Please tell me I’m not the only one who knows the PB&J song! I worked at a daycare when I was in high school and we’d sing this with the kids all the time…and yeah, I still catch myself humming it whenever I’m whipping up a sandwich! 😉

Seriously guys, I don’t know which was better, the actual ‘cakes or the fusion of flavors from the yogurt, cocoa, and peanut butter sauces! And with the crunch of peanuts and cacao nibs? Omg, I was in HEAVEN…for the whole 5 minutes these were on my plate! 😉

Peanut Butter Pumpkin Pancakes (GF)

Prep Time: 5 minutes

Cook Time: 10-12 minutes

Ingredients (Serves 1)

  • 1/4 cup oat flour (ground from gluten-free oats)
  • 3 Tablespoons peanut flour
  • 1 Tablespoon coconut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1/4 teaspoon cinnamon
  • 1 large egg white
  • 2 Tablespoons vanilla Greek yogurt*
  • 1/4 cup water (or milk)
  • 1/2 teaspoon maple extract (or vanilla)
  • 1/4 cup pumpkin puree
  • Toppings: Greek yogurt, healthy chocolate sauce, peanut butter sauce**, crushed peanuts, and cacao nibs

*Or omit and use 1/3 cup of milk (dairy or non-dairy) instead.
**Whisk together peanut butter with a little water (or milk) for a creamy sauce.

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. In a medium-sized bowl, combine flours, baking powder, and cinnamon and stir with a whisk to break up any lumps.
3. In a separate bowl, whisk egg white until frothy.
4. To the egg white, add yogurt, water (or milk), extract, and pumpkin puree and stir well.
5. Add wet ingredients to dry ingredients and stir until flour is incorporated.
6. Spoon batter onto skillet, forming three small to medium-sized pancakes.
7. Cook for 5-7 minutes before flipping and allowing to cook an addition 3-4 minutes.
8. Transfer to a plate and add desired toppings.

  1. Ah! I just had pancakes! AND the contained Yogurt (aka Quark, since I can not buy greek yogurt) – BUT no peanut flour BUT oatbran. Although, they clearly didn’t NEARLY look as perfect as yours, woooow, please, write a pancake book!! I’d buy it a hundred times to spread it here in Switzerland!!
    I just made a order at vitacost, and I ALWAYS order – be prepared – cooking spray. Haha, yes 🙂 no cooking spray here, but I LOVE it!

Welp… you know my thoughts on peanut butter 😛 Buuuuuut, you do make it look incredibly appealing… in that: “this’ll be the death of me” kind of way 😉 I honestly don’t think there’s anything that can take the place of peanut flour in a recipe… at least not in terms of consistency and nutritional value. Pesky peanuts.

    And pretty much the only foodie item I order online is my favourite tea from Harney & Sons. I manage to make it down to the States often enough to restock my stash with all the things that Canada lacks, but if I didn’t, then Justin’s maple almond butter would top my list. That stuff is a MUST for me.

  6. These look SO good! Minus the peanut flour… is there any alternative that you think would work as a replacement!?

    I don’t really order anything online, like ever. I don’t know why – I guess I just figure it’s too much of a hassle! Plus I can find pretty much all of my favourite foods in stores near me, with the exception of Barney Butter. But I just make sure to buy like 10 jars every time I visit the US!

      Haha! I always picture the clerk at the store giving you awkward looks while ringing all those jars! Jessie was asking about a replacement too…I’m thinking you could probably use regular flour + peanut butter (almond butter in your case…I will not have your blood on my hands!), but you may have to cut down on the liquid a bit OR add a little thickener to it (cornstarch, xanthan gum, arrowroot). I’d love to hear how they come out if you give it a try! I also think I’m going to have to sit down with all my pumpkin pancake recipes and see what new stuff I can come up with! 🙂

    Peanut flour is perhaps one of the most amazing flours out there- I literally order 2 of the large packs every iherb order and I order from iherb alot…oops.

    oh my gawd! I wrote you on fb – but please (PRETTYYY PLEASEEE) tell me I can use regular pb in this recipe instead of pb flour?

      Hmmm, I’m not sure…I would think it would work ok though. You might try replacing one tablespoons of peanut flour with regular flour and the other 2 tablespoons with protein powder to keep the same consistency. Please let me know if you try it! I already got some feedback from a reader who replaced the egg with flax…she said it still tasted great, but the consistency was a little “off”.

I never heard of it until Trader Joe’s announced that they were discontinuing it…then after one bag, I went back and bought five! Ha! I’m just glad I can get it from iHerb now because I seriously can’t imagine going without! You’ll love it…it’s so FULL of flavor and works great in gluten-free recipes! 🙂

But the comments I agree with most are the ones about you creating a pancake cookbook! I so think you should, it would be a glorious thing and I know that I and many many others would buy it.

    I sing that PB&J song almost every single day, for no apparent reason. My husband hates it! …for many reasons, but in part because Australians don’t eat PB&J, and it has a negative “this is what Americans eat” connotation. I continue to sing it anyway. 🙂

    These look so good! Yesterday I threw together a recipe with pumpkin puree, egg whites, oats, stevia, and cinnamon… cooked them up like pancakes and topped with bananas and greek yogurt! YUM!

    I would love to make these, but I’m wondering if PB2 is the same thing as peanut flour, or if I can replace peanut flour with the PB2?

      It’s REALLY close to the same thing…the only difference is the added salt and sugar. I would think it would work just fine to use them interchangeably! 🙂
