Marvelously Wedded and Totally Sconed

First off…HAPPY MONDAY!!

Secondly, puh-leeeeease forgive me for getting so far behind on the blog. While I always look forward to reading each and every one of your beautiful comments, this weekend, I felt it was time to take a bit of a break…

MeIf you follow me on Instagram and Twitter, you may have seen that I announced on Friday afternoon that I would be taking the next couple of days to unplug.

Well, that had EVERY bit to do with the fact that the man-friend and I have spent hardly ANY time together over the last few weeks (thank you Mr. Peg Leg!) and a LITTLE bit to do with this…

Seriously, there was SO much going on this weekend that it is just TOO much for one post, so I decided to just focus on the best of the best of the BEST…for today. Oh yeah, you better BELIEVE I’ll be raving about this weekend in the coming days/weeks!

Marvelous Wedding

Besides just being able to spend time with the man-friend, catching up with each other, enjoying the sun, the farmer’s market, and even some motorcycle riding, if I had to pick the MOST marvelous thing from this weekend, the one that “took the cake” (tee hee!) if you will, would be his friend’s wedding we attended on Saturday night!Β It was an absolutely BEAUTIFUL ceremony held at the Union Station Hotel with a small group of friends and a reception (and dinner) that was…

OUT.OF.THIS.WORLD!

Wedding Hors d'oeuvres

We started with hors-d’oeuvres of assorted cheeses, crackers, and fruit, honeydew melon with proscuitto, Greek-inspired artichoke-topped crostinis, and the best ceviche I’ve ever tasted in my life…and that’s saying something since this was like my SECOND time having it! πŸ˜‰

After nibbling and mingling for a bit, it was time for dinner…

Wedding Menu

I had pre-selected the halibut dish while the man-friend decided to go with the steak. Both were amazing, but FIRST, let’s talk about that salad…

Poached Pear Salad with GorgonzolaMixed greens including the bitter frisee (which I usually don’t like), tender poached pears with cinnamon spice, candied walnuts, sweet mandarin oranges, dried cranberries, and mine AND the man-friend’s serving of gorgonzola cheese!

The man-friend is in no way a fan of bleu cheese and I’ll be honest, I’ve never thought of myself as a lover of the stinky stuff…

Wedding Halibut

This was actually the first time I’d had halibut in over 10 years! I don’t know why, but it’s never really a fish I think to prepare at home….again, until now! I didn’t really care for the fried potato-cake topper, but the fish itself had a hearty consistency (almost like meat) and I swear to you, it tasted straight up like BUTTER! The veggies were crisp yet tender and the beurre blanc (basically butter sauce) was seasoned to perfection! And I thought it was a nice touch that they garnished the plate with a bit of roe.

Wedding Steak

The man-friend’s filet mignon was the epitome of a well-served steak…a slight chew on the outside, yet melt-in-your-mouth, ohmigod-I-don’t-even-have-to-chew-this consistency on the inside. It was topped with crispy fried onions and served with steamed patty pan squash, zucchini, carrots, and a thick and creamy portion of garlicky whipped potatoes all drizzled with a gravy that was practically* LICKED from the plate!

*That IS why they served us dinner rolls, no? πŸ˜‰

Wedding Cake & ChampagneAnd of course, WHAT would a wedding be without some cake and
a bit of bubbly?

I’ll be honest, I’m not a big cake fan since they are normally too sweet for my tastes and this one was no exception…but don’t worry, the man-friend took care of that while I focussed my attention on how to get bubbles to go straight to my brain! πŸ˜‰

Wedding CakeBut seriously, can we just appreciate the beauty of this thing? I was IN LOVE with the bride’s color scheme!! πŸ˜€

The rest of the night was FULL of singing, dancing (although my sad contribution was a few shoulder sways and some jazz hands), and otherwise, just practicing the art of marvelosity! πŸ˜‰

But as for the second part of this title, and perhaps the REASON this weekend was so great, has to do with a little Friday afternoon baking…

Marvelous SconesFor COOK series of Heather’s MMAZ link up from last week, I had quite the selection of avocado recipes to choose from…

While I kinda wanted to make my Avocado Cabbage Sushi again (#noshame), I figured the fact that I just happened to have bought a blood orange the day before Laura posted her recipe for her Blood Orange Avocado Scones was clearly a sign.

And well, I’ve never been one to fight destiny! πŸ˜‰

Although I couldn’t help but make a few tiiiiiiiiiny changes…I used almond extract in place of the vanilla butter and added about 1/2 cup dried cranberries to the batter!

Just so you know, I was texting Laura as I was making these…

    Never baked with avocado but I have used apple sauce and chia seeds mixed with yoghurt as a substitute for eggs/butter before and it works well πŸ™‚

  4. Never excuse for unplugging when having such a fantastic time – as long as you don’t leave forever, that is :D. I’m super happy to hear you and the man-friend finally got to spend more time with each other again. Weddings are always special and the one you attended sounds and looks just perfect.
    Oh, by the way, Jazz Hands are totally fine with me. Even being able to move my whole body these were the only thing my teacher appreciated of when I took Jazz Dance in school. Dancing klutz right here? Well, let’s not talk about it ;).
    Regarding baking with avocado the brownies I mentioned before still remain the only time I did so far. But the buttery flavour is definitely awesome.

Besides, who would laugh at all my corny jokes? πŸ˜‰ The wedding was absolutely amazing…and the weekend as a whole was one of the best I’ve had in a while! It was good to finally be able to get out of the house and move around a little since my surgery! And while I would have LOVED to be up there dancing along with everyone else…actually, with what I refer to as dancing, I’m probably better off with the jazz hands! From one klutz to another, I totally understand! πŸ˜‰

  6. Ok, FIRST OFF (just as you started this post) LOVE THE TITLE! I just can’t get over “totally sconed” hahahahahaha you’re amazing and oh so creative πŸ˜‰ I SERIOUSLY LOVE IT. My titles are same gosh darn lame hahahahaha! YIKES!

    Well, I just cannot tell you how happy I am for you that you unplugged! I really missed chatting with you throughout the day, but I know you needed this time πŸ˜€

    I love that they used roe on your halibut plate, too! I love halibut and you’re so right – buttery! I had swordfish this weekend. I pan fried in and it turned out amazing. I love swordfish so much and saw it at the market, so decided to treat myself πŸ˜€

    I think if I went to the wedding I would have ordered the steak, though πŸ˜‰ mmmmmm

      Oh how I love swordfish! I’d only had it once in my life (on vacation a few years ago) until I tried making it myself a few months ago…so crazy that it tastes exactly like butter! I’ve already decided that the next time I make a WF’s run, I’m totally scoping out the fish counter for some halibut!

      And I’m usually not much of a steak person, but omg this one was to DIE for!

    Ah, what a WONDERFUL weekend you had!!! So happy for you to spend marvelous time with the man and especially being unplugged, sometimes it is a need! All the food from the wedding looks so good. I am all about hors-d’oeuvres ( now I had to copy/paste that word from your text, never know how to spell it πŸ™‚ ) I would actually prefer a dinner only out of these rather than real food πŸ™‚

      I couldn’t help myself…almond extract is one of my absolute favorites! And you may be a hater of the dried fruits but omg, the cranberries were amazing! Totally patting myself on the back for that one! πŸ˜‰

      I thought it was really sweet of them to include kiddie options too! There were only a few there that night, but oh man, you should have seen them…SO cute on the dance floor! One little girl busted out the sprinkler dance move! Lol

    And that wedding food…fabulous. Especially because I just got off the phone with my mom, who told me that at the wedding she went to over the weekend, the scalloped potatoes were grey. Eww.

    Second, those scones! I’ve been seeing them pop up all over the blog world lately and they sound delicious. I’ve done a little bit of baking with avocado over the years, but it’s been a while and I’d definitely like to try experimenting a bit more.

      Aww, good! That makes me happy! And honestly, it wasn’t all that hard to let go of it all…I still allowed myself to text since I’m keeping up with some of my IE Challenge friends, but I really didn’t miss the lack of social media at all! Of course, Instagram is really the only thing I’m “addicted” to…I can get lost for an hour at a time just scrolling through my feed…it’s ridiculous! Lol

  29. I whole heartedly approve of your new found passion for blue cheese. It’s one of those cheeses that needs to be paired with just the right things in order to work. Fruit and nuts (yep, I went there) always work. Another favorite, although rarely eaten, is brie. I like to bake it in phyllo dough with raspberry sauce and fresh rosemary. Talk about melt in your mouth, although that hors-doeuvres plate looks amazing. I’m thrilled you took a blogging break and had such a fantabulous weekend. You deserved it.

      I tried a slice of brie that night actually…it was hiding under the mounds of other stuff on my first plate. I didn’t really care for it, but I have heard that the way to go with it is baked. I might just have to try that myself sometime…especially since you’ve got me over here drooling while thinking of raspberry sauce and rosemary! πŸ˜‰

    That wedding food looks amazing! I haven’t been to a wedding in years, but I have the idea in my head that wedding food is always bad (probably from watching so many episodes of Four Weddings haha). That wedding food definitely proves me wrong though. I love all those flavours in the salad! And that’s awesome that the fish and meat were cooked so perfectly – that always makes me happy haha.

    The best part of my weekend was getting sushi with my friends. The sushi itself wasn’t that good, but the company was great!!

  33. Holy wedding food! That looks AMAZING. Last summer for my mom’s wedding dinner, I was being much more ‘vegan,’ but couldn’t resist the scallop and lobster crepe in beurre blanc dish they had on the menu. I pretty much licked the plate. [Yes, I suffered for the dairy consumption later.] But I mean…BUTTER SAUCE? It has to be good, right?

    Unlike you, I love wedding cake. My cousin had four different kinds at her wedding made by a local bakery and I actually ran [slash] chased down the waiters during the reception to make sure I was able to taste them all. πŸ™‚

      Aww, your poor belly! But omg, yes…even if my stomach was a sensitive as yours, I STILL would have gone for it knowing what I know now! The funny thing is, I didn’t even know what it was until I saw it on the menu that night and Googled it! Then I spotted a recipe and now I’m pretty dead set on making it…something I NEVER would have considered during my calorie counting days! But honestly, I’ve noticed I don’t really fill up on plant-based fats from nuts/seeds, but the animal-based source from cheese, meat, and butter are so much more satisfying! I’m thinking about trying to experiment with this more!

    I really love weddings for the dancing and the cake. I have not been to one in years.

    I do cook with avocado! I usually use it for raw things – I need to do more cooking with it. I do have a pistachio and avocado lemon pudding I need to post.

  35. I seriously need to get myself invited to a wedding with some food like that! The last wedding I went to I don’t even remember what was served, and that is certainly not a good signed when dealing with a food lover like myself…
