While last week I was all about sporting a winter glow (and still am), this week I thought I’d share ANOTHER food rut phase that’s actually been ongoing for the last couple of months. You see, in between mountains of sandwiches and getting punny with nut butter, there’s been another food love in my life which ended (for now) with this little stroke of genius…

Greek Quiche for One

Prep Time: 5-10 minutes

Cook Time: 30 minutes

Keywords: bake breakfast entrée gluten-free dairy-free high protein vegetarian eggs quinoa Greek

Ingredients (Serves 1)

  • 1 large egg + 2 egg whites
  • 1 Tablespoon unsweetened almond milk
  • 1/8 cup cooked quinoa
  • 2 Tablespoons chopped marinated artichoke hearts
  • 1 Tablespoon finely diced red onion
  • 2-3 pitted Kalamata olives, sliced
  • 1-2 Tablespoons crumbled feta
  • 1 Tablespoon chopped fresh parsley + more for garnish
  • 2 cherry tomatoes

Instructions

1. Preheat oven to 350°F, coat a small oven-safe baking dish or ramekin with cooking spray and set aside.
2. Whisk egg and egg whites in a small bowl.
3. Add remaining ingredients, stir, and transfer to baking dish.
4. Place in oven and bake for 30 minutes or until top and edges are crisp and brown.
5. Garnish with chopped fresh parsley.

I’ve made this baby THREE times…eaten with a side salad, eaten in the car, and even eaten cold because I’m too lazy to walk to the break room at work to use the microwave and it’s been amazing every time! Seriously, you’ve GOT to make this!

And if Greek isn’t your thing (for shame!), then throw in some other random veggies…but please, just don’t skip the cheese! 😀

  1. I LOVE olives, they are delicious!! I used to laugh at my sister when she drank the olive brine as a kid…now no shame I sometimes do it too. Mmm salty!

    This quiche looks delicious, I’d make it sans Quinoa since it doesn’t agree with me. I also love the Eggs in a Jar idea, I hadn’t seen it before!

      Heck yeah, ANYTHING in a jar! I’m still a little upset with myself for forgetting to try ice cream in a jar before I cleared out my nut butter stash…now THAT has got to be the epitome of a bittersweet treat! Lol

      Omg, that reminds me of my dad…he loves to drink pickle juice! I just don’t think I could do it!

  3. If greek isn’t your thing pssssht. I OWN Greece. Well not actually but I could demolish greek food in a record amount of time. As I would DEFINITELY do with this quiche. But I’m going to have to double the recipe because my stomach has been a monster lately and I have no intention of messing with it. A side of cornbread too. Only because I’m officially addicted and cannot stop!

    I adore olives, but only the black ones! Im actually not even sure Ive tried the green ones before…
    And seriously girl, you make me feel so plain and boring with all your creative foods! Ive never tried quiche either, although I have been tossing around the idea of making one for a family brunch soon 🙂

      Aww, thanks girlie! But believe me, the creativity only comes in spurts…this week has been full of the same bowls of yogurt all week. Ha! But seriously, quiche is the best! They are perfect for family get togethers…and a great way to get picky eaters to eat more veggies…as long as there’s enough cheese that is! 😉

  7. I can’t even remember the last time I had quiche…I don’t think I’ve ever made my own before! There’s a market near me that has a cranberry and brie quiche that’s pretty fabulous, so I used to go for that once in a while. You may have inspired me to try making my own though! 😉

      Cranberry and brie?! Omg, you may have just inspired ME! I’ve never tried making a quiche with fruit before! Oh wow…the ideas running through my head right now!

  12. I’ll be forever amazed how you can make a non-salad eater like me feel attracted by pictures of those. Wheatberries are one of my favourite grain(s) and the whole mix looks deeelightful. How many more times do I have to repeat it: Deeelivery service, pretty please!
    As you know [and please don’t hate me for] I don’t eat eggs but everything else sounds perfect about that quiche. And we all know the miracle that is silken tofu and has found its way into many an ‘eggy’ vegan dish on my blog … Olives for the win, by the way. But the green ones at best. I may or may not go to the fridge for a little salty snack of those after finishing this comment. Aaand done.

  13. For a hot second I thought that was eggs in a nut butter jar with cheese. Thank goodness reality is much better and more delicious! Although sweet eggs in a jar have been done before and they looked good…. Salad and cheese and eggs in white chocolate almond butter? (<<< What I thought the hummus was before reading the label! Ha…) Not so much.

    From the picture I thought this was totally going to make a huge serving but I'm happy to see the "for one" add-on. Sounds simple and amazing.

      Hmmm, yeah that might even be past MY limits of strange there! Haha! I’ve totally done the sweet eggs in a jar, but I’ve just never thought cheese and nut butter should go together. And for the record, I HAVE tried it…anything once, right? 😉

  15. As a fellow Greek food lover, this seriously looks awesome to me! And I actually used to hate olives as a kid, but I love them now. Greek food just isn’t the same without them. The best thing I’ve eaten this week was probably sushi on Friday. I thought of you, of course! 😉

      Bahahaha! Hell yeah, this is a protein POWERHOUSE!! It has like, negative carbs! You can actually FEEL the fat leaving your body as you eat breakfast…it kinda tingles!

    YUM! I’ve made something similar in the past and can vouch for its deliciousness- love the addition of quinoa!! Is it weird that I like black olives but not so much green olives? Shame on you for picking them off your pizzas- that might be my favorite way to eat ’em ;)! And just for the record- *any food* in a hummus jar is GENIUS, my friend!

      Actually, I keep trying them, but I just can’t seem to like green olives the same as black ones…umm, does that mean I’m an olive racist?

    You had me as soon as I opened your post. GREEK QUICHE FOR ONE????? Nommers! And the I spied the photos and totally knew I had to make it as soon as possible. You are the best, Heather! Btw: Black olives have been a family obsession since I was a kid. During the holidays we “kids” would have olive wars, seeing who could get the first olive of the family meal and who could eat the most. Needless to say my mom and eldest sister in law had to keep the cupboards well stock. And when I got older and found Kalamata olives, my life was not the same. Don’t get me wrong, green olives are good too, but a great, briny black olive will always make my heart skip a beat.

  21. I have not been feeling the eggs at all lately. My tummy hasn’t liked them the last couple time I’ve had them and I haven’t craved them in months. That being said, this quiche still made me drool all over my keyboard. I’d call that a recipes success.

      Haha, well that makes me feel pretty darn good! I went through a little phase where I was completely turned off by egg yolks (I know, crazy right?) but luckily it only lasted a month or so. I hate to hear they’re causing you tummy troubles though…that’s no fun! 🙁

But the best thing I ate this week would be a toss up between an egg and sausage sandwich I ate earlier this week and a pasta sauce I also made. Hmm… I think the egg sandwich just tips it because that was a damn good sandwich haha

  25. Yummmmmm! This looks so good! The best thing I’ve eaten this week was my first bowl of oatmeal back home in Australia! In Bali it was rice rice and more rice so my first meal back home was a big bowl of oatmeal smothered in PB (which I also hadn’t eaten in over a week!). It’s the little things!
