Ok, what if there was some silky smooth COCONUT peanut butter dripping over the edges of that creamy coconut and warm fig-stuffed cinnamon raisin French sex toast?

But, you know, if you haaaaaappen to change your mind…here’s the recipe! 😉

Fig & Coconut Stuffed French Toast

Prep Time: 5-10 minutes

Cook Time: 10 minutes

Ingredients (Serves 1)

    For the French Toast

    • 2 slices of cinnamon raisin bread
    • 1 egg + 2 egg whites
    • 2 Tablespoons coconut-flavored Greek yogurt (I used Yoplait Greek)
    • 1/2 teaspoon coconut (or vanilla) extract

    For the Coconut-Fig Stuffing

    • 2 Tablespoons coconut-flavored Greek yogurt (I used Yoplait Greek)
    • 1/8 teaspoon cinnamon
    • 2 fresh figs, chopped

    For the Coconut Peanut Butter

    • 1/2 Tablespoon creamy peanut butter
    • 1 teaspoon coconut oil

    Instructions

    1. Heat a non-stick skillet to medium heat and coat with cooking spray, coconut oil, or butter.
    2. In a shallow bowl, whisk eggs together with the yogurt and extract.
    3. Soak each bread piece in the egg mixture before placing in pan and allowing to cook for 4-5 minutes.
    4. Flip and cook an additional 2-3 minutes.
    5. While the toast is cooking, combine yogurt and cinnamon.
    6. In a separate bowl, whisk together peanut butter and coconut oil until smooth.
    7. Heat chopped figs in the microwave on high for 10 seconds (optional).
    8. Place finished toast slice on a plate, spread with coconut yogurt mixture and figs, then top with the other toast slice.
    9. Cut sandwich in half and top with maple syrup, coconut peanut butter, and coconut chips (optional).

    2. Time to get our souls nice and dirty again?! And I thought you’d gone over to the good side once and for all after yesterday’s confessions. Sigh. Really, though, I’m glad you opted against that surefire boredom bringer ;).
      About that French toast: next time just get some [expired or not] silken tofu out for a vegan version and I’ll be over for breakfast. Or lunch. Or dinner.
      Not today’s breakfast but my latest creation yesterday was a vegan apple blueberry [sort of] bread pudding and that was pretty awesome.

      mouthgasm is right my friend, this is BEYOND delicious looking!! gosh I haven’t had a fig in who knows how long, but they are still one of my favorite things out there! and might I add that I think Im becoming more obsessed with your French toast recipes than I am your pancake recipes.             Aww, that’s a bummer! I think it’s soooo important to be careful saying you don’t like certain things around kids…I swear I wouldn’t eat anything green because when I was growing up because my dad is a veggie-racist! Haha!

              He is starting to get better and noticing it more. So that is good. She’s 8 (9 in Jan.) – that age where she wants to be like her parents/step parents and be noticed. I love it because now I can teach her all the baking and cooking (shes been my helper since she was 3) like my mom did when I was growing up and she loves it now that she really understands and has more big girl jobs.

              I am tempted to make these though because I think she would love it!

              Hey, it’s always worth a try…especially if you can get her in on the fun! We didn’t do a lot of cooking together in the kitchen when I was younger, but the times we did, I was always more excited to try it! 🙂

    21. OMG. I know we call you the Pancake Queen, but I seriously think you need to be upgraded to the Breakfast Queen. This looks like it belongs on the menu of a really cute little breakfast cafe! And your coconut PB idea? Genius. I was always jealous of you guys who can have coconut PB, but now I can just use your idea to make my own coconut almond butter! 😀

      Today for breakfast I had pumpkin banana oatmeal with almond butter and while it was pretty darn delicious, it pales in comparison to this!

      I’m eating breakfast right now which is eggs and muffins. BORRRRING compared to that masterpiece.

    24. Mouthgasm. That reminds me of a game that we played at the beginning of opening weekend last year for college. It was called fungasm and it was the most embarrassing yet humorous game I ever played. I’m sure there are directions online somewhere so I will not pass them on 😉

      Mixing peanut butter and coconut oil is a super smart way to not have to buy ANOTHER jar of nut buttery goodness. This opens a whole new realm of possibilities. (I just hummed the Campbells Possibility song just so you know..)

      Oh my gahhhhh- this sandwich us outta control…send me one?? Please and thank you! My breakfast involved 2% Greek yogurt with banana slices, blueberries, bran flakes and almonds. It was my first tone trying 2% (as opposed to 0%) and it certainly tastes very mouthgasmic- that extra bit of fat really help reduce the tangy flavor overall! No going back!

        Oh yes! 2% is the way to go when it comes to yogurt…the consistency can’t be beat and it’s SO much more filling! And now I want some blueberries! Ha!
