Or you know, just Wednesday…but go with me on this one…it deserves a bit of dramatism, becaaaaaaaause I made WAFFLES!!

If you’ve been around for a while, you know of my battles with Willy the Wafflemaker. If you’re new to these parts, let me just say the he and I have a very give and take relationship…as in I give everything I’ve got and in return, he takes all my confidence.

Yeah, you know that little bit of anxiety all us foodies get when cracking open an avocado…just praaaaaaying that we got a good one? Well, I get that same feeling whenever I lift the lid of my waffle iron. So obviously, when Kodiak Cakes, a company that makes all-natural breakfast and dessert mixes, contacted me asking about doing a review on their flapjack and waffle mix, I totally FLIPPED! 😉

I actually tried their whole wheat mix for the first time a few years ago and fell in love immediately with one of my favorite recipes, Easy Protein Pancakes! I still can’t believe a just-add-water mix can taste like it was made from scratch! Since I still wasn’t back to my pancake groove when these babies arrived, I decided it was time to muster up some courage and whip up a waffle! And much to my wonderment, it went well it came out FANTASTICALLY! 😉

I know, I know…I was just singing pumpkin praises yesterday, but when you still have half a pineapple to eat just days before you leave for vacation, it’s perfectly acceptable to slide back into a summer for a moment…plus, this is just my way of celebrating a certain someone who will be honeymooning at the beach this time next week! Congratulations, Melissa! I made you a waffle…but I eated it! 😉

Pina Colada Waffle

Prep Time: 2-3 minutes

Cook Time: 5-8 minutes

Keywords: waffle iron breakfast coconut milk

Ingredients (Serves 1)

  • 1/3 cup Kodiak Cake Flapjack & Waffle mix
  • 1/2-1 scoop vanilla protein powder (optional)
  • 1/3 cup coconut milk (plus 1-2 Tablespoons if using protein powder)
  • 1/2 teaspoon coconut extract
  • 1/4 teaspoon rum extract (optional)
  • Toppings: Coconut-flavored Greek yogurt, diced fresh pineapple, and dried coconut chips

Instructions

1. Plug in waffle iron and allow to come to temperature, coat with non-stick spray.
2. Combine all ingredients in a small bow and stir well.
3. Pour mix into waffle iron and cook according to manufacturer’s directions.
4. Transfer to a plate, add toppings, and be whisked off to your own tropical paradise…your cabana boy (or girl) will be with you shortly! 😉

I wasn’t feeling protein-powdery in particular (ha! bonus points for accidental alliterations…and AGAIN!) so I went without, but if your feeling perky, feel free to pack a little pump into your pina pa-waffle! 😉

These mixes are incredibly versatile and are just the ticket for when you want more of a gourmet feeling breakfast in the middle of a busy week. And, since they’re made only with ingredients you can pronounce, it’s a breakfast you can feel good about!

      Oh yes, I am a HUGE fan of multiple textures in a dish…hence the reason I’m obsessed with the coconut chips right now! Haha!

  4. Lately, I’ve been reallllly craving a wafflewich. Take two waffles, stuff some cheese, potatoes, and other delicious things between them, then press it all together in a delicious waffle sandwich. I know you’d approve ;).

      You had me at cheese! Gosh, it’s been forever since I’ve had a wafflewich, though my last one was a thing of beauty…pumpkin waffles, bacon, and chocolate sauce! Hashtag mouthgasm! 😉

I hear so many people raving about it AND i haven’t had waffles in about as long as i hadn’t had pancakes until i made yours! oops! i would top my pancakes with melted raspberries because i love raspberries muahahahaha or else i would do pumpkin because it seems as though i am a bit addicted these days 😉

    Haha I love that comment about cutting into an avocado- SO true!! The same goes for squash- I’m always praying its extra orange on the inside! These waffles sound insane- how am I only JUST hearing that rum extract exists??

      Omg girl, there are SO many extracts/emulsions out there that I never knew of until recently! Rum, butter, coconut, lavender…I even scored one at TJ Maxx a few weeks ago that’s cream freakin’ cheese! 😯

  17. Ohh girrllll~don’t do this to me! I seriously kind of want to get a waffle maker now–and this feeling has been slowly building up, haha. I love Kodiak cakes as they have such a perfect texture!

      It took me something like two years before I finally broke down and got myself a waffle iron…and I have to say, even with the waffle fails, it was the best $20 ever spent! 😀 And I couldn’t agree more….I’ve tried a lot of different mixes in the past, but none of them came out as fluffy/crispy as the Kodiak mix!

  21. SWEET MOTHER! I just checked the list of places to buy these beauties, and apparently Canada is on board! YES! I’ve been hearing amazing things, but keep forgetting to pick up a box when I’m down in the States. Putting that on a PostIt so that I don’t make the same mistake again. Best pancake topping?       Hmmm, I wonder if that’s something they would look into…especially with all the blog-love these things get! I promise that if I ever get the hang of making them ALL by myself, I’ll whip you up the fluffiest gluten-free waffle you’ve ever seen! 😉

  28. Rum extract? Wouldn’t plain ol rum be fine too? Or would that set the waffle maker on fire? 😉 I battle with my waffle maker too, but I think mine is the cheap Target $8 cousin of Willy, so even more disastrous possibilities.

    I haven’t had a good waffle in a looooooooooong time.

  35. dang chickadee, that looks awesome!! I’m very late to the waffle game as I just got a maker about a month ago. My kids LOVE the waffles I’ve been churning out, but they also sit there and stare at me because it only makes one at a time. The pressure!!

    The rum extract sounds gooood in this. I love me some rum. I mean, extracts. 😉

  38. I just tried my first box of Kodiak Cakes mix a few weeks ago and I loved it – I was so shocked at how good it tasted for a healthy boxed mix! I haven’t tried it as waffles yet, but I’ll have to do that next.

  49. I *love* these mixes, but it’s been forever since I’ve had them! I love putting mashed fruit on waffles or maple nut butter sauce on pancakes (mix maple syrup, a teaspoon of nut butter and milk of choice to a syrupy consistency).

  52. Well, I must say that I’m quite glad to know that I’m not the only one who must fight the waffle iron to get my fair share of breakfast. My waffles used to always resemble a pile of twigs. Thankfully, my mom got me some waffle plates for my panini press, and now I can make waffles that actually look like waffles!!!
    I love the tropical twist! Anything tropical is a win in my book 🙂 Now I just need a sunny, tropical beach to eat these waffles on… that’s only a flight away, totally worth it for one breakfast 😉

    My favorite pancake and waffle topping is to heat up frozen blueberries with vanilla, chia seeds, and a bit of cinnamon, a big dollop of greek yogurt, and a drizzle of almond butter. Holy yum!

  56. I love waffles but I always forget about making them, as I think they take too much time. My waffle machine is not the greatest and I get frustrated with it, too, thus it stays in my pantry most of the time!

    I’ve heard of Kodiak pancake/waffle mix but haven’t tried it yet. I’ll have to get a package the next time I head to the store. Peanut butter and honey is the best topping!

      Aww, they don’t take so long…dust off that waffle iron, girlie! And seriously, I’ve tried a lot of pancake/waffle mixes, but none have been able to hold a candle to the Kodiak brand! The consistency is perfect! 🙂

  57. Greek yogurt with waffles is AMAZING! Usually I get the fruit-on-the-bottom kind (like 0% cups of Chobani) and skim just the yogurt off without mixing. It’s not as sweet, so it’s like cream cheese almost, but fruity flavored 🙂 And still pretty thick like cream cheese! Then I take the remaining “fruit” at the bottom of the cup, add water, heat it up a little so it’s like warm fruit syrup and drizzle it on top. Yum! And of course toasted walnuts or almond slivers on top. It makes all the difference.

    Favorite waffle and pancake topping… Sunbutter mixed with cottage cheese and jelly!!! So, so good! 😉 on days I’m feeling less cottage cheesy, I opt for just plain sun butter or white chocolate peanut butter (PB&J Co)!
