Growing up, maple and brown sugar was my FAVORITE flavor in the oatmeal variety box…well, unless I lucked up and my mom bought the fruity ones…
Helloooooo strawberries ‘n cream! πŸ˜€

But wait a minute, today is Pancake Sunday!

So WHY am I talking about oatmeal??

Oh yeah, because I made these…

Maple & Brown Sugar Oatmeal Pancakes with Butter & Syrup

Oatmeal PANCAKES!

Maple & Brown Sugar Oatmeal Pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 1/3 cup water
  • 1/3 cup unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • 2 Tablespoons ground flax
  • 1/2 scoop vanilla protein powder (30g scoop)
  • 1/2 teaspoon sodium-free baking powder
  • 1 large egg white
  • 1-1 1/2 teaspoons* brown sugar, packed
  • 1 teaspoon maple extract

*I found that with 1/2 teaspoon more, the flavor was much more pronounced without being overly sweet.

Instructions

1. Preheat a skillet or griddle over medium heat and coat with non-stick spray.
2. Cook oats and water in a microwave-safe bowl in the microwave for 1 minute, stir and set aside to thicken (2-3 minutes).
3. In a small bowl, combine almond milk and vinegar, stir and set aside for 2-3 minutes (this is your buttermilk).
4. Combine all ingredients, including oats and “buttermilk” in a small blender and blend until smooth.
5. Transfer batter to skillet, forming 4 small to medium-sized pancakes and cook 4-5 minutes before flipping (small bubbles will form).
6. Cook an additional 2-3 minutes on the other side.
7. Plate and top with butter and maple syrup, or…

  1. Oh how I am supposed to keep up?? I am only at the Ginger-Pear-Pancakes!! Far behind!! But they were……hnmmonjbvjvjfdfdh shfudisa fiphdas ipfhuvhioap h (sorry. happens when something is too good and shadows my mind).
    Theses ones look sooo pretty and how on earth did you come up with the idea of runny egg on pancakes?? Gimme some of your cells, will ya?? Hmmmmmmyumm. My first choice breakfast as a child were original plain corn flakes with milk and sweetened cocoa powder. Or a huge piece of dark bread with butter and Mom’s jam. Happy Sunday girl!!

      Wait, what? You chose bread and jam over bread and those awesome sprinkle things?? And PLAIN corn flakes?! Weird child you were…weird! So glad you turned out (somewhat) normal…oh wait, you’re a food blogger…that’s not really normal is it? πŸ˜‰ xoxo

      The idea for the runny yolk ONLY came from the oats I made a couple of weeks ago…and I’m telling you, I was definitely patting myself on the back for that stroke of genius! Haha!

      I’m so SO glad you liked the Ginger Pear Pancakes! I woke up this morning and saw your tweet and I’ll admit, I jumped up and down a little! Oh and ps, I’m STILL jealous of all your fresh berries! Mail me some? I’ll trade you pancakes!! πŸ˜€

        Well girl, you have to consider that I was raised in Switzerland. We don’t have all that crazy yummy stuff. Plain Corn Flakes were the only ‘cereal’ we had (true!) AND we were not allowed to eat the sprinkles during the week, since they were a present we had to save them for Sunday. Same with honey – only on Sundays, cause expensive! All true! Yup, Mom was the drill queen πŸ™‚ πŸ™‚ Sure i send you some! Wait – they will have turned white and green by arriving. Only solution: you gotta come here. And bring Pancakes! I got Swiss Chocolate and Cheese besides the berries! πŸ™‚

          Haha! Reminds me of my mom…she could be such a drill sergeant when it came to what we could eat. I was never “allowed” to have cereal other than for breakfast, but since I came home after school and was by myself for a few hours until she got off work, I’d totally sneak a little bit from each box thinking she’d never notice. I’m sure she did though! Lol What can I say, I’ve been a cereal lover practically all my life! Oh and Sundays? Sundays were my favorite! Mom would make a BIG breakfast…eggs, bacon, home fries, BISCUITS, and all the fixings/toppings you could want! I start drooling just thinking about it!

      Aww, thank you SO much Chrissy! And hey, you’re not gonna get ANY judgement from this pop-tart-loving gal! Plus, I’ve actually always wanted to try Weetabix…wonder if they have them at World Market? Hmm…

      I have a Nikon D3000 with the stock 18-55mm lens. Just gifted it to myself back in December after my Canon (quite literally) took a spill πŸ™ I’m still learning the in’s and out’s of it…I’m definitely an amateur! If it wasn’t for photo editing, I’d be in trouble! Lol

    Do oyu have brown sugar extract? I’m going to try these with that. I’m almost out so I’ve been hoarding it, but I think this is a worthy use.

      No, I thought about that when I was making these…could have SWORN I bought it back when I got the butter one! Can’t really justify getting more since I have like SEVEN bottles right now (too bad I don’t like half of them! :-/)…plus, those little buggers are EXPENSIVE!

  12. I would have been content with the Maple Butter pancakes and Def Leopard, and then you went all yolk pornilicious and bacon bits on me, and now I’m feeling kind of woozy. I’d like to faint face first into a plate of this. My god woman! You are crazy in a complimentary way.
    Breafast of choice was those Toaster Strudels (lord only knows whats in them) with the warm frosting drizzzle. I used to take one serving of the toaster strudels and then two servings of the frosting so someone was always stuck without frosting. Hee, hee.

      Ohhh, you sneaky little devil you! Consider the yolk-pornilicious tease to be karma coming back at you after all those years! I was never a HUGE fan of the flaky crust, but I DID think it was fun to “draw” on my frosting! Breakfast meets lesson in abstract art! πŸ˜‰

  13. Mmm yum! Maple and brown sugar is seriously the best flavour combination – it was always my favourite flavour of oatmeal too! My favourite breakfast overall though was a tie between homemade waffles and cinnamon toast.

      Oh yes, cinnamon toast was definitely up there for me too…or sugar toast! We used to butter bread and sprinkle it with colored sugar! Sounds awful (and you know, a toooooooootally healthy way to start the day) but my sister and I LOVED it! Can you believe I didn’t have my first homemade waffle until just a few years ago?

  14. loved strawberry poptarts. we would always put them in the toaster to warm them up & THEN smear butter on them.. yikes. another favorite was ‘graham cracker cereal.’ basically you break up some honey graham crackers and pour some milk on ’em… and, if i was lucky, i would get to sprinkle sugar on them. wow. could not imagine! πŸ™‚

      Hahaha! Wow! o.O I don’t think I’ve ever heard of that combo before! But oh, I DO love me some graham cracker “cereal”…though most of the time it was dessert at our house! And that’s funny about the sugar…when I was little, one of my favorite combos was buttered toast with colored sugar sprinkled on top! Omg, I can’t even THINK about doing that now! Lol
