Seriously, this smoothie rocks my socks…my blue, fuzzy, woolen socks! You know, the ones I have to wear each and every time I want to drink this…along with my baggy sweat pants, my oversized robe, and the “decorative” blanket from the back of the couch. Well, unless I’ve just come back from hot yoga.
Then I sit outside with it…in ma birfday suit! 😉
But that’s cool too, because you know what? This smoothie doesn’t judge. Nope, this smoothie is part of the new age movement…the one where ALL us ladies get to spend the day lounging on velvet couches, or sprawled out naked on our back porch*, and feeling like princesses.

Because I swear to you, each time I take a sip of this silky smooth, decadently delicious smoothie, I feel like all the world melts away, I’m teleported to a castle perched high on far away mountain, and I’m pretty sure I can hear Prince Charming calling my name…
“Heather! Heather! I have more shoes for you to try on!”
Oh yes, I like this game.
Beautifying Beet Smoothie

Prep Time: 5-10 minutes
Cook Time: N/A

Ingredients (Serves 1)
- 1/2 cup cottage cheese
- 1/2 medium raw beet, cut into smaller pieces
- 1 handful raw beet greens/stems
- 1/4 medium avocado
- 1/2 medium banana, frozen
- 1/2 cup unsweetened almond milk
- 1 Tablespoon cacao powder
- 1 Tablespoon maple syrup (or other preferred sweetener)
- 1/2 teaspoon cinnamon
- 4-5 ice cubes
- Cacao nibs for garnish
Instructions
1. Combine all ingredients in a high-speed blender and process until smooth.
2. Transfer to crystal goblet (because duh, that’s what princesses drink out of!) and top with cacao nibs!
So grab you a blender, toss in a few beets, and listen for your prince. Then go shoe shopping…online, because clothing is still optional!

So i have to admit that I’m a little afraid of working with raw beets (because i’m afraid I’ll end up with a permanently pink kitchen) but I might have to get over this for this smoothie. Because 1. it looks amazing and 2. if I eat/drink spring-y foods maybe that’ll make spring get here sooner?
1. It IS amazing and 2. Heck YEAH!! Don’t be skeered of the beets, mama! Just don’t wear white and work close to the sink! Oh and wash your cutting board with soap and water IMMEDIATELY! But really, other than my hands getting a little pink while peeling them, I think it’s a lot easier to plop them into a smoothie raw then trying to work with the slippery little buggers after cooking! Ha!
Ohhhh… with the beet greens too! I love it. Totally going to drink this post-workout tomorrow. Sans pants. Coming for glute day? 😉

All about the beets these days 🙂 I’ve grown to love em! Any suggestions for a non-dairy alternative for the cottage cheese in this?
ActuallEEEEEEEEy…I have a vegan variation of this recipe going up this week, because I was curious myself! I’ve played around with some of the spices/additions too, but the main switch was 1/2 cup of firm tofu in place of the cottage cheese! Workd BEET-ifully! Sorry, I couldn’t resist! 😉
Ahhh I need to make more things using beets! You inspired me again. This is a BRAVE smoothie though. I do like beets in my juice but haven’t tried it in smoothie… maybe, maybe I shall..
If you like beet juice, then you’re already there! Most people are just afraid of the flavor of beets, but honestly, in this smoothie, I don’t think that “earthy” flavor they tend to have is very strong…must be the addition of the avocado kinda balancing it out. Now THAT is what a smoothie is all about…creamy avocado buttery goodness! I can’t believe I forgot how much a difference it makes! Not sure I’ll be making a smoothie again soon without it! 🙂

It REALLY would! I know beets aren’t really for everyone, but I honestly think their somewhat “earthy” flavor (which a lot of people tend to shy away from) isn’t as pronounced in this smoothie. And oh my gosh, the creaminess! I can’t believe I forgot how much I love avocado in smoothies…makes a HUGE difference!

Never? As in never ever?? Oh girl, they are definitely worth a try! I know they’re not for everyone though…I think you either love ’em or hate ’em! But in this smoothie, the “earthy” flavor that most people aren’t really down with, isn’t overpowering. And seriously, the creaminess can’t be BEET! Sorry, I had to! 😉
Darling, you know how I feel about beets, but this little gem? Oh I’m quite certain I can handle this little thing! All I have to do to the beets is dump them in the Vita?! Even I can’t mess that one up!! LOVE the addition of avocado as well. Can you believe Ive never added avocado to a smoothie? I know…shame on me…
Oh girl, you MUST try it with avocado! I swear, there is just NO comparison to the creaminess that it lends! Actually, the last time I made this smoothie, I completely forgot the avocado! Once I took a taste, I was like…no, something’s missing here! Yeah, I totally threw that thing back in the blender with the avocado! Haha! Doooooo it! 😉

This intro is perfect. Short, sweet, with a side of sass and a lot of funny. The pictures are stunning too, and you know how I like to drink my beets. It’s my favorite way to consume them. Plus they’re great for your liver, which counteracts all that delicious wine you’ve been drinking. Well done my friend.

I am not a beet fan but I could get on board with this smoothie sans beet but it may defeat the purpose too much.
Honestly, the beet flavor isn’t really pronounced in this smoothie much at all…I think the banana and the avocado help to balance it out well because I didn’t get any of the classic “earthiness” that’s typical in anything with beets!
