I’ve never quite understood the term food “rut”. I get bored easily so I don’t tend to eat the same thing day in and day out. Food PHASES on the other hand are a whole other story! I become so completely obsessed with a new flavor/combo that I will makeover ANY meal for weeks just to enjoy it even more. I’ve done it with beets, mangoes, and a certain candy bar flavor combo that still happens to be going πŸ˜‰ …just to name a few. So my latest phase should come as no shock…especially after last Sunday’s stack of mouth-watering pancakes!

pumpkin and peanut butter!

So obviously, when Laura one-upped my pancakes with her breakfast bowl of
Peanut Butter Pumpkin Pie Eggs, I just HAD to give it a go…

I made a few small changes to the recipe: 1 whole egg + two egg whites, mashed banana instead of pear mixed in and on top, and a drizzle of honey instead of stevia.

And until Saturday,
this was the most DELICIOUS thing I’d eaten all weekend!

Until I got the bright GENIUS idea to mix my new favorite flavor combo into my favorite bowl of VOLUMINOUS oat bran! And then, on a whim, I added a drizzle of blackstrap molasses to the bowl and I just about friggin’ DIED!

Same great taste, but with almost HALF the amount of sugars with a BAJILLION vitamins and minerals! Seriously, check out this article to read all about it! I’m sure you can find it at most health food stores, but surprisingly enough, I got mine at the co-op!

But back to some va-va-vaLUMINOUS oats! πŸ˜€

My trick with the oat bran is super simple…just double…or even TRIPLE the amount of liquid you would normally cook it in, pop it in the microwave, and watch it magically grow into a big bowl of deliciousness!

You can actually do this with oats too! Just be sure when applying this bit of breakfast magic, πŸ˜‰ that you use a BIG bowl (I use this one)…otherwise, you’ll have a mess to clean up!

Peanut Butter Pumpkin Oat Bran

Prep Time: 2-3 minutes

Cook Time: 6 minutes

Ingredients (Serves 1)

  • 1/4 cup oat bran
  • 1 1/2 cups water (or non-dairy milk, or milk alternative)
  • 1 teaspoon maple extract (or vanilla)
  • 1/2 teaspoon cinnamon
  • 1/4 cup pumpkin puree
  • 1/4 cup peanut flour (or 1 scoop of vanilla protein powder + 1 Tablespoon peanut butter)
  • Toppings: 1/2 teaspoon blackstrap molasses, crushed peanuts and hemp seeds

Instructions

1. Combine oat bran and water in a LARGE microwave-safe bowl, stir and microwave on high for 6 minutes, stopping to stir every 2 minutes.
2. Add remaining ingredients and stir to combine.
3. Transfer to a bowl, drizzle with molasses, add toppings and enjoy!

  6. Love molasses! So good with anything pumpkin-flavoured, for sure. I definitely go through phases with certain meals and flavour combos…I’ve been in my oats and eggs for breakfast phase for at least 6-8 months now! :-p

    I’ve been reading a lot about black strap molasses and have wondered what I should do with it if I were to ever purchase some. I am obsessed with all the fun labels. I recently purchased raw honey and pure maple syrup (Made in MI products) based on their labels. Sad..but true story. Now that all of my homemade canned pumpkin puree is done – I have no excuse!

    Seriously I never realized that about blackstrap! Ya learned me something today. I love that you threw that on your oats. I was just thinking I needed some more molasses in the pantry because I’ve been having thoughts of gingerbread on the brain.

  12. Mannnnn, it’s been forever since I cooked up some oat bran. I have some sitting in my pantry, but it’s been there for a while. I’d ask you if it goes bad, buuuuuut I don’t know if I can trust the advice of a girl who eats 1 year old tofu πŸ˜‰ I kid, I kid.

    You know, I’m not crazy about pumpkin oatmeal, BUT I -have- been craving molasses lately, and it actually sounds like a pretty fabulous combo. This is definitely a fall breakfast idea that needs to happen, stat.

  13. Ugh, you’re lucky. I fall victim to the food “rut” daily… I tend to eat the same things all the time because I’m too busy to come up with creative recipes, even if they’re easy. I just don’t like to think about it so I stick with that I know haha. And for some reason when I read the title I kept singing “ITS PEANUT BUTTA PUMPKIN TIME” in my head…. I need a nap, is it time to leave work yet?

      Haha, aww! I hope you get some good rest tonight, sweets! I know what it’s like to be so busy that it’s hard to carve out time for creativity, but have you thought about trying to food prep a bit on the weekend? You don’t have to go all out like some people do (actually, I have no idea how some people do it…or how they eat it all before it goes bad! Ha!) But even if it’s just a couple of things, it makes life SO much easier during the week! Or maybe try some overnight recipes?

    and man its been a while since I’ve done oat bran!! I think its about time I switch to it.   17. I didn’t even know there was a difference between molasses and blackstrap molasses… I just thought blackstrap sounded like a dominatrix.

    This looks so good – I had oatbran the other day to change up the oatmeal and the texture was so good- especially cold πŸ˜‰ I’m in a food utensil phase- e.g. tupperware. And food temperature phase- all food cold. Weird. Actually, no. #Strangebutgood πŸ˜‰

  21. I love molasses! I’m sure I’ve had the blackstrap kind… but I’m not sure! I need to go buy some and do a taste comparison now. And so that I can make this. Except I’d probably make it with oats just because I don’t feel like going out to buy oat bran. #lazy Oh and I’d have to replace the peanut flour with protein powder and soy nut butter or almond butter. Hmm, after all those changes I hope it will still taste similar to yours! πŸ˜›

    I’m in a little bit of a roasted carrot phase right now. The carrot dish I made at Thanksgiving was phenomenal! And I recently made another roasted carrot dish that I tossed in ginger, soy sauce, and maple syrup in the last 5 minutes of cooking. So good!

      Oh that sound carrot dish sounds great! You know, I always forget about roasting carrots! So good with a little warm coconut peanut butter drizzled over them…or uh, in your case coconut almond butter! πŸ˜‰

      And please, I know you and I have the same exploding pantry problem…do NOT go out and buy oat bran for this! #lazy? please…more like #smart! Lol! Oh you know what? I bet it would be great with the protein powder and some coconut butter! πŸ˜€

And oh my gosh, I went through a total raspberry phase too…right at the end of the season, I kept buying more and more before I was even done eating the ones I had at the time! Needless to say, my freezer is stocked FULL of those tart red little berries! Ha!

      Oat bran is a great change up from the standard oats…a lot like the texture of cream of wheat, but you can always use oats in this recipe too if you don’t have it on hand. I know how easy it is to have a pantry about to burst at the seams with buying new grains to try! πŸ˜‰

  27. I think food phase is my middle name or at least is should have been. That might be a little too wordy though. I go through phases based on cravings and also based on what I get in my food share, excluding the great bean madness, of course. Right now for instance, I’m getting loads of apples and eggs so those are my two current phases. I’m thinking they need to intersect soon.
    These pictures are incredible. They almost make me want pumpkin.
