Alright, so it’s been three days since Christmas…

If you guys are anything like me (and by the looks of the comments on Wednesday’s post, you are), the thought of anything rich and sugary sweet has your stomach turning somersaults right about now.

But how about a CLEAN dessert without the butter, sugar, or an impending tummy-ache?

And how about if it’s a little strange…but good?

Dark Chocolate Peppermint Pudding

Ingredients (Serves 1)

  • 1/2 large avocado
  • 2 Tablespoons unsweetened cocoa powder
  • 3 Tablespoons water
  • 10-12 drops peppermint flavored NuNaturals stevia or 1/4 teaspoon peppermint extract + preferred sweetener

Instructions

1. Combine all ingredients in a small blender or food processor and blend until smooth.
2. Garnish with crushed candy cane pieces.

Using stevia, this dessert is considered sugar-free, but if you don’t have access to stevia, I’d suggest going with xylitol or agave nectar. Both have low glycemic indexes and therefore cause little to no spikes in your blood sugar.

Regardless of what shape your gastrointestinal system is in right now, this makes one hell of a dessert, snack, or even a meal if combined with the right ingredients…

Maybe mixed with a little Greek yogurt? As a dip for apples? Or you could even thin it out and drizzle it over some protein pancakes!

Have you ever tried avocado in a non-traditional way?
Don’t be scared. I promise it won’t taste like guacamole! It’s rich and creamy like butter…the perfect addition to smoothies, cakes, or even pancakes!

How are you doing bouncing back after all the holiday eating?
I’m still on my diet of protein shakes and juice…but I DID manage to get down a grilled chicken salad for dinner last night!

    Love love love chocolate avocado puddings! I think I need to pick up some mint extract/drops soon (or maybe just be lazy and pick up the capella chocolate mint drops).

    P.s. you might want to fix the “serves 12” haha.

      Oh, I haven’t seen that flavor of Capella drops! Ha, like I need any more…I think I have like 6 or 7 right now and they last FOREVER!

      And thanks for pointing out my little boo-boo there…what a disappointing serving size THAT would be! Lol

  5. I didn’t think it was possible, but I’m officially getting sick of Christmas cookies and cakes. Today I actually found myself craving carrot sticks for a snack, and that almost never happens anymore. Ahhh Christmas… you were good to me. And speaking of good, I love using avocado in puddings and smoothies. I haven’t tried baking with it yet, but that’s next on my to-make list!

      Oh girl, with your baking skills, you would totally rock a cake or bread with avocado! I swear it’s better than butter…so smooth, so moi- (umm, yeah, you know the word! ;))

  7. Yummy! I have to try this!! I once made an avocado chocolate pudding, but it still tasted a little “avocado-y”, so the addition of peppermint would be perfect!

I love chocolate avocado pudding, and cannot WAIT to try it peppermint style. just the thing I need to ease myself back into eating clean without feeling sad about the elimination of sugar/desserts from my diet. Here’s to post-holiday eating and the return of healthier (but still delicious) eating!!

  10. I’ve tried avocado in baking before, but I’ve never made a pudding out of it. This sounds amazing!

    I’ve been getting back to normal eating since the holidays, although all my leftover cookies are really tempting me! 😛

  11. I love avacado in pudding; so rich and creamy and you can’t taste it at all. I usually throw in some almond milk and then top it with fresh berries.
    Like you, I’m ready to be done with the holiday indulgences and get back into my groove. Too much sugar, butter, etc makes me lethargic after awhile, and it’s really hard to get sh!t done when you have no energy. Cheers to juicing.

      “…and it’s really hard to get sh!t done when you have no energy.” <- AMEN sistah! It's really is ridiculous how long it took me to find my normal level of energy again! I attempted to workout twice at my house just after Christmas and couldn't make it past the warm up! Lol

  12. I’ve long been a fan of the miracle that is chocolate avocado pudding, but haven’t yet tried a chocolate mint version. It sounds so delicious, and a nice break from all the cakes a cookies that won’t seem to go away after the holidays!

      Oh yeah, if you’re a fan of chocolate and mint, you’ll love it! And I totally get what you mean…I figured everyone would quit bringing in sweets after Christmas, but it seems to be never-ending! Madness I tell ya! Lol

  15. As much as I love an avocado pudding, I must say, I prefer my avocados whipped up into a creamy, citrusy dressing. That being said, I did once make a ‘pudding’ like this with pumpkin and chocolate (instead of using avocado) and holy bejeezus, that was delish!
