Marvelously Wedded and Totally Sconed

First off…HAPPY MONDAY!!

Secondly, puh-leeeeease forgive me for getting so far behind on the blog. While I always look forward to reading each and every one of your beautiful comments, this weekend, I felt it was time to take a bit of a break…

MeIf you follow me on Instagram and Twitter, you may have seen that I announced on Friday afternoon that I would be taking the next couple of days to unplug.

Well, that had EVERY bit to do with the fact that the man-friend and I have spent hardly ANY time together over the last few weeks (thank you Mr. Peg Leg!) and a LITTLE bit to do with this…

Seriously, there was SO much going on this weekend that it is just TOO much for one post, so I decided to just focus on the best of the best of the BEST…for today. Oh yeah, you better BELIEVE I’ll be raving about this weekend in the coming days/weeks!

Marvelous Wedding

Besides just being able to spend time with the man-friend, catching up with each other, enjoying the sun, the farmer’s market, and even some motorcycle riding, if I had to pick the MOST marvelous thing from this weekend, the one that “took the cake” (tee hee!) if you will, would be his friend’s wedding we attended on Saturday night! It was an absolutely BEAUTIFUL ceremony held at the Union Station Hotel with a small group of friends and a reception (and dinner) that was…

OUT.OF.THIS.WORLD!

We started with hors-d’oeuvres of assorted cheeses, crackers, and fruit, honeydew melon with proscuitto, Greek-inspired artichoke-topped crostinis, and the best ceviche I’ve ever tasted in my life…and that’s saying something since this was like my SECOND time having it! 😉

After nibbling and mingling for a bit, it was time for dinner…

I had pre-selected the halibut dish while the man-friend decided to go with the steak. Both were amazing, but FIRST, let’s talk about that salad…

Poached Pear Salad with GorgonzolaMixed greens including the bitter frisee (which I usually don’t like), tender poached pears with cinnamon spice, candied walnuts, sweet mandarin oranges, dried cranberries, and mine AND the man-friend’s serving of gorgonzola cheese!

The man-friend is in no way a fan of bleu cheese and I’ll be honest, I’ve never thought of myself as a lover of the stinky stuff…

Wedding Halibut

This was actually the first time I’d had halibut in over 10 years! I don’t know why, but it’s never really a fish I think to prepare at home….again, until now! I didn’t really care for the fried potato-cake topper, but the fish itself had a hearty consistency (almost like meat) and I swear to you, it tasted straight up like BUTTER! The veggies were crisp yet tender and the beurre blanc (basically butter sauce) was seasoned to perfection! And I thought it was a nice touch that they garnished the plate with a bit of roe.

The man-friend’s filet mignon was the epitome of a well-served steak…a slight chew on the outside, yet melt-in-your-mouth, ohmigod-I-don’t-even-have-to-chew-this consistency on the inside. It was topped with crispy fried onions and served with steamed patty pan squash, zucchini, carrots, and a thick and creamy portion of garlicky whipped potatoes all drizzled with a gravy that was practically* LICKED from the plate!

*That IS why they served us dinner rolls, no? 😉

a bit of bubbly?

I’ll be honest, I’m not a big cake fan since they are normally too sweet for my tastes and this one was no exception…but don’t worry, the man-friend took care of that while I focussed my attention on how to get bubbles to go straight to my brain! 😉

The rest of the night was FULL of singing, dancing (although my sad contribution was a few shoulder sways and some jazz hands), and otherwise, just practicing the art of marvelosity! 😉

But as for the second part of this title, and perhaps the REASON this weekend was so great, has to do with a little Friday afternoon baking…

Marvelous SconesFor COOK series of Heather’s MMAZ link up from last week, I had quite the selection of avocado recipes to choose from…

While I kinda wanted to make my Avocado Cabbage Sushi again (#noshame), I figured the fact that I just happened to have bought a blood orange the day before Laura posted her recipe for her Blood Orange Avocado Scones was clearly a sign.

And well, I’ve never been one to fight destiny! 😉

Although I couldn’t help but make a few tiiiiiiiiiny changes…I used almond extract in place of the vanilla butter and added about 1/2 cup dried cranberries to the batter!

Just so you know, I was texting Laura as I was making these…

Confessions of a Pancake Queen: The Superhero Edition

Alright my pancake-lovin’ kiddos!

You’ve got your tools…

You’ve got your flowers flours…

Now it’s time to learn how to make your pancakes FLY!!

Bahaha! <- Sorry, tried to keep a straight face but I can’t! 😆

Ok, so mayyyyybe they won’t exactly FLY…unless you have some sort of arm spasm mid flip and end up sending one across your kitchen…but then, well, then you’ve got bigger problems…you should probably see the doctor about that.

Moving on…

First up, how to make your pancakes fat phat fluffy fluff-aaaaaaaaay!

Baking Powder…aka “the ability to cause others to quote Pixar films”

Forget all that confusing mumbo-jumbo about the trifecta of leavening…baking powder, baking soda, salt…the only thing you need is baking POWDER!

In the beginning, I used to think if I didn’t have all three, I would end up with pancake flatter than well…a pancake, I guess! 😉 Then I realized that I could use MORE of ONE with even BETTER results!

For every serving, I typically use 1/2 teaspoon of baking powder. 

And if you’re concerned about the sodium content of your pancakes, you’ll be happy to know that baking POWDER has about a third less compared to baking SODA, but if that’s not enough for you, they also sell a sodium-free version that you can find at Whole Foods or order online from here. <- Great website for healthy foodstuffs! 😀

Another big contender in fluffability…

Eggs

But only if you employ one of the best superhero kitchen gadgets of all time…

Whisk

The dual-action not really-automatic whiskometer!

Allow me to demonstrate…

But you don’t HAVE to have a fancy dual-action not really-automatic whiskometer to make super flufftastic pancakes. Feel free to use whatever whisk you currently have….just know that I’m going to have about a bajillion times more fun with mine than you are with yours! 😉

So yeah, take your boring ol’ whisk and beat your eggs (or egg whites) like they just stole an old lady’s purse until light and frothy before handing them over to the cops adding them to your batter.

But if you happen to have an aversion to violence eggs (or anything that has a mother) being in your pancakes, then there is another way to achieve fluffulous pancakes…

DIY ButtermilkThe Dynamic Duo: Captain Milk Me Not and Miss Vine-a-gar!

Otherwise known as homemade buttermilk.

For every 1 cup of milk (or milk substitute), add 1 tablespoon of vinegar and allow to set for 3-5 minutes.

Oh and a quick math solution for you guys, that would be 1 teaspoon of vinegar per 1/3 cup of milk! 😀

You CAN use “buttermilk” in recipes WITH eggs…it gives the cake more of a buttery taste. I just have had really good luck in the past using it in my vegan pancake batters so it’s kind of my go-to. Some say you should use baking soda to work synergistically with the acidity of the buttermilk for a full rise, but honestly, I’ve never really seen much difference.

And while we’re on the topic of milk, FYI, having LESS liquid in your pancake batter will produce a thicker/fluffier result (the more liquid, the more your batter will spread once it meets the skillet).

So once you have your cakes good and fluff-tabulous, you’re ready for the add-ins…
OR you break into a science lab, shake some beakers around, and enhance the genetic makeup to produce real…LIVE…

Protein Powder

SUPER HUMANS PANCAKES!!

Or you could just maybe go to the store and pick up some protein powder…whichever works for you! 😉

Word of caution: Not ALL protein powder is created equal!

One “scoop” for one brand may be two scoops for another! That’s why I always list the weight in grams of the protein powder I chose for my recipes. Just be sure to take a look at the nutrition label of the power POWDER you’re working with!

Also, a little note about ratios…unless you enjoy nibbling on pancakes that taste like a cross between slime and an actual superhero figurine (aka, ABC gum), try to stick to a 2ish:1ish ratio of flour to protein powder. 😀

Strange But…STILL Strange!

It’s no secret…I’m a bit strange when it comes to food. And the MAIN reason for my strangeness?

SHEER CURIOSITY!

Whether it be random flavors I pick from the fridge or testing out a “famous” combo,
I just HAVE to know…

It may be strange, but is it GOOD???

A few weeks ago, the man-friend and I conducted an experiment…

But can you blame me? The entire pack was only TWO DOLLARS!!

And I just HAD to know!

Sriracha Lay's

First up, the Sriracha…

They tasted kind of like ketchup, kind of like barbecue sauce, and well, like sriracha! I’m a total spice wimp (if I actually use sriracha on anything, it is like a tiiiiiiiiiny little drop on a plateful of food and even then, sometimes I get heartburn) so these were obviously pretty spicy to me.

They weren’t overkill, but let’s just say I wasn’t objecting when the man-friend said he was taking the other bag home with him! 😉

Next, the Cheesy Garlic Bread…

Or maybe I should say,

Cheesy GARRRRRRRRRR…*hack*phlegm*hack*…LIC Bread?

Seriously, these were like pure garlic powder! After a couple more chips, the flavor sort of mellows out a bit so you can taste a bit of cheesy flavor, but neither of us were really fans.

Chicken & Waffle Lay'sAnd finally, the Chicken & Waffles…

Now I know most of you wouldn’t even CONSIDER trying this, but I basically grew up eating fried chicken dipped in honey and well, if you think about a certain pair of golden arches and their affinity for sour yet sweet sauces, then you can understand the pairing.

That being said, having both HAD chicken and waffles before, we were a little disappointed in these. I’m not really sure what I was expecting, but this is what I got from it…

It was buttery (and probably the greasiest freakin chip ever!), with a few savory flavors like garlic, rosemary, and maybe a little parsley and then there was a faint hint of maple.

So when it comes down to it, what flavor would I “vote” for?

Well, I can’t really go by taste, but if I were to judge them based on how well they matched up with the authentic flavors, I’d have to go with the sriracha!

And the man-friend says…

“Mmmmmm…oh yeah, yep…mmmmmm”

😉

Oh and can I just say, I NEVER could have conducted this experiment before giving up calorie counting…I would have had to break out the scale and the calculator so I knew exactly what size portion I was having! Gah, it feels SO good to be FREE!

If you could create any chip flavor, what would it be?
