I FINALLY USED MY CROCK POT!!!!!

I know, I know, it’s only two weeks until SPRING (yay!)…better late than never, right? What can I say, not only did Meghan MOTIVATE me with her delicious soup, but she also INSPIRED me to make one of my own! And well, by the title of this post, I’m guessing you know where the other bit of inspiration came from! 😉

But for now, forget about the #STRANGEbutgood...you wanna know what I absolutely love, yet frequently forget, about making soup?

It’s SO flippin’ EASY!

And if you plop your ingredients in a slow cooker, it’s virtually IMPOSSIBLE to mess up…even if, say you forget all about it while you become totally engrossed in your very first episode of Downtown Abbey…hypothetically speaking of course!

Now it’s time for some #strangebutFUN…
I’m gonna learn ya the ways in how to be SOUPER! 😉

First, gather up your ingredients…

Sweet Potato

One ginormous sweet potato…check!

Onion

Half a red onion (and plenty of curse words for chopping)…check!

Black Beans

A can of black beans…check!

Tomatoes

Some expired canned tomatoes…umm, check?

Tomato Date

Hey, we’re building antibodies here, people! 😉

Moving on!

Spices

An array of your favorite spices…check!

Cinnamon

And don’t forget the cinnamon!

Hey, I did say your FAVORITE spices! 😉

And last but not least, a little seeeeeeeeeecret ingredient…the one thing that will turn the contents of your slow-cooker into something rich…something creamy…something

SOUPER!

You may think I’m a little “nuts” but just trust me on this one folks! 😀

Sweet & Spicy Sweet Potato Soup

Prep Time: 15 minutes

Cook Time: 3-4 hours

Ingredients (Serves 6)

  • 1 large sweet potato, chopped (about 3 cups)
  • 1/2 large red onion, chopped (1 cup)
  • 1 15oz can black beans, rinsed and drained
  • 1 28oz can no-salt-added whole plum tomatoes, crushed with hands
  • 2 cups low-sodium vegetable broth
  • 1 cup water
  • 1 Tablespoon cumin
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne (optional)
  • 1/2 teaspoon cinnamon
  • 1/3 cup unsalted creamy almond butter
  • 3 cups fresh spinach
  • fresh cilantro for garnish

Instructions

1. Combine all ingredients except for almond butter and spinach in a slow cooker.
2. Cook on high for 3-4 hours or low for 5-6.
3. Just before serving, stir in almond butter and fresh spinach.
4. Garnish with fresh chopped cilantro.

      Aww, thanks Lee! I was really really happy with the pictures…I always get a little nervous taking pics of brown/red things! Don’t wanna be like, “Look everybody, I made a bowl of poop!” Lol

    ERMAGHERD!! I gotta make this soup. I love the addition of almond butter to it!! That doesn’t sound strange at all. The added nuttiness with all those savory spices HAS to be delicious. It probably complements the cinnamon very well! I have to try this soon. HAVE. TO. Moral imperative. I also need to invest in a crockpot. I don’t have one. [pause for gasps and reaction]. I KNOW, I KNOW. I’ll get one. I promise.

      Hahaha! So glad you gave me a moment to recover after that one…a food blogger without a slow cooker?! Isn’t that like a painter without paintbrushes or something? 😉

      And too funny, but the cinnamon was actually an afterthought…a very DELICIOUS afterthought! 😀

  4. It’s funny, but I have soup everyday and I don’t think I’ve ever actually posted a “recipe” for one. Lol. This is so creative with the almond butter addition. Sounds awesome. Hey, if chocolate and peanut butter works in chili, anything goes, right? 😉

      Haha! I’m the same way with salads…I see people posting recipes for salad mixes and dressing concoctions all the time, but I’m just the girl in the corner throwing random handfuls of stuff at her plate until some sort of mystery deliciousness appears! 😉

      Thank you so much Giselle! And believe it or not, I’ve only seem to hit my strange stride in the last few weeks. Laura has definitely been my enabler! Lol

  6. Sorry to disappoint you, Heather, but there’s nothing strange about cinnamon in soups, stews … anything, really. My go-to cauliflower curry would be nothing without a dash or two or, okay, maybe more of cinnamon. And almond butter is a necessity in anyway. Or maybe it’s just me being overall strange ;)?

    Too bad I’m at my parents’ and won’t be able to make your stew this weekend. But I’m keeping my fingers crossed for your surgery! How would the blog world be able to live on without you?! Good luck and I hope it’s not too painful!

      Ahhhh, I love how we share the same strange views! Avocado in desserts, nut butter in stews, cinnamon in ANYTHING! 😉 Lol

      Thanks for the well wishes, love! The surgery went well…not for the recuperation time! It’s been a little rough the last 18 hours or so, but I’m hoping it starts feeling a bit better tomorrow! 🙂

    Crockpots are my very best friend–like you say, when it comes to soup in a crockpot, you really CAN’T mess it up. I mean, you put stuff in, turn it on, take hot stuff out. Done! Love the idea of sweet p and almond butter in soup–I love a good peanut stew, so similar theory! (And so glad I’m not the only one who is so scattered her canned goods have time to go bad…)

      Oh Lord, there’s no telling what is lurking in the far depths of my pantry…I actually had two cans to choose from when I was going to make this…sliced or whole…and BOTH were past their dates! Lol

      And the only thing I’ve ever messed up in a crockpot? Oatmeal…wow, it is like seeeeeeriously hard to scrape that stuff out of a slow cooker pot! 😯

  8. just got to say I love your soup bowls. they will never got lost in the cabinet when hunting for them 🙂 I’m not a big fan of sweet and spicy mixed, but the soup is intriguing.

      Thank you Sonia! The spice is more of a warm flavor than a “omg, my mouth is on fire” kinda thing…because quite honestly, when it comes to peppers, I’m a total wimp! Those fruity habanero salsas? Yeah, those things mess me up big time! 🙁

      I know right…”guidelines”…and well, I always did have a little rebel streak in me! 😉 Hey, the nose KNOWS…if it passes the Heather sniff test, it’s going in my belly! Lol

      I made a recipe for African peanut stew a couple of years ago…but I have to say, mine tastes better! 😀

      Aww, thank you so so much Anna! And believe it or not, I scored the bowls at the Dollar Store a couple of years ago…fell in love the moment I saw them (yeah, THAT’S a completely normal thing to say…lol)

      Oh my gosh, UNBELIEVABLY easy! Only problem now is that I want to make like a dozen more…but there is only SO much room in my fridge/freezer! Lol

      I know, right? No excuses! Seriously, I want to make like a dozen more soups now! Lol Can’t believe I forgot just how easy it is! And I think this would go great with some shredded chicken…mmm, almond butter and chicken is one of my favorite combos!

  13. Yum! I was going to comment that I made a similar soup recently… until you got to the part where you added almond butter. I didn’t do that! But I have added sunflower seed butter to a stew before (my African chickpea stew) and I loved the flavour it added! I’ve come to the conclusion that there really is nothing that nut butter can’t be added to!

      So true! I just knew this would work since I’ve added almond butter to sloppy joes before and fell in love, but I was definitely surprised with just HOW much I liked it! And the cinnamon is the perfect touch!

  14. So I said a little prayer-ish thing (maybe just threw some knee healing vibes out into the universe) for you this morning. I’m guessing you’re at home now, happily resting and rapidly recovering. That’s what I picture anyway. Then in just a few short weeks, I see you busting it out in the gym, hardcore and pain free and being able to say, “Yes, this was absolutely worth it.”

    So do you think this soup would work if my tomatoes aren’t expired? Ya see, I’m not very patient and don’t think I could wait that long. 😉

      Bahaha! Wellllll, I don’t know…there is that distinct TWANG that comes from 9 month old tomatoes!

      Awww, girlie! You are the SWEETEST! Thank you so much! The surgery went well…actually pretty fast once they FINALLY got going. Now I’m just learning how to NOT walk on crutches! I swear these things should come with an owner’s manual! Lol

    … so I remember you mentioning making a “soupie” before.. well girl, you have to try using a smoothie as your pancake topping! This morning I made a vanilla latte smoothie & put it over maple-cinnamon whole wheat pancakes. I about died & went to heaven!

    When I volunteer at the food bank (where everyone seems to donate their expired stuff?) the rule is 18 months *after* expiration date is still good.

    So you’re fine. Especially for a canned good.

      No way! You have some of that?! Mail me a spoonful? Haha! Seriously, I’ve looked everywhere for it, but never been able to find a jar…it was hard enough to get my hands on some Mighty Maple! Have you tried it in any Asian dishes? That’s what I wanted to do with it….mmm, spicy peanutty noooooooodles! Oh crap, now I’m drooling! 😉

  21. I have had a slow cooker for at least a year and never once used it. Oops.

    I hate to be the bearer of bad news, but this is not actually weird. Or strange. West African Peanut Stew (or Groundnut of any variety) is super yummy, and traditional. However, I WILL agree that it is delicious! My mom used to eat Peanut Butter and Tomato sandwiches when she was little—now THAT is weird—so I made her a version of Groundnut Stew on her birthday last year. I have a feeling YOU would LOVE a tomato and nut butter sandwich….

      Ha! I should have known you’d back me with this! I knew it wasn’t really “strange” since I’ve made an African peanut stew before, but I have to say I liked this one a LOT MORE! …not that I’m biased or anything! 😉

      Hmm, why have I never tried tomato and nut butter together before??

    This recipe sounds wonderful! Could I make it using a saucepan and not a slow cooker though?

      Aww, thank you, Lea! I don’t see why not…the slow cooker just makes it easy to throw together and walk away, but you could probably let it cook on medium for 30-45 minutes and it would be fine! Let me know how it turns out if you try it! 🙂
