they can be made with cottage cheese too because I almost always have cottage cheese in my fridge!

    The best thing I ate for Christmas was a gingerbread cake with dulce de leche frosting that I made… actually I think that cake might be the best thing I’ve eaten all year!!

      Oh my gosh girl, that cake sounds DIVINE! Though I’m pretty sure if you put dulce de leche frosting on a stick it would taste amazing! Lol

    Our Christmas eve dinner is more of finger foods and snacks (but there are turkey and roast beef sandwiches during the dinner hour) and then Christmas is an actual meal, which I enjoy.

    oh pretzels and peanut butter are AMAZING! I adored our homemade cinnamon rolls after a long run ๐Ÿ™‚

      Ugh, that’s it! I need to sit down with my family and have a serious talk…it’s time to petition for a new holiday tradition…I want homemade cinnamon rolls!! I’m totally jealous of you! Lol

    My family managed to do both this year, haha. Finger foods/dessert disaster (in a good way) on Christmas Eve, a more traditional dinner on Christmas day. And seriously, I will never judge anyone for dunking anything in either PB or ketchup (or both?). I mean, that’s just guaranteed tastebud magic, no matter what. And hah, totally laughed at you naming the cookie/dessert platter. Thingies are the best!
