Ok, so maybe that’s not exactlyΒ a direct translation…sue me!

Since I’m still working on the mother-load of Cho that graced my doorstep a few weeks ago, it was only a matter of time before I started thinking of pancakes…

Soft and creamy and PACKED with vanilla flavor!

Greek Yogurt Pancakes

Prep Time: 5 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/3 cup oats, ground into flour
  • 2 Tbsp ground flax
  • 1/2 tsp sodium-free baking powder
  • 1/4 tsp cinnamon
  • 1 egg white
  • 1/3 cup fat-free vanilla Greek yogurt (I used Chobani)
  • 2 Tbsp water (or milk)

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. To a medium-sized bowl, add oat flour, flax, baking powder, and cinnamon and stir to combine.
3. In a separate bowl, whisk egg white until frothy.
4. Add yogurt, water (or milk), and extract and stir well.
5. Add wet ingredients to dry ingredients and stir until flour is incorporated.
6. Spoon batter onto skillet surface forming 3 medium-sized pancakes and cook 5-6 minutes per side or until edges start to turn crisp and brown.
7. Serve with fresh fruit, nuts, and a drizzle of your favorite syrup.

  2. Looove Chobani! Unfortunately, I can only get it a few times a year when I go shopping in the States. I tried the apple cinnamon flavour a little while ago, and I was a huge fan.

    Oh yessssssssssss! Chobani pancake loving, I am all about this! I need to make these! Love how easy these are too!

    I wish I was going to blend, but since I am pregnant, it may be difficult for me πŸ˜‰ If the flight was shorter I may have been ok, but you never know I might attend if pregnancy stays on good track and I feel well! Hopefully I find someone selling a ticket if that happens!

      Thank you Kirsten! The red berries are red currants that I picked up on a whim a few weeks ago…they are tart like cranberries and SUPER juicy!

    I made these for my daughter & I this morning-(I only had plain Greek yogur so I added 1 tsp vanilla extract!) they were amazing & I cannot wait to make them again!! Thank you πŸ™‚

    Ah! Can you imagine there is no Chobani in Switzerland? So sad. I need to find an alternative cause these look so good!! I’d looove to blend with you girl. But I am only over in the U.S. in June and since I just had a holiday I might to work a bit in between πŸ™

      Aww, no Cho? That IS sad! The recipe would work with really any brand of Greek yogurt…or you could use regular yogurt and omit the milk (it would just make for a lower protein count of course).

      I would LOVE to “meet” you one day, girlie! When you come to the states in June, you should find a way to hit up good ol’ Tennnnn-a-seeeeee! πŸ˜‰

    I wasn’t really considering going to Blend… but now I’m thinking I should. I didn’t realize pre-registration was night though. Ahhh!

  14. I was seriously debating going to Blend, but I couldn’t make both HLS and Blend, and ultimately I decided to go with HLS… although now I’m not sure if I made the right choice. Eek! Ahh well, either way it’ll be a good experience… and maybe I can pick up some Chobani when I’m down there! We don’t get it up here in Canada, so I’ve only been able to get it while I’m travelling, and I REALLY want to try the apple cinnamon flavor, but I haven’t been lucky enough to find it in the stores I was at πŸ™

      And fyi, apple cinnamon is DEFINITELY worth the hunt…and so is the passionfruit (I love the little seeds in it!)

    [These look amazing. I really should have done more cooking with my Cho, but I swear I just like making giant yogurt bowls with it. I DO still have one more tub left…and I figure three recipes ain’t bad, right?]

    P.S. I also reiterate everything you said about the faces behind the company! I always tell people that when I talk about why I love Chobani. [Also that it is able to be digest by my lactose averse belly…]

      Three recipes is pretty good m’dear! I got halfway through my case before I remembered we were supposed to be cooking with it! So I only have two! Oops? And YES to the lactose-challenged! I don’t know what I’d do if I had to pop a lactaid every time a Cho-craving hit!

      Of course! You could just replace it with more flour…OR if you have coconut flour, try adding 1 tablespoon of that to the batter instead of the flax…makes the texture even creamier! πŸ˜€

    Could I substitute the oats for almond powder?

      Hey there, Kam! I’m sorry, but I haven’t worked with almond flour enough to really know for sure. For what reason are you wanting to make the switch? If you’re looking for a grain-free alternative to the oats, you might have better luck with buckwheat or quinoa flour. Though with those also being gluten-free, you may want to add a little xanthan gum or arrowroot (some sort of powder to help with binding) to get the cakes to have a good shape! Please, let me know if you try it out…I’d love to hear how it works out! πŸ™‚
