That’s right folks, the pink lady is BACK!

I couldn’t help myself last week while I was sipping on glass after glass of princess nectar and practicing my newfound love for winter exhibitionism…I just had to see how it would taste with a little vegan spin on it!

Oh ok, you got me…I totally ran out of cottage cheese! But I DID have a package of my favorite extra firm tofu from Trader Joe’s that was only two MONTHS out of date!

See, I’m getting better! ;)

I also decided to mix things up a bit and added some grated ginger which I thought gave it a little  “ohhh, what IS that?” flavor. Yet another reason fresh ginger reigns supreme!

The thickness and creaminess of this version is just as great as the original and it still only takes MINUTES to make…unless you forget the avocado on the first go-around, spill the carob powder, and then have to pick out a piece of spoon from the bottom of the blender…

Wait, whaaaaaaat?!

  1. Beets make everything so purdy. I’ve actually switched to using beet powder because it’s less messy and lasts for friggin ever!

And channeling Meghan who always gets music stuck in my head, my fav “Beat It” cover ;)

I already love Fall Out Boy but that was friggin AWESOME! Especially since they got a Buster Bluth cameo out of it toward the end! #priceless

  2. Oh and PS, I’ve done that with my tamper on my Vitamix. For some reason I didn’t put the lid on, but stuck my tamper in. DOH. They were actually kind enough to send this dumbass a new one for free ;)

  3. I want now!!! ;-) These smoothie looks amazing and I love the color too! I think putting beets in a smoothie is genius. I’m not a fan of beets, but in a smoothie, I’m sure you don’t even taste it.

  4. What a pretty smoothie! It sounds delicious too!

  5. Boom! I am all over putting tofu in smoothies. It’s how I get creaminess AND added protein in my carrot cake smoothie. Beet will be up next! The beet goes on…

  6. Beets make the prettiest smoothies!!! And yay for tofu! I LOVE when I see it thrown/hidden in tasty treats :)

  7. That is one gorgeous looking smoothie ;) and it’s going to make ME glow too? win win! Happy Friday, Heather!

  8. Looks great girl! I love using blended up tofu for things like smoothies and puddings!

Oh gosh, I’ve definitely had problems in the kitchen like that before! Just this week I spilled my oats all over the floor. :P

  9. Spoon, tofu, beets and carob all in one smoothie. You really are the strangest human being. I’m proud to call you my friend :)

  10. It’s.. beautiful.

I would’ve never thought to put an avocado in a smoothie! There is always a first time for everything. :)

    • kissmybroccoli says:

Oh my gosh, girl, it makes such a difference! Just like adding a spoonful of nut butter to a smoothie…the creaminess is insane!

  11. I’m quite excited to see what your next trending food product will be…..currently it is clearly beets haha. Maybe it will be something random like parsnip salt or apricot salsa.

I am still yet to try avocado in a smoothie, so I may head down that route first before trying that WITH a a beet!

    • kissmybroccoli says:

Oh yes, the seemingly never-ending foodie fixations I have! Haha! The avocado seriously makes a HUGE difference…you’ll love it!

PS, I had scrambled eggs and toast with butter and Vegemite for breakfast yesterday…and of course I thought of you! ;)

The fact that you changed Laura’s icon with a new hair do makes me love you and this recipe even more

  13. Gorgeous dah-ling, gorgeous.
I channeled my inner broccoli this morning when trying to photograph my newest granola creation. I googled similar recipes to inspect their photos (didn’t like them) and then set about taking my own, while remembering to tell a story. Needless to say, you were in my head this morning. Next time, I’d like you to come bearing this, just don’t tell me about the tofu.

Wow, that’s some stunning beet smoothie! Aren’t hemp seeds pretty?! I love the “beet it!!” lyrics! Hehe!
