…Well, I can’t help you with that, but I CAN give you some pancakes! Besides, you may want to take a minute to consider where all that sand will end up going! 😯

Pina Colada Protein Pancakes

Prep Time: 5-10 minutes

Cook Time: 8-10 minutes

Ingredients (Serves 1)

  • 1/3 cup oat flour (ground from rolled oats)
  • 1/2 scoop vanilla whey protein (30g scoop)
  • 1 Tablespoon coconut flour
  • 1/2 teaspoon sodium-free baking powder
  • 1 egg white
  • 2 Tablespoons coconut-flavored Greek yogurt
  • 3 Tablespoons water (or milk)
  • 1/4 teaspoon coconut extract (or vanilla)
  • 1/8 teaspoon rum extract (optional)
  • 1/4 cup diced fresh pineapple (bite-sized cubes)
  • Toppings: Thinned coconut-flavored Greek yogurt, fresh pineapple, coconut chips, and chia seeds

Instructions

1. Heat a non-stick skillet or griddle to medium heat and coat with cooking spray.
2. In a medium-sized bowl, combine flours, protein powder, and baking powder and whisk together to break up any lumps.
3. In a separate bowl, vigorously whisk egg white until frothy.
4. To the egg white, add Greek yogurt, water (or milk) and extract and stir to combine.
5. Add wet ingredients to dry ingredients.
6. Fold in diced pineapple.
7. Allow batter to rest for at least 5 minutes before spooning onto skillet, forming 3 small-medium-sized pancakes.
8. Cook for 5-6 minutes or until edges are crisp and golden.
9. Flip and cook for an additional 2-3 minutes.
10. Transfer to a plate, add toppings, and enjoy!

  3. Fact: the first thing that pops into my head whenever I hear that pina colada song is Shrek. Also a fact: I developed a random allergy to pineapple at the ripe age of 24 😯

      No way! That was about the time I developed my kiwi allergy! I still think it’s crazy…and now I’m thinking/missing my kiwi berries from this summer! 🙁

      Oh I know! That’s usually what keeps me from ordering a drink when I’m out…unless it’s happy hour of course, then it’s ON! 😉

  10. My favorite drink turned into a pancake!! You really are the pancake goddess, these sound amazing! I only have this special drink a few times a year, if i go on a vacation and it would be awesome to relive that amazing vacation feeling while eating breakfast!

    You leave me with pancake envy all the time. Best alcoholic drink- Soho with lemonade. Soho is a lychee liquor- so good!

      Ohhh, I’ve always wanted to try lychee! They’re so cool looking! Of course, I thought the same about dragon fruit and was sorely disappointed by that one! Boo!

      Haha! Sorry love, but I don’t want that kind of stuff on my conscious…you gotta take a break every once in a while…but these can just serve as a reminder of why those breaks needn’t be longer than a couple of days (read: if you ever stop blogging, I will HUNT YOU DOWN!) 😉

  16. Hahaha! I seriously think about that sand every time I hear that song. And honestly, Steve and I have heard it the last few times we’ve road-tripped! We laugh and bust out singing. Aren’t the lyrics just terrible?
    It’s basically, I’m so board with my old hag and so I’m gonna run off with someone else…oh she had the same idea?…how funny, I guess we’re perfect for each other!

    How’d you know that pineapple and coconut were my absolute favorite?! Ok, so that’s not completely true considering I also love chocolate/PB, coconut and bloobs, bloobs and lemon, chocolate and pumpkin, chocolate and strawberries…..ok I think you get it now. I have a lot of favorites 🙂 BUT pina coladas are in fact my favorite alcoholic drink. Well, they would be if I drank. bahahahaha
