Mmmmm!

With the cold wintry weather in full force this week, I had no other choice but to look to some warm foods for comfort. These pancakes hit the spot like NO other, but it took a couple of tries to get it just right.

I started out basing it off the recipe for my beloved Ginger Pear Pancakes, but I made a few tweaks to make sure that these babies were extra tender, extra flaky, and extra MOIST (it had to be said) just like REAL apple pie…

Apple Pie Protein Pancakes

Prep Time: 10 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/3 cup rolled oats, ground into flour
  • 1/2 scoop vanilla protein powder (30g scoop)
  • 1 Tbsp coconut flour
  • 1/2 tsp sodium-free baking powder
  • 1/2 teaspoon apple pie spice
  • 1/8 teaspoon cardamom (optional, but HIGHLY recommended)
  • 1 large egg white
  • 1/2 teaspoon vanilla extract.
  • 2 Tablespoons unsweetened applesauce
  • 3 Tablespoons unsweetened vanilla almond milk
  • 1 small apple, chopped and separated

Instructions

1. Heat a non-stick skillet or griddle over medium heat and coat with cooking spray.
2. To a medium-sized bowl, add flours, protein powder, baking powder, and spices and stir to combine.
3. In a separate bowl, whisk egg white until frothy.
4. Add milk, applesauce, and extract to egg white and stir to combine.
5. Add wet ingredients to dry ingredients and stir just until flour is incorporated.
6. Fold in 1/2 cup chopped apple.
7. Spoon batter onto skillet, form/spread 3 small-medium sized pancakes (batter will be thick), and cook 5-6 minutes per side or until edges start to crisp and turn brown.
8. Top with other half of apple, some chopped walnuts, a bit of maple syrup and your favorite “streusel” topping.

Warm and melty apple pie DELICIOUSNESS!

*For warm apple topping, combine chopped apples, 1/8 teaspoon apple pie spice, and 1 tablespoon of maple syrup. Microwave for 1 minute or until apples are tender.

  1. I’d never say no to apple pie, even at breakfast :-p
    My favourite kind of pie is lemon meringue. I’m not a huge lemon dessert fan, but for some reason, in pie form I cannot get enough of it.

      I’ve never really been a big fan of lemon desserts either…I blame my grandpa and the time he tricked me into eating a lemon cream sandwich cookie (I thought it was vanilla)! ๐Ÿ˜›

      Actually, when it comes to pies, I’d rather have them cold…ESPECIALLY when it comes to pumpkin pie! It kills me how most of my family wants to dig into the pumpkin pie at Thanksgiving almost as soon as it cools off from the oven! Not me, I’d rather wait, pop it in the fridge…and have it for breakfast in the morning! ๐Ÿ˜‰

    I just mmm’ed out loud. I think you nailed it with the crunchy cereal topping.
    Favorite pie is most definitely apple. And last comfort food I indulged in was peanut m&m’s (does that count?) which I ate by the handfuls last night. I’ve also been eating lots and lots of chocolate. Can you tell I like sweets? ๐Ÿ˜‰

  9. I picked up a President’s Day cherry pie today, then it slid vertically while we were walking home from the store. It won’t look as pretty as these pancakes, but it will taste delicious.

    Last comfort food? I scored some tail right before the Superbowl, so we dined on Ox Tail stew with roasted potatoes. That’s comfort food to me. Though I adore collards, esp off a hot food bar that someone else slaved over.

      I’ve always wanted to try oxtail stew! Oh, and I am with you on the greens…I’ve tried, but I just can’t seem to make them at home! They never turn out right!

    Last night I had eggplant parm, with a side of spaghetti, bread, and salad with ranch dressing and I finished it. Those 10 miles on Friday had me seriously craving carbs. No guilt at all. ๐Ÿ˜‰

      Haha! Confession: Sometimes I envision myself as a mad scientist/chef in the kitchen…complete with white lab coat, crazy hair, and of course, my pancake spatula! ๐Ÿ˜‰

  15. These look soooo goooood! I don’t think I’ve ever met a pie I don’t like, but pumpkin is probabaly my go-to. I made a s’mores pie once from Cookies and Cups that was heaven though.

      I can’t believe I’m only just NOW realizing how good JR protein powder is! And it does SO well in recipes! A couple of years ago, I had a coupon and decided to live on the wild side and tried his pina colada flavor…unfortunately I thought it was disgusting and never thought of trying another one until I just happened upon a sale, but I’m not sure about any of the other flavors…maybe I’ll just stick with the vanilla?

    I am SO in love with cardamom in pancakes right now! Randomly threw it into some choco-pancakes over the weekend…why have I not been doing that for years?? And yes, these pancakes look like (yet another) pancake dream come true! Apple pie as pie isn’t my favorite, but I love apple crisp, apple pancakes, apple cake. Don’t ask me why I glance over the pie. Mincemeat pie was my childhood favorite. I was an odd child.

      Mincemeat?! I’m not gonna knock it since I’ve never tried it, but I always imagined it tasting like potted meat or Vienna sausage or something! Lol

        It’s actually not at all savory–it’s dried fruit, liquor and spices, haha. Old school versions have actual meat, but most don’t now.

    I am loving on anything apple pie flavored lately, but I am so fickle when it comes to my ‘favorites.’ Last night, peanut butter cream pie was all I wanted. Today, I am thinking that cherry pie would be delicious. In the end, I really just want the filling, so maybe I don’t prefer pie at all?

      Haha! Now I have to admit, when it comes to fruity pies with a crust…especially the criss-cross butter/crack filled ones…I am ALL about the crust! I know it’s not technically “pie” but my favorite part of a peach cobbler is the crust where it’s crisp on one side and soggy and warm on the other…swooooon!
