WIAW: Healthy & Indulgent

Hey guys!

Wow…I couldn’t help but have the BIGGEST smile on my face as I read through all your sweet comments on Monday’s post…especially since I know that the man-friend will be reading them too (yep, he reads the blog :D) and by the time I see him again this weekend, I’m sure his ego will be as big as a house! Lol

Along with all my AMAZING Valentine’s Day goodies, I have to say, even though our Memphis plans fell through, he did a pretty darn good job keeping me entertained this weekend…especially when he asked me if I wanted to go to Big Lots…for the SOUL purpose of checking out the healthy treats like the new Budpop gummies! πŸ˜‰

But besides buying WAY too many snacks to add to my already BURSTING pantry, we also found ourselves faced with some DELICIOUS eats…

WIAW Teal

As always, a BIG thanks goes out to our crafty, veggie-loving hostess, Jenn for giving me a reason to bombard you with moreΒ foodporn! πŸ˜‰

Before heading off to my massage appointment, we fixed a quick but oh so satisfying breakfast…

Mmmm, oats!

He kept it simple with a bit of honey drizzled on top, but I went BIG with a perfectly fried egg, blueberry jam, and a dash ton of cinnamon!

After he picked me up from my appointment, we had planned to go out for lunch, but traffic was terrible so instead we hit up the grocery store, picked up a few things and made a nice lunch at home!

And while the man-friend opted for a turkey sandwich, I was really feeling the need for something warm in my tummy.

Butternut Squash Soup

Unfortunately, this soup sucked BIG time! I know it can be hard to find low-sodium soups that actually have FLAVOR to them, but I know it can be done…sadly, Amy doesn’t have the skills.

The rest of the day was full of movie-watching, nap-taking, and otherwise being lazy bums. Oh but we did manage make this tasty little snack…

Ain’t no guac like a CHUNKY guac!

We finally decided to get up and get moving later that night and since I didn’t get the warm tummy goodness I had hoped forΒ during lunch, I suggested we go out for Thai…nothing like some good (mildly <- I’m a wimp) spicy curry!

We started out with some spring rolls served with an incredible sweet peanut sauce to start, and then came our entrees…

Thai Chicken & Shrimp

I actually ordered the dish on the left…chicken, carrots, onions, and snap peas in a brown ginger sauce, but after a couple of bites, I really wasn’t feeling it (the chicken was a bit tough and I was very disappointed with the ginger flavor) so the man-friend did one of the sweetest things…he SWAPPED plates with me!

Granted, he had already polished off HALF the bowl of this sweet coconutty bowl of deliciousness, but I GLADLY dove face first into finished the rest! πŸ˜‰

But after dinner is where it got REAL…

IMG_1899_2Oh yeah baby! Fro-yo Heaven…complete with cookie dough, Oreo crumblies, and cereal “sprinkles”…aka Fruitty Pebbles…aka one of the best kiddie cereals in the WORLD!

And hidden under my mountain of cereal? Only some of the best fro-yo ever…

Later that night, before heading off to bed with our fro-yo-full bellies, I introduced the man-friend to…

Overnight Oats

In the morning, he again went purist on me with a drizzle of honey (seriously, we need to work on this…must turn man-friend into nut butter addict! ;)) while I topped mine with thawed frozen strawberries and melty coconut peanut butter!

My bowl was SUPER filling…so much so that, hours later, the man-friend was forced to eat lunch alone…but I don’t think he minded not having to share his leftover Papa John’s with me! πŸ˜‰

But dinner was a different story…

I had a piece of fried chicken (my first in YEARS…omg, SO good), sesame green beans, braised cabbage, broccoli casserole, sautΓ©ed greens and tomatoes, red cabbage salad, and some antipasta!

A few hours (and MORE shopping…haha!) later, this happened…

Fro-yo two days in a row?! Hey, you only live once! WHY have I’ve never thought to add hot fudge and peanut butter to my fro-yo before?? Omg, I’ve been missing out! And um…that may or may not be a couple of demonic cookies (aka Thin Mints) on this side! πŸ˜‰

I have to say, looking back at everything, I think we did great at balancing out our eats…plenty of veggies, whole some grains, and TONS of calcium! πŸ˜‰

      RIGHT?! And can you believe when I let him try my coconut peanut butter he said it was just “ok”? OK?!?! Who says that? It’s COCONUT PEANUT BUTTER!!! Lol

  2. Yum, I love your eats! Thai is such a great option to choose when going out. Those light, fresh yet intense flavors are just amazing and what can be better for dessert than froyo???

    Oh oh, frozen yogurt yummmyyyy!! Now get this: we have ONE FroYo shop here which is 25 minutes from my home. Good or bad? Well, when I see your toppings, I must say bad πŸ™
    And I agree with Jessie. Nut Butter Train is the only real one, please let the Man Friend know – we are the pro’s and know everything – he can trust us ! πŸ™‚ Happy WIAW girl!

      Haha! I have a fro-yo place like 5 minutes from my house but I never go there…they just can’t hold a candle to the places they have in the “big city”! I’ve actually entertained the idea of just going there for a cup of toppings and stopping by the grocery store for some kind of ice cream instead! Haven’t done it yet though! πŸ˜‰

      And I’ll be sure to let him know…and direct him to the necessary channels should he have any questions! Lol

  4. Oh my, you and man friend have excellent tastes! But I agree with Jessie: Nut butter is a necessity on oats, sorry, man friend ;). Swapping plates at the restaurant miiight have made up for that, though – how sweet!

    Best thing I ate this weekend was a burrito bowl in Berlin (aaaah, alliterations!). Not fair, though, that the fro-yo shop right down the corner from it was closed that day. Even if it had been opened, though, there’d by far not have been as many exciting toppings as you’re having in the US. Let’s not even talk about the fact there are only three or four different flavours of Fro-yo at the max … Care to mail me some ;)?!

    lol I would have never thought to add fruity pebbles to fro yo! I’m always VERY boring unless there is some UNREAL flavour. My go to is original tart fro yo topped with roasted almonds πŸ™‚

      Oh wow…you ARE boring! Lol πŸ˜‰ Try as I might, I can never go the “healthy” route when it comes to fro-yo…even if I go in thinking I’m going to get the tart with fruit, I ALWAYS end up dumping a TON of cereal on it! Fruitty Pebbles are my weakness!!

  8. Love fro-yo! If I get anything chocolate flavored than my toppings have to include peanut butter, but if I go with a vanilla base, I get lots of fruit. Depends on my mood. πŸ™‚

  11. Everytime I get froyo, I need chopped Reese’s PB cups. It’s pretty unacceptable if they don’t have them!

  13. You know… I can’t say that I honestly remember ever eating Fruity Pebbles. I don’t even know if they’re sold up here in Canada, to be honest… I remember talking to a friend who grew up in the States and wondering what the heck Fruity Pebbles were when she mentioned them. I’m not really a big fan of fruity cereals in general, but maybe I’m missing out on these guys?

      Omg girl, they’re the BEST!! So crazy…today I went out for gelato and sampled a berry lavender flavor and it tasted JUST like Fruitty Pebbles!! So keep that in mind…berries + lavender = fruitty pebbliciousness! πŸ˜‰

  14. Oh wow that fro yo looks insanely good – its making me so jealous that I don’t have a fro yo place near me..ive never had it properly from a store πŸ™ no toppings..no different flavours πŸ™ boo hoo.

  15. I’ve had that experience with that Amy’s soup too :(. I love Gardennay’s Low-Sodium Butternut Squash Soup by Campbell’s, though, that one has tons of flavour – they season it really well with herbs etc. Your post made me realize how much I need a massage haha…

      Ohhh, thanks! I’ll have to check that one out for sure! And I always forget how much a massage can do for you (mind AND body)…I really need to get better about scheduling them periodically.

  18. That froyo looks amazing! I wish there were better canned soups out there. I normally end up making big batches of soup and freezing it for when I want soup.

      Ugh, I REALLY need to get better about utilizing my freezer more! AND making soup! Here it is almost spring and I’ve yet to make a single one! #foodbloggerfail LOL

  19. One of these days I seriously want to stick my face under the machine and pull the lever. Do you think employees do that after hours?? hmmmm….

    My fave fro-yo topping is the little yogurt chips. They are delicious.. and healthy? haha.. It has the word “yogurt” in it.. πŸ™‚

  20. Cookie dough would be the one topping that I could never go without if I was getting fro-yo. TCBY was the BEST!

    I have to admit that I was never a fan of fruity pebbles. I honestly don’t know why. I think it’s because of the color… Ok. Not true now that I think about it. Fruit loops, trix and Captain Crunch frequently made appearances in my bowl….

      I never could get on board with Fruit Loops or Trix, but omg, Capt’n Crunch…YUM! Especially when they came out with the Oops all Berries…Heavvvvvvvennnnnnn! And I LOVE cookie-dough…that’s my favorite ice cream flavor!

  21. Confession: I’ve never had froyo and always go straight for the real deal: full fat ice cream or gelato. Mmm, heaven.
    Man friend rocks (so long as he doesn’t go getting all cocky now…oh gawd, that didn’t come out right), Amy’s Low sodium soups suck, and life and food should always include balance.

      Oh gosh girl, I love me some gelato and ice cream, but there’s nothing like a bucket…ahem, I mean a BOWL of fro-yo TOPPINGS…and you know the frozen yogurt thing is pretty tasty too! πŸ˜‰

  22. Any weekend involving fro yo two nights in a row is a good weekend! I always have to get Oreo pieces on mine. It reminds me of an Oreo McFlurry when I do that! πŸ˜€

      Omg, it’s seriously so good! I never would have thought to try it had I not ninja’d a bite of the man-friend’s bowl the night before…I never thought it would go well with my crazy cereal combinations but it totally works!

It’s even better when you get a big plate of the most delicious Thai food you’ve ever had off of a dirty street stall in Thailand for a dollar πŸ™‚

  28. LOL. My boyfriend was reading over my shoulder and saw your froyo, and goes, “What is that!? That looks like what unicorns would poop. Oh my god, yummy goodness!” He’s such a whacko! But I love him, because he too swaps meals with me when I don’t like my order.

    Thanks to Menchie’s, I’m completed hooked on carob chips on my froyo. I can’t resist! With some granola and strawberries too? HEAVEN. What Thai restaurant did you guys hit?? I sometimes think I’ll stop going to my favorite one and try someplace new…but probably not. Pacific Foods does pretty good low(er) sodium soups (the carton kind), but yeah, I had an Amy’s one that sucked big time–I think it was a low sodium “chicken” noodle soup…that tasted like a puddle of bland.

      I need to try that Pacific Foods brand…I’ve heard a few people say good things about it! Gah, can you believe even after our gelato today, I was STILL craving fro-yo after dinner! I swear it’s a good thing I don’t live closer to Nashville…I’d go broke for sure! Lol

      So glad we got to meet up girlie! And thank you SO MUCH for my goodies! Promise not to let too much time go by before we do it again! Next time, we’re doing Thai…unless we hit up that Indian buffet for lunch! Yum! πŸ˜€

  31. I’m dying for some Thai now!!!! I can’t ever get enough. The hubby and I usually order 2 meals and share b/c I can never make up my mind! Best meal this week? eggplant dal.. hands down!

      Can you believe this is only my SECOND time ever having Thai?! The first time was this past summer…I’m kicking myself for waiting so long to have it again! I swear that broccoli curry dish has been on my mind ALL week! Haha!

  32. Oh my goll, I really need to buy some Fruity Pebbles. Or maybe that would be a bad idea…I like to think that my love for Lucky Charms has been overcome, but I just supplant it with different kiddie cereals, like Honeycomb. How did I ever forget how good Honeycomb is? Or Golden Grahams?

    Anyways…I could talk about cereal all the live long day, but I must say you are living it up RIGHT. So much delicious food, I don’t even know what to do.

      Haha! I remember a few years ago, I got this SERIOUS craving for Fruity Pebbles, went to the store on my lunch break, and brought back a whole box and a half gallon of milk! Everyone thought for sure I was pregnant! Haha! I honestly think they HAVE taken the place of my beloved Lucky Charms (let’s face it, I was just in it for the marshmallows anyway!) but omg, Golden Grahams!! I forgot about those too!

      And yeah, obviously you’re not the only one with some cereal serious problems here! πŸ˜‰
